We are pleased to invite you to contribute to a Special Issue of Agronomy titled "New Trends in Molecular Biochemistry and Physiology of Pre- and Post-Harvest Fruits and Vegetables". This issue aims to spotlight groundbreaking research on the molecular and physiological mechanisms that influence the quality, resilience, and nutritional value of fruits and vegetables from their pre-harvest growth to post-harvest handling.

The global challenge of food loss is a pressing issue, with significant quantities of fruits and vegetables wasted each year due to spoilage, decay, and poor handling. Addressing this challenge requires a deeper understanding of the biochemical and physiological processes that govern crop vitality and longevity. By focusing on innovative research and new technological advancements, we seek to uncover strategies to minimize these losses and enhance the sustainability of our food systems.

This Special Issue will cover a range of topics, including metabolic regulation, stress tolerance, nutrient retention, and the impact of environmental factors on crop quality. While we are interested in research using advanced techniques such as genomics, proteomics, and metabolomics, we also value contributions that employ traditional methodologies or interdisciplinary approaches.

We invite you to contribute original research articles or comprehensive reviews that address these critical issues and offer solutions to mitigate food loss. Your insights and expertise would be invaluable in advancing our understanding and improving practices in this crucial area.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Agronomy is an international peer-reviewed open access semimonthly journal published by MDPI.
