Dear Colleagues,
The aim of this Special Issue is to deliver a state-of-the-art overview of scientific and engineering breakthroughs in the processing and quality control of aquatic products that secure the quality, safety and shelf-life of aquatic products from harvest to table. Because fish, molluscs, crustaceans and algae deteriorate rapidly and are sensitive to temperature abuse and mishandling, next-generation processing and quality-control solutions—ranging from physical field-assisted freezing to intelligent freshness monitoring—are urgently needed to preserve nutritional value, inhibit microbial growth and reduce post-harvest losses.
The goals of this Special Issue are:
To showcase advanced freezing and cold-processing technologies: Evaluating emerging tools such as electric/magnetic/ultrasonic field-assisted freezing, high-pressure shift freezing, super-chilling, ice-slurry systems and intelligent thawing that minimise cell damage, energy use and drip loss during the cold processing of aquatic products.
To optimise cold-chain logistics for aquatic foods: Presenting data-driven monitoring (IoT sensors, time–temperature indicators, predictive microbiology) and eco-efficient equipment (phase-change materials, solar-assisted refrigeration, natural refrigerants) that guarantee uninterrupted sub-zero transport while lowering carbon footprints.
To assess safety and authenticity across the chill chain: Reviewing rapid methods for detecting spoilage microbiota, biogenic amines, veterinary residues, heavy metals and species fraud, with emphasis on on-site kits, portable spectrometers and blockchain traceability.
To advance sustainable packaging and preservation aids: Highlighting biodegradable films with bioactive coatings (antioxidant peptides, chitosan, essential oils), modified-atmosphere/intelligent packaging and recyclable insulation panels that extend shelf life and replace single-use plastics.
To harmonise standards and life-cycle metrics: Discussing evolving Codex, EU and ISO norms for frozen aquatic products, energy-labelling schemes for cold-chain hardware and LCA tools that balance food-safety compliance with environmental performance.
To accelerate academia–industry uptake: Fostering joint pilots, open-access data platforms and policy forums that translate laboratory successes into scalable, affordable technologies for processors, logistics providers and retailers worldwide.
This Special Issue welcomes original research, reviews and case studies from scientists, engineers and industry practitioners who are redefining how we process, preserve and transport aquatic products in a warming, resource-constrained planet.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Fishes is an international peer-reviewed open access monthly journal published by MDPI.
