Dear Colleagues,
With the increasing complexity of food supply chains and the growing consumer demand for better food quality, safety, and sensory experience, traditional methods for food quality evaluation and quality monitoring face new challenges in terms of real-time performance, accuracy, and intelligence. In recent years, the rapid development of artificial intelligence (AI), machine learning, big data analytics, intelligent sensing, and the Internet of Things (IoT) has provided innovative solutions for food quality evaluation, flavor perception, quality monitoring, and supply chain management. These technologies enable the identification of food quality characteristics, analysis of flavor information, prediction of sensory attributes, and full-process monitoring and traceability of food quality and safety, thereby driving the food industry toward digitalization and intelligent development.
We invite you to contribute to the Special Issue “Using Artificial Intelligence and Big Data Analytics for Food Flavor Perception, Quality Evaluation, and Safety Management”. This Special Issue focuses on the innovative applications of artificial intelligence and intelligent information processing technologies in food quality evaluation, flavor assessment, sensory analysis, quality monitoring, and food supply chain management. We welcome contributions that demonstrate how intelligent algorithms, data analytics, and smart sensing technologies can improve the efficiency of food quality analysis, optimize quality control, and strengthen food quality and safety traceability.
In this Special Issue, we welcome original research articles and reviews. Topics of interest include, but are not limited to, the following:
- AI-based food flavor analysis and flavor perception;
- Food quality evaluation and intelligent grading technologies;
- Food sensory evaluation and multimodal data fusion analysis;
- Food supply chain management and food quality and safety traceability;
- Food quality monitoring and intelligent early warning technologies;
- Intelligent sensing and IoT-based food quality detection technologies.

Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
