Cover Story: The purpose of this food system study was to examine key environmental impacts (carbon emissions, energy, and water use) to inform decisions to buy locally produced (or grow) vegetables in the Midwest US. We used a life cycle approach to examine three food systems (large-, mid-, and small-scale) for 18 vegetables commonly grown in Des Moines, Iowa. We found that large-scale production had greater impacts. We also found differences among vegetables—for example, romaine lettuce produced about three times greater carbon emissions compared to leaf lettuce in the large-scale scenario. Hotspots and tradeoffs were identified and could inform vegetable production/consumption based on these environmental impacts for the US Midwest.View this paper
