Modern food systems face the dual challenge of ensuring environmental sustainability while addressing the rising prevalence of chronic diseases. This Special Issue aims to collect cutting-edge research presented at the [ICAAI 2026 FOHIC & LSS 2026] that explores the "Farm-to-Human" nexus. We invite contributions that demonstrate how sustainable agricultural practices and advanced food processing can deliver targeted health benefits and enhance global well-being.

  • Sustainable Food Engineering and Processing: Innovations in green extraction, thermal/non-thermal processing, and 3D food printing to enhance quality and shelf-life.
  • Precision Nutrition and Health Outcomes: Research on bioactive compounds, trace elements (e.g., Selenium), and personalized dietary strategies for metabolic and cognitive well-being.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
