Dear Colleagues,
We are honoured to invite you to submit a manuscript to the forthcoming Special Issue entitled “Extraction and Encapsulation of Food Active Substances”, which seeks to present the most recent advancements in the extraction and encapsulation of bioactive compounds for food applications. Particular emphasis will be placed on innovative methodologies, industrial relevance, and sustainability considerations.
Food-active substances, including antioxidants, antimicrobials, vitamins, and other health-promoting compounds, play a critical role in enhancing food quality, safety, and nutritional value. We welcome the submission of original research and review articles that explore novel extraction techniques and advanced encapsulation strategies aimed at preserving and maximising the functionality of these bioactive. Special attention will be given to sustainable approaches, including the utilisation of food industry by-products, less commonly studied food waste sources, and their application in the development of functional foods and nutraceuticals.
This Special Issue will highlight technological innovations that improve food quality, safety, and sustainability.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
