Special Issue Information

Dear Colleagues,

Fruits are an essential component of the human diet, and their quality is a major concern for consumers. Fruit quality formation is closely associated with the ripening process, during which dramatic physiological and biochemical changes take place, including modifications in color, sugar, acid, aroma, and cell wall metabolism. These processes are regulated by a sophisticated molecular network involving phytohormones, transcription factors, epigenetic modifications, and various structural and functional genes.

This Special Issue, “Molecular Regulation of Fruit Ripening and Quality”, focuses on recent advances in understanding the gene regulatory mechanisms underlying fruit ripening, coloration, flavor formation, textural changes, and stress responses. By integrating genetic, genomic, transcriptomic, and functional studies, it highlights key regulatory modules and signaling pathways that control fruit quality traits. This collection of reviews and original research articles provides novel insights into the molecular basis of fruit development and offers potential targets for the genetic improvement and breeding of high‑quality fruit crops.
