Special Issue Information

Dear Colleagues,

In recent decades, phenolic compounds present in foods have attracted increasing scientific interest owing to their potential benefits to human health. Nevertheless, considerable debate remains about the physiological impact of these compounds, as their health-promoting effects largely depend on their bioavailability within the organism. Moreover, growing evidence suggests that the metabolites derived from phenolic compounds may play a central role in mediating their biological activity. Therefore, it is essential to elucidate the processes that govern the bioaccessibility, bioavailability, and metabolism of phenolic compounds following food ingestion. In this context, particular attention should be paid to the influence of the food matrix and food processing on the release of these compounds, as well as to their interactions with the intestinal microbiota. Accordingly, the evaluation of bioaccessibility and bioavailability is crucial for substantiating, with greater precision, the health benefits attributed to phenolic compounds and their metabolites, thereby supporting the development of more effective functional foods and nutritional strategies. In light of these considerations, this Special Issue of Foods invites researchers to submit original research articles and reviews that deepen understanding of these processes.
