Special Issue Information

Dear Colleagues,

It is my great honor and pleasure to serve as the Guest Editor for the Special Issue “Food Microbiology and Safety” to be published in Safety. Nowadays, food and feed safety have become a crucial problem, as there is even shortage of clear water in some countries. This Special Issue welcomes original research articles, short communications, and review papers dealing with all aspects of microbiological safety of foods. Our aim is to publish manuscripts of the highest quality which are relevant to the broad field covered by the journal. Studies must be novel, have a clear connection to food microbiology, and be of general interest to the international community of food microbiologists.

The question: “What does it contain?” is asked every day in the laboratory about a food sample. The answer to this question seems to be very tricky, as we can measure and control only a part of our environment. Quality checking and safety control need to be thorough and quick, which demands new techniques and different approaches. In this Special Issue, the physiology, biochemistry, and genetics of microorganisms that represent safety or quality problems for food are addressed. Methods for the detection, identification, and enumeration of foodborne microorganisms or microbial toxins are also welcomed. The microbial ecology of foods is also of interest because of the effects of the inorganic environment (e.g. pH, salts, metals, oxygen radicals, UV) on microbial growth. Manuscripts on inorganic food contaminants or supplements are, therefore, welcomed if relevant to food microbiology.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Safety is an international peer-reviewed open access quarterly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
