Special Issue Information

Dear Colleagues,

In food science, especially in the future food fields, the discovery, modification and application of new enzymes are of crucial importance. New enzymes can be excavated through technologies such as genomic data analysis and artificial intelligence. Modifying enzymes by means of genetic engineering, protein engineering and other approaches to enhance properties like activity, stability and catalytic efficiency serves as the foundation for promoting the in-depth application of new enzymes in multiple aspects of food processing. These applications can accelerate processing speeds, improve the texture and taste of food, enhance the nutrition and quality of food, and drive the green and functional transformation of the food industry. In this Special Issue, we will focus on new food industry-related enzymes that possess unique characteristics and discuss research on aspects such as the discovery of enzymes, the characterization of their enzymatic properties, catalytic mechanisms, directed modification, and transformation and application.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
