- Although current training standards were updated in 2022, they have yet to explicitly include technical skills for increasingly popular cooking methods, such as sous vide. However, it has been recommended that sous vide be taught as part of in-company-training in the context of topic ‘9. Processing meat and offal’ [111].
- With less than ten years remaining to achieve the national and international goal of implementing education for sustainable development, this goal was finally embedded in the VET curricula in summer 2021. A new standard occupational profile was adopted dictating that general skills in sustainability be taught in every VET [112]. Until now, this issue has received little consideration at a national political level [113].
- Comprehensive sustainability issues that go beyond a catering company’s direct economic sustainability are inadequately covered. Other dimensions need to be integrated and/or set in a direct sustainability context. For example, environmental issues such as packaging waste are often mentioned in textbooks without being set in this context.
- The widespread implementation of education on sustainable development requires students to be exposed to the practical implications of meeting generally defined sustainability goals. This can be achieved by creating teaching and training materials that allow for active engagement and application during practical learning and everyday working life (compare [114]). One example is the numerous implications of sous vide for environmental, social, health and economic sustainability.
