Special Issue Information

Dear Colleagues,

Heavy metals and Persistent Organic Pollutants (POPs), including organochlorine pesticides (OCPs), polychlorinated biphenyls (PCBs), brominated flame retardants (BFRs), dioxins, furans, and perfluoroalkyl substances (PFAS) remain major public health concerns worldwide due to their persistence in the environment, bioaccumulation, and well-documented toxicity. They are associated with oxidative stress, inflammation, metabolic dysfunction, neurotoxicity, immunotoxicity, endocrine disruption, and an increased risk of chronic diseases. These contaminants can accumulate in soil and water, and enter the food chain, thereby representing a significant route of human exposure. In this context, growing attention has been directed toward the dual role of foods, both as a potential source of heavy metals and POPs exposure, and as a modulating factor of their impact on human.

This Special Issue intends to bring together original research and review articles that explore the influence of dietary compounds and overall food matrix on the absorption and toxicity of these contaminants in humans, aiming to provide a broader perspective on human health risk assessment frameworks.

Manuscript Submission Information

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
