The growing demand for eggs from alternative housing systems is driven by perceived nutritional and welfare benefits. However, the trade-off between enhanced bioactive composition and exposure to environmental contaminants remains insufficiently explored. This study evaluated the physical traits, bioactive compounds, and heavy metal content of 480 commercially available table eggs from four housing systems: organic, free-range, barn, and enriched cages. Organic eggs exhibited the highest albumen quality, expressed by Haugh units (92.03 vs. 70.86 in cages) and lysozyme activity (144,877 U/mL vs. 119,830 U/mL in cages), alongside the highest concentrations of fat-soluble vitamins (e.g., vitamin A at 1600 μg/100 g and vitamin E at 3267 μg/100 g) and n-3 polyunsaturated fatty acids, including docosahexaenoic acid (DHA: 0.673% vs. 0.360% in cages). Conversely, organic eggs presented the weakest eggshells (breaking strength of 34.19 N vs. 47.05 N in cages) and a less favourable lipid profile regarding atherogenicity (AI: 0.411) and thrombogenicity (TI: 3.455) indices. Crucially, organic eggs contained significantly higher levels of lead (0.361 mg/kg) compared to indoor systems (0.041 mg/kg in barn and 0.102 mg/kg in cages), highlighting their susceptibility to environmental pollution. Cage and barn eggs were associated with higher chemical safety and shell strength but demonstrated a lower overall bioactive value. Ultimately, the choice of table eggs may involve a trade-off between the health-promoting benefits of extensive systems and the potential risks of heavy metal contamination, emphasising the need for integrated food safety management. This study evaluated how corn grain hardness, vitamin A supplementation level, and trace mineral form influence production performance and egg properties in laying hens. In a 2 × 3 × 2 factorial design, 252 Lohmann Brown hens received diets containing soft- or hard-type corn hybrids; 5000, 10,000, or 20,000 IU/kg of vitamin A; and inorganic or organic trace minerals for 63 days. Hard-type corn increased daily egg mass, improved feed conversion ratio, and produced eggs with higher MUFAs and SFAs but lower PUFAs and n-3, resulting in a less favorable n6/n3 ratio, while also increasing susceptibility to Fe-induced lipid oxidation despite lower PUFAs. Increasing dietary vitamin A to 10,000–20,000 IU/kg increased egg weight and shell strength, linearly increased yolk retinol, and decreased tocols, with 20,000 IU/kg markedly increasing Fe-induced MDA formation without major changes in PUFAs. Trace mineral form had minor effects on performance and fatty acid profile. Overall, modest changes in laying hen diet, such as corn hybrid, vitamin A supplementation level, and trace mineral form, significantly modulated egg nutritional composition and oxidative stability. A high dietary vitamin A level may compromise the oxidative resilience of enriched eggs, while interactions of trace mineral form with corn hybrid and vitamin A suggest its potential modulatory role in lipid oxidation pathways. This study investigated the effects of probiotic supplementation on performance, egg quality, antioxidant capacity, gut morphology, fecal microbiota, and bone morphology in Lohmann Brown laying hens aged 44 weeks over a 16-week period. Ninety-six hens were randomly divided into control and probiotic groups (n = 48 each). The probiotic group received probiotic supplement containing Lactobacillus acidophilus KUEN 1607 and Pediococcus acidilactici KUEN 1608 via drinking water at 0.5%. Probiotic supplementation significantly improved feed conversion ratio (FCR), eggshell strength and thickness, and albumen quality (p < 0.001) and reduced the incidence of cracked and shell-less eggs (p < 0.05). Yolk and serum cholesterol levels decreased (p < 0.001), and antioxidant parameters improved, along with elevated serum IgG (p < 0.001). Histological analysis showed an increased ratio of villus height to crypt depth (p < 0.001) in the jejunum, indicating enhanced intestinal health. Fecal samples revealed increased Lactobacillus spp. and reduced coliform counts (p < 0.001), suggesting improved gut microbiota balance. While bone volume and surface area showed no significant difference, 3D geometric morphometric analysis identified subtle shape changes in long bones, especially the femur and tibiotarsus. These findings demonstrate that the selected probiotic combination supports nutrient utilization, egg quality, gut integrity, immune status, and skeletal health, offering a sustainable strategy to enhance productivity and welfare in laying hens. The Chinese alligator (Alligator sinensis), found only in a small region in southeastern Anhui Province, is listed as critically endangered (CR) by the International Union for Conservation of Nature (IUCN) due to its current declining population trend. Any abnormalities in the physical properties of an egg can decrease the hatching rate. In particular, eggshells play an essential role in embryo development, motivating us to analyze the microstructures of the eggshells of Chinese alligators. In this study, we categorized the eggshells into two groups, based on the hatching rates, and analyzed the relationship between the eggshell parameters (eggshell thickness, calcium content, and number of pores in erosion craters) and the hatching rate, as well as the relationships between the eggshell parameters. We found that the shells of the eggs with high hatching rates were thicker than those of the eggs with low hatching rates. There were also fewer erosion-crater pores on the surfaces of the eggs with high hatching rates than on the surfaces of the eggs with low hatching rates. Moreover, the shell Ca content was significantly higher in the eggs with high hatching rates than in the eggs with low hatching rates. Cluster modeling indicated that the highest hatching rate occurred when the eggshell thickness was 200–380 µm and there were 1–12 pores. These results suggest that eggs with adequate Ca contents, thicker shells, and less air permeability are more likely to hatch. Furthermore, our findings can inform future studies, which will be vital for the survival of the critically endangered Chinese alligator species. Full article

In this study, we examined the effect of diets supplemented with organic and inorganic mineral premixes on the laying performance and eggshell quality of aged laying hens. A total of 600 68-week-old Hy-Line Brown laying hens were randomly assigned to 1 of 3 dietary treatments, repeated 5 times: Mash type basal diet, basal diet supplemented with an inorganic mineral premix (1.0 g/kg), and basal diet supplemented with an organic mineral premix (1.8 g/kg). The results showed that eggshell strength was higher (p < 0.01) in the inorganic mineral diet group than in the organic mineral and basal diet groups. Further, the levels of Fe and Mn in the liver were higher (p < 0.05) in the inorganic and organic mineral diet groups than in the basal diet group. The concentrations of Fe and Mg in the spleen were different (p < 0.05) among the treatment groups, with the highest levels reported in the organic mineral premix group. The concentrations of Cu, Zn, and Mn in the eggshell were different (p < 0.05) among the groups, with the highest levels reported in the inorganic and organic mineral premix diet groups. In conclusion, a diet containing organic mineral premix improved eggshell strength and had no detrimental effect on the laying performance of aged laying hens. Full article

The abundance of peanut and poultry production within the state of North Carolina and the US Southeast, led us to conduct a layer feeding trial to determine the utilization of whole-in-shell high-oleic peanuts (WPN) and/or unblanched high-oleic peanuts (HOPN) as an alternative feed ingredient for poultry. To meet this objective, we randomly assigned 576 shaver hens to 4 dietary treatments (4 rep/trt). The dietary treatments consisted of a conventional control diet (C1), a diet containing 4% WPN, an 8% HOPN diet, and a control diet containing soy protein isolate (C2). Feed and water were provided for 6 weeks ad libitum. Pen body weights (BW) were recorded at week 0 and week 6 (wk6), and feed weights were recorded bi-weekly. Shell eggs were collected daily and enumerated. Bi-weekly 120 eggs/treatment were collected for quality assessment and egg weight (EW), while 16 eggs/treatment were collected for chemical analysis. There were no significant differences in BW or EW at week 6. Hens fed the C2 produced more total dozen eggs relative to C1 hens over the feeding trial (p < 0.05). Hens fed the C1 diet consumed less total feed relative to the other treatments with the best feed conversion ratio (p < 0.05). Most eggs produced from each treatment were USDA grade A, large eggs. There were no differences in egg quality, with the exception of yolk color, with significantly higher yolk color scores in eggs produced from the C1 and C2 treatments relative to the other treatments (p < 0.05). Eggs produced from the HOPN treatment had significantly reduced stearic and linoleic fatty acid levels relative to the other treatments (p < 0.05). Eggs produced from hens fed the WPN diet had significantly greater β-carotene content relative to eggs from the other treatment groups (p < 0.05). In summary, this study suggests that WPN and/or HOPN may be a suitable alternative layer feed ingredient and a dietary means to enrich the eggs produced while not adversely affecting hen performance. Laying hens require substantial quantities of calcium (Ca) to maintain egg production. However, maintaining recommended dietary Ca through inclusion of limestone may impede nutrient digestibility, including that of other minerals. It was hypothesized that providing a separate source of dietary Ca in the form of limestone grit would preserve Ca intake of hens offered diets containing suboptimal Ca concentrations. Furthermore, the impact of dietary phytase at a “superdosing” inclusion rate on the voluntary consumption of limestone grit was evaluated. One hundred and forty-four laying hens (19 weeks of age) were assigned to one of six dietary treatments in a 3 × 2 factorial arrangement comprising three dietary Ca concentrations (40, 30, and 20 g/kg) and ±dietary phytase (3500 FYT/kg diet) on an ad libitum basis for six weeks. Limestone grit (3.4 ± 1.0 mm) was provided to all hens ad libitum. Hens offered diets containing phytase consumed significantly less limestone grit p = 0.024). Egg weight, rate of lay, and egg mass were unaffected by dietary treatment (p > 0.05). Egg shell weight % (p < 0.001), shell thickness (p < 0.001), and shell breaking strength (p < 0.01) decreased in line with dietary Ca levels. In summary, dietary superdosing with phytase reduced the consumption of a separate limestone source in individually housed, early lay ISA Brown hens. Egg shell quality variables but not egg production worsened in line with lower dietary Ca levels. Full article

The use of toxic and less bioavailable inorganic selenium can now be supplemented with an alternative organic source from bacterial species in nutrition for human and animal benefit. This study investigated the effects of selenium sources on laying performance, egg quality characteristics, intestinal morphology, caecum microbial population, and digesta volatile fatty acids in laying hens. One hundred and forty-four Lohman Brown Classic laying hens, at 23 weeks of age, were divided into four experimental groups (36 hens in each), differing in form of Se supplementation: no Se supplementation (Con), 0.3 mg/kg of inorganic Se in the form of sodium selenite (Na2SeO3), 0.3 mg/kg of organic Se from selenium yeast (Se-Yeast), and 0.3 mg/kg of organic Se from Stenotrophomonas maltophilia (bacterial organic Se, ADS18). The results showed that different dietary Se sources significantly affected laying rate, average egg weight, daily egg mass, feed conversion ratio (FCR), and live bodyweight (LBW) (p < 0.05). However, average daily feed intake and shell-less and broken eggs were unaffected (p > 0.05) among the treatment groups. The findings revealed that selenium sources had no (p > 0.05) effect on egg quality (external and internal) parameters. However, eggshell breaking strength and Haugh unit were significantly (p < 0.05) improved with organic (ADS18 or Se-yeast) Se-fed hens compared to the control group. In addition, egg yolk and breast tissue Se concentrations were higher (p < 0.05) in the dietary Se supplemented group compared to the control. Intestinal histomorphology revealed that hens fed ADS18 or Se-Yeast groups had significantly (p < 0.05) higher villi height in the duodenum and jejunum compared to those fed Na2SeO3 or a basal diet. However, when compared to organic Se fed (ADS18 or Se-Yeast) hens, the ileum villus height was higher (p < 0.05) in the basal diet group; with the lowest in the SS among the treatment groups. A significant increase (p < 0.05) of Lactobacilli spp. and Bifidobacteria spp., and a decrease of Escherichia coli and Salmonella spp. population were observed in the organic (ADS18 or Se-yeast) compared to inorganic supplemented and control hens. The individual digesta volatile fatty acid (VFA) was significantly different, but with no total VFA differences. Thus, bacterial selenoprotein or Se-yeast improved the performance index, egg quality characteristics, egg yolk and tissue Se contents, and intestinal villus height in laying hens. Moreover, caecum beneficial microbes increased with a decrease in the harmful microbe population and affected individual cecal volatile fatty acids without affecting the total VFA of the laying hens digesta. For decades, vaccinations have been used to limit infectious bronchitis (IB) in both the broiler and layer industries. Depending on the geographical area, live attenuated vaccines are used either alone or in combination with inactivated vaccines to control infectious bronchitis virus (IBV) infections. It has been shown that administering inactivated vaccines preceded by priming with live attenuated vaccines in pullets protects laying hens against IB. However, the immunological basis of this protective response has not been adequately investigated. The objective of the study was to compare two vaccination strategies adapted by the Canadian poultry industry in terms of their ability to systemically induce an adequate immune response in IBV-impacted tissues in laying hens. The first vaccination strategy (only live attenuated IB vaccines) and second vaccination strategy (live attenuated and inactivated IB vaccines) were applied. Serum anti-IBV antibodies were measured at two time points, i.e., 3 weeks and 10 weeks post last vaccination. The recruitment of T cell subsets (i.e., CD4+ and CD8+ T cells), and the interferon (IFN)-γ mRNA expression were measured at 10 weeks post last vaccination. We observed that vaccination strategy 2 induced significantly higher serum anti-IBV antibody responses that were capable of neutralizing an IBV Mass variant associated with a flock history of shell-less egg production better than a Delmarva (DMV)1639 variant, as well as a significantly higher IFN-γ mRNA expression in the lungs, kidneys, and oviduct. We also observed that both vaccination strategies recruited CD4+ T cells as well as CD8+ T cells to the examined tissues at various extents. Our findings indicate that vaccination strategy 2 induces better systemic and local host responses in laying hens. Full article

Digital radiography is currently the main method of medical imaging diagnosis. It also has a wide range of applications across different fields. This study used radiation to conduct non-destructive visual imaging, and further established a quantitative analysis for visual gray-scale images to determine changes in the quality of eggs. Eggs of the same weight with three quality classes were chosen according to the egg labels available on the market. Furthermore, a general medical X-ray digital imaging system was used to apply two-dimensional digital radiography. A photometric interpretation of monochrome gray-scale imaging established by the Digital Imaging and Communications in Medicine (DICOM) standard was used to conduct a quantitative stratification analysis of the matrix data visualization, along with one-way analysis of variance (ANOVA) for quantitative statistics of the gray-scale values for the three structures, i.e., shell, air cell, and yolk. The statistical results showed that X-ray digital gray-scale images and a quantitative stratification analysis of the matrix data visualization results are less easily identified based on visual differences. In the quantitative statistical results of the one-way ANOVA gray-scale values, the whole-egg and in-egg quantitative matrix analysis both show p < 0.05. In the analysis of egg freshness, the quantitative statistics of the percentage of space occupied by the air cell in the eggs also showed p < 0.05. In addition, the results of the freshness of each egg were graded. The quality and freshness of the eggs can be quantitatively analyzed through radiographic imaging. The results of this study will provide a more scientific and quantitative reference for the quality and freshness of agricultural products in the future. Full article

In modern laying hybrids, calcium (Ca) homeostasis is immensely challenged by daily eggshell calcification. However, excessive mobilization of Ca from bones may lead to osteoporosis, which then manifests in a high incidence of poor bone quality. The aim of this study was to characterize the hens’ adaptation response to an alternating dietary Ca restriction. The animal model consisted of four purebred layer lines, differing in laying performance (high vs. moderately performing lines) and phylogenetic origin (white- vs. brown-egg lines). According to the resource allocation theory, hens selected for high egg production were assumed to show a different response pattern to cope with this nutritive challenge compared to moderately performing lines. Data collected included egg number, egg quality traits, body weight and bone characteristics. The Ca depletion led to a temporary drop in egg production and shell quality and a loss of bone stability due to Ca mobilization. The white-egg lines response was more pronounced, whereas the brown-egg lines were less sensitive towards reduced Ca supply. Our study shows that the hens’ responsiveness to coping with a nutritive Ca depletion is not ultimately linked to genetic selection for increased egg production but rather to phylogenetic origin. Egg is a regularly consumed food item. Currently, chlorinated water washing is the most common practice used to disinfect eggs, but this process has a negative environmental impact. A new physical technique, plasma-activated water (PAW), has been demonstrated to possess effective antibacterial activities without long-term chemical residue. In this study, air PAW was used to inactivate Salmonella enterica serovar Enteritidis on shell eggs. Different combinations of activation parameters, including water sources (reverse osmotic (RO) water, tap water), power (40 W, 50 W, 60 W) and activation time (10 min, 20 min, 30 min), were evaluated. The oxidation–reduction potential (ORP) and pH values of each combination were measured, and their antibacterial activity was tested in a bacterial suspension. Higher antibacterial activities, higher ORP values, and lower pH values were obtained with higher power, longer activation time, and lower water hardness. The antibacterial activities of PAW decreased rapidly by increasing the storage time both at room and refrigeration temperatures. Afterwards, RO water was pre-activated for 20 min at 60 W, and then the eggs inoculated with S. enteritidis were placed into PAW for 30 s, 60 s, 90 s, or 120 s with a plasma on-site treatment in the water. More than a 4 log reduction was obtained with 60-s and 120-s treatments. The results showed that the freshness indexes of the eggs treated with PAW were similar to those of the untreated controls and better than those of the eggs treated with commercial processes. In addition, observation under a scanning electron microscope also showed less surface damage of the cuticle on the PAW-treated eggs than on the commercially treated eggs. The results of this study indicate that PAW could be an effective antibacterial agent with less damage to the freshness of shell eggs than commercial methods. Full article

This study investigates the P and NO3 adsorption capacities of different biochars made from plant waste including rice straw (RSB), Phragmites communis (PCB), sawdust (SDB), and egg shell (ESB) exposed to a range of pyrolysis temperatures (300, 500 and 700 °C). Results indicate that the effect of pyrolysis temperature on the physiochemical properties of biochar varied with feedstock material. Biochars derived from plant waste had limited adsorption or even released P and NO3, but adsorption of P capacity could be improved by adjusting pyrolysis temperature. The maximum adsorption of P on RSB700, PCB300, and SDB300, produced at pyrolysis temperature of 700, 300 and 300 °C, was 5.41, 7.75 and 3.86 mg g−1, respectively. ESB can absorb both P and NO3, and its adsorption capacity increased with an increase in pyrolysis temperature. The maximum NO3 and P adsorption for ESB700 was 1.43 and 6.08 mg g−1, respectively. The less negative charge and higher surface area of ESB enabled higher NO3 and P adsorption capacity. The P adsorption process on RSB, PCB, SDB and ESB, and the NO3 adsorption process on ESB were endothermic reactions. However, the NO3 adsorption process on RSB, PCB and SDB was exothermic. The study demonstrates that the use of egg shell biochar may be an effective way to remove, through adsorption, P and NO3 from wastewater. Full article

Palladium catalysts supported by a mesoporous form of sulfonated poly-divinylbenzene, Pd/µS-pDVB10 (1%, w/w) and Pd/µS-pDVB35 (3.6% w/w), were applied to the direct synthesis of hydrogen peroxide from dihydrogen and dioxygen. The reaction was carried for 4 h out in a semibatch reactor with continuous feed of the gas mixture (H2/O2 = 1/24, v/v; total flow rate 25 mL·min−1), at 25 °C and 101 kPa. The catalytic performances were compared with those of a commercial egg-shell Pd/C catalyst (1%, w/w) and of a palladium catalyst supported by a macroreticular sulfonated ion-exchange resin, Pd/mS-pSDVB10 (1%, w/w). Pd/µS-pDVB10 and Pd/C showed the highest specific activity (H2 consumption rate of about 75–80 h−1), but the resin supported catalyst was much more selective (ca 50% with no promoters). The nanoparticles (NP) size was somewhat larger in Pd/µS-pDVB10, showing that either the reaction was structure insensitive or diffusion limited to some extent over Pd/C, in which the support is microporous. The open pore structure of Pd/µS-pDVB10, possibly ensuring the fast removal of H2O2 from the catalyst, could also be the cause of the relatively high selectivity of this catalyst. In summary, Pd/µS-pDVB10 was the most productive catalyst, forming ca 375 molH2O2·kgPd−1·h−1, also because it retained a constant selectivity, while the other ones underwent a more or less pronounced loss of selectivity after 80–90 min. Ageing experiments showed that for a palladium catalyst supported on sulfonated mesoporous poly-divinylbenzene storage under oxidative conditions implied some deactivation, but a lower drop in the selectivity; regeneration upon a reductive treatment or storage under strictly anaerobic conditions (dry-box) lead to an increase of the activity but to both a lower initial selectivity and a higher drop of selectivity with time. Pasta with eggs added (generally termed “special pasta” for Italian legislation) is made by adding no less than 4 eggs without shells (or no less than 200 g of liquid or lyophilized egg product) per kilogram of semolina, as provided by law. In this work, to determine the final content of eggs added to dough, an analytical procedure was developed for the rapid analysis of the cholesterol content in the finished pastas. The proposed procedure was simpler, faster, and more accurate than that of official methods of analysis based on the gravimetric determination of sterols. Moreover, the determination of the quality of fat content in the special pasta (egg pasta in this case) allowed the evaluation of its origin, avoiding possible fraud resulting from the addition of foreign fat as an alternative to fat derived from eggs. In this new gas chromatographic procedure, the internal standard squalene for the quantification of cholesterol was used because a more polar GC capillary column was used (RTX 65 TG-HT) for the separation of sterols, rather than 5% phenyl methylsilicone. The ratio between cholesterol and squalene allowed for the determination of the number of eggs added, while from analysis of the same gas chromatogram, it was also possible to evaluate the composition of triglycerides in the fat contained in the pasta, allowing discrimination of foreign fats with respect to fats contained in eggs and therefore avoiding adulteration of pasta. The same analytical procedure was applied to the determination of cholesterol content in lyophilized yolk. Full article
