Special Issue Information

Dear Colleagues,

The safety of meat and its products is highly concerning, since it matters to their quality and adulteration. The primary factor contributing to poor quality is the contamination by hazardous pathogens such as Salmonella, E. coli, Campylobacter and Listeria, often leading to severe illness or even death. In addition to bringing in health risks, the adulteration of meat entails an economic loss, denting consumer confidence. Currently, addressing these two ongoing safety issues demands innovative technologies for rapid, on-site, accurate detection of foodborne bacteria and meat adulteration. 

In this issue, we look forward to receiving many manuscripts focusing on innovative technologies for the rapid detection of bacteria and adulteration in meat and meat products, particularly the on-site and high-performance ones. Key emerging approaches include: (1) CRISPR/Cas-based biosensors combined with isothermal amplification; (2) hyperspectral imaging integrated with machine learning; (3) electrochemical and colorimetric biosensors enhanced by nanomaterials and artificial intelligence. More importantly, we prefer to see the implementation of certain "sample-in-and-answer-out" detection technologies or devices for point-of-need applications. Lastly, we aim to identify certain technologies or devices that exhibit significantly enhanced detection throughput in terms of both the number of samples and the number of targets.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
