Dear Colleagues,

Carbohydrates are fundamental to biological systems, nutrition, and health. This Special Issue invites original research and reviews that advance our understanding of carbohydrate analysis, structural characterization, and metabolic pathways. We seek contributions that explore cutting-edge analytical methods—such as chromatography, spectroscopy, and mass spectrometry—to uncover the complexity of carbohydrate structures, from simple sugars to intricate polysaccharides. Manuscripts addressing the relationship between carbohydrate structure and functional or metabolic outcomes, including glycemic response, gut microbiota modulation, and bioactive properties, are especially welcome. By bringing together advances in analytical chemistry, structural biology, and nutritional science, this Special Issue aims to foster new insights that can guide innovation in food design, therapeutic development, and metabolic health strategies.

We encourage researchers from diverse disciplines to submit their latest findings and help shape the future of carbohydrate science.

For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
