Dear Colleagues,
Meat quality is ultimately defined at the point of consumption, but it is largely determined long before the animal reaches the processing plant. Breeding strategies, nutritional programming, growth path manipulation, and feeding strategies are among the key pre-slaughter factors that interact to modulate meat quality traits. Over the past few years, emerging trends in meat production and processing have increasingly focused on improving meat quality. Continuous innovation and interdisciplinary collaboration are essential to achieving these objectives. Potential topics include, but are not limited to, the following:
- Dietary strategies during growing and finishing phases;
- Growth path and its impact on muscle and fat development;
- Breed, genotype, and genetic variation affecting meat quality;
- Interaction between pre-slaughter factors and carcass handling;
- Optimizing chilling and processing technologies.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
