Dear Colleagues,

Recent advances in imaging, spectroscopy, and machine learning are revolutionizing how we monitor and assess the quality of agri-food products. These technologies enable rapid, non-destructive, and data-driven evaluation methods that can improve food safety, minimize postharvest losses, and optimize decision-making across the agricultural value chain.

This Special Issue, titled "Imaging, Spectroscopy and Machine Learning for Agri-Food Quality Evaluation", invites the submission of original research articles and reviews that highlight the development, application, and integration of these techniques within agri-food systems.

Topics of interest include, but are not limited to, the following:

  • Imaging techniques (hyperspectral, multispectral, X-ray, terahertz, etc.) for agri-food quality assessments;
  • Spectroscopic methods (NIR, Raman, FTIR, UV-Vis, etc.) for detecting quality attributes, spoilage, and contamination;
  • Machine learning and artificial intelligence approaches for analyzing imaging and spectroscopy data;
  • The development and application of hybrid sensing systems that combine multiple modalities;
  • Smart sensing platforms for the real-time, in situ evaluation of agri-food products;
  • The application of imaging and spectroscopy in smart farming, precision agriculture, postharvest management, and supply chain monitoring.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
