Cover Story: Many studies have tried to unmask the "French paradox", which consists of low cardiovascular mortality despite a high intake of saturated fat. Mediterranean countries, particularly Crete, are protected, probably due to a specific diet, rich in polyphenols and omega 3. The antioxidant effect of flavonoids in red wine appears to be one of the mechanisms of vascular protection provided by the Mediterranean diet, an epigenetic effect by hormesis mechanism, and a specific anticancer activity studied a lot with resveratrol. Red wine is a soup of antioxidants that can keep time when wine is made in a traditional way (temperatures control, long maceration, and aging in new barrels), and is easily assimilated by the body due to alcohol.
