Dear Colleagues,
As global food supply chains become increasingly complex and consumer demand for food transparency and authenticity increases, developing versatile analytical techniques for food traceability, quality evaluation, and safety monitoring has become a critical priority for the food industry and regulatory authorities. Traditional targeted detection approaches are limited in handling complex food matrices and uncovering implicit quality and safety risks, creating an urgent need for high-throughput, comprehensive analytical solutions.
As a cutting-edge approach, metabolomics enables systematic profiling of endogenous and exogenous low-molecular-weight metabolites in food, providing powerful technical support for origin characterization, valorization, identification of quality markers and adulterations, and assessment of biological effects of technological treatments or pollutants. This Special Issue aims to showcase the latest advances in metabolomics applied to food science, welcoming original research articles, reviews, and short communications on novel metabolomic workflows, chemometric algorithms, multi-omics integration, and their practical applications across agricultural products, processed foods, and food–medicine dual-use resources. Submissions addressing real-world industrial and regulatory challenges are highly encouraged.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
