Special Issue Information

Dear Colleagues,

Chronic diseases, including metabolic syndrome, cardiovascular disease, diabetes, neurodegenerative disorders, and cancer, are closely associated with long-term oxidative stress, inflammation, metabolic imbalance, and environmental or dietary toxin exposure. Increasing evidence suggests that food-derived bioactive compounds, such as polyphenols, bioactive peptides, polysaccharides, carotenoids, phytosterols, and functional lipids, may contribute to chronic disease risk reduction by regulating antioxidant defenses, inflammatory responses, detoxification pathways, gut microbiota, and cellular signaling networks. In addition, the gut–brain axis has highlighted the potential role of dietary bioactives in emotional regulation, stress responses, and toxin-related neuroinflammatory processes.

The aim of this Special Issue is to collect original research articles and reviews focused on the identification, characterization, functional evaluation, and application of food-derived bioactive compounds in chronic disease prevention and risk reduction. Contributions addressing molecular mechanisms, in vitro and in vivo studies, clinical evidence, processing effects, delivery systems, omics-based approaches, and dietary intervention strategies are particularly welcome.

All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
