Background/Objectives: This study aims to evaluate whether the Dietary Guidelines for Americans (DGA) are effective for maintaining a healthy diet among Mexican-descent populations in the US or if a more culturally tailored policy approach is warranted. Methods: As a first outcome, 20 healthy women of Mexican descent from the Seattle area participated in a pilot randomized controlled trial. They were randomly assigned (10 participants each) to either a group receiving instruction on the standard 2015 DGA or a group receiving an adaptation of the DGA focused on traditional Mexican cuisine and culture. In this 12-week study (with follow-ups at 3 and 6 months), participants’ acceptability of the cultural adaptation of the DGA was compared with that of the standard DGA with end-of-study surveys. Ten blood-based metabolic biomarkers were assessed at baseline and 3 months. Dietary changes at 3 months were assessed with a Food Frequency Questionnaire (FFQ) that was translated into Spanish but not culturally adapted. The secondary outcome was dietary change at 6 months. Results: The primary findings at 3 months showed that serum free fatty acids were reduced for the standard DGA arm. Carbohydrate consumption was reduced in the standard DGA arm only. The end-of-study survey results suggested that both interventions were well received by participants. Conclusions: The preliminary findings from this small sample size suggest that depending on a person’s priorities, either intervention could be offered, with each arm showing slightly different dietary and biomarker outcomes. The Planetary Health Diet (PHD), recognized as a healthy and environmentally sustainable dietary pattern, has been promoted globally; however, its role in supporting weight change among children within structured weight management interventions remains unclear. A four-month randomized multicomponent family-based trial was conducted with 120 dyads of children with obesity (7–12 years) and their guardians. The intervention group (IG) received counseling on the PHD, portion size reduction, and strategies to increase moderate-to-vigorous physical activity, while the control group (CG) received general guidance based on the Dietary and Physical Activity Guidelines for the Brazilian Population, emphasizing the avoidance of ultra-processed foods. Dietary intake was assessed using a food frequency questionnaire, and anthropometric measurements were taken by trained professionals at baseline and during each consultation. Mixed-effects models were used to estimate BMI change in children and guardians. Most guardians were mothers with low-to-middle income. Attrition was around 40% in both groups, but most participants were followed up for four visits. No significant difference in BMI variation was observed between allocation groups; however, both groups of children reduced BMI (IG = −0.2 and CG = −0.4; p = 0.002), with no change among guardians. PHD adherence scores changed minimally overall, but consumption of nuts and fruits increased in both groups. Although the intervention did not outperform the control in reducing BMI, the overall BMI reduction among children in both groups suggests that participation in a lifestyle-focused trial, regardless of specific content, may promote weight management in children with obesity. Background/Objectives: Coenzyme Q 10 is a lipid molecule that works as a mobile electron transporter in the mitochondrial respiratory chain and, in addition, plays the role of an antioxidant. Interestingly, CoQ10 synthesis in human cells derives from the mevalonate pathway, the same metabolic route that delivers endogenous cholesterol. Mutations leading to Familial Hypercholesterolemia (FH) alter the levels of CoQ10 production and remarkably, statin therapy associated muscular symptoms (SAMSs) might also be modulated by CoQ10 supplementation. CoQ10 is also provided by diet and only a few studies have calculated the dietary intake of this metabolite among populations. Methods: Here, we present our Spanish FH cohort (n = 261) and characterized relevant clinical, metabolic, and anthropometric parameters. Results: A cohort of 75.1% followed lipid-lowering treatment at inclusion, being the most prescribed drugs statin alone (32.7%) and statins combined with ezetimibe (56.6%). The average time on statin treatment was 3.7 years. Interestingly, 22% of cohort patients presented with SAMS. In addition, we performed an exhaustive literature review to define for the first time the CoQ10 content present in food typically found in Spain or other southern-European countries and classified them from very rich (over 50 mg/kg) to very poor (<1 mg/kg). With this information, we calculated the daily intake of CoQ10 from a small group (12) of selected FH patients using a validated food-frequency questionnaire (FFQ) and determined a daily intake 9.72 ± 2.64 mg/day, different to other described populations. Conclusions: we discussed the relevance of exogenous CoQ10 for FH development and potential SAMS. Interestingly, this information can be extrapolated to define the regular CoQ10 intake of the Spanish population, especially when following the MedDiet. Full article

Background/Objectives: Gastric cancer is known to occur through a multistep process from gastric precancerous lesions, such as atrophic gastritis, intestinal metaplasia, and gastric dysplasia. Gastric precancerous lesions may have different risk factors for each stage, and it can be prevented by an anti-inflammatory diet. In this study, we examined the association between the dietary inflammatory index (DII) and the risk of gastric precancerous lesions among adults in a rural area. Moreover, we analyzed the interaction between the DII and H. pylori infection in relation to the risk of gastric precancerous lesion. Methods: Among 711 participants who had a gastroscopy in a community cohort study, 564 subjects were included in this analysis and were divided into three groups (233 in normal, 128 in atrophic gastritis, and 203 in intestinal metaplasia). Atrophic gastritis and intestinal metaplasia were diagnosed by endoscopy and histopathology in accordance with the Updated Sydney System. DII was derived from a food-frequency questionnaire and categorized into tertiles. H. pylori infection was determined by the Campylobacter-like organism test. Results: H. pylori infection was significantly associated with the increased risk of intestinal metaplasia (OR = 2.75, 95% CI = 1.76–4.27), but not with atrophic gastritis. The inflammation diet itself was not associated with both the risk of atrophic gastritis (OR = 0.93, 95% CI = 0.53–1.64) and intestinal metaplasia (OR = 1.32, 95% CI = 0.78–2.24). However, the risk of intestinal metaplasia was more increased in the inflammatory diet group with H. pylori infection (OR = 3.35, 95% CI = 1.54–7.30) compared to the anti-inflammatory diet group without H. pylori infection. Conclusions: This study found that H. pylori infection increased the risk of intestinal metaplasia, and this risk was further enhanced by a pro-inflammatory diet, suggesting that both diet and infection management are important for prevention of gastric precancerous lesions. Objective: To examine the association between the composite dietary antioxidant index (CDAI) and gastric cancer (GC) risk among adults in Southeast China, and to provide evidence for region-specific nutritional interventions. Methods: In this case–control study (July 2023–November 2024), 336 newly diagnosed GC patients were recruited from a hospital in Southeast China, and 336 sex-matched healthy controls were selected from local communities. Dietary data from a validated food frequency questionnaire were used to calculate CDAI scores. Results: A total of 672 participants (56.5% male) were included. The mean CDAI value was 0.47 ± 4.23 in cases versus −0.04 ± 4.61 in controls (p = 0.134), but CDAI quartile distribution differed significantly (p = 0.009). In multivariable analysis of individual CDAI components, vitamin C intake demonstrated a significant inverse association with GC risk, with the strongest protective effect observed in the highest quartile (OR = 0.48, 95% CI: 0.30–0.77, p = 0.002). Selenium intake also showed significant protective effects in the second (OR = 0.52, 95% CI: 0.32–0.83, p = 0.006) and third quartiles (OR = 0.50, 95% CI: 0.30–0.82, p = 0.006). Compared with the lowest quartile, adjusted odds ratios (95% CI) for GC in the second, third, and fourth CDAI quartiles were 0.56 (0.36–0.87), 0.59 (0.38–0.90), and 0.60 (0.39–0.92), respectively. The inverse association was stronger in participants aged >55 years, unmarried, and nonsmokers. Restricted cubic spline analysis revealed a significant nonlinear dose–response relationship. Conclusions: Higher dietary antioxidant intake is associated with lower GC risk. Personalized dietary strategies to enhance antioxidant intake may be particularly beneficial in high-risk populations. Elderly populations often face significant challenges when it comes to dietary intake tracking, often exacerbated by health complications. Unfortunately, conventional diet assessment techniques such as food frequency questionnaires, food diaries, and 24 h recall are subject to substantial bias. Recent advancements in machine learning and computer vision show promise of automated nutrition tracking methods of food, but require a large, high-quality dataset in order to accurately identify the nutrients from the food on the plate. However, manual creation of large-scale datasets with such diversity is time-consuming and hard to scale. On the other hand, synthesized 3D food models enable view augmentation to generate countless photorealistic 2D renderings from any viewpoint, reducing imbalance across camera angles. In this paper, we present a process to collect a large image dataset of food scenes that span diverse viewpoints and highlight its usage in dietary intake estimation. We first collect quality 3D objects of food items (NV-3D) that are used to generate photorealistic synthetic 2D food images (NV-Synth) and then manually collect a validation 2D food image dataset (NV-Real). We benchmark various intake estimation approaches on these datasets and present NutritionVerse3D2D, a collection of datasets that contain 3D objects and 2D images, along with models that estimate intake from the 2D food images. We release all the datasets along with the developed models to accelerate machine learning research on dietary sensing. Full article

Healthy Eating Is More than the Foods You Eat: Eating Practices of Mothers with and Without a History of Gestational Diabetes Mellitus

Background/Objectives: Canada’s Food Guide 2019 includes advice such as “Cook more often” and “Eat meals with others”, which are considered healthy eating practices. However, mothers with a history of gestational diabetes mellitus (GDM) may face specific barriers to adopting healthy eating practices. This study aimed to compare eating practices between mothers with (GDM+) and without (GDM−) a history of GDM, and to explore the associations between eating practices, diet quality, and the anthropometric and cardiometabolic profile of these mothers. Methods: The cross-sectional study was conducted in Quebec (Canada) between 2012 and 2017. Eating practices were assessed using a self-administered questionnaire. Diet quality was evaluated by the Healthy Eating Food Index 2019 through a validated food frequency questionnaire. Weight, height, and waist circumference were measured, and body composition was obtained by absorptiometry. Results: Data from 105 GDM+ and 38 GDM− mothers were analyzed (mean age 37.5 years ± 4.9). GDM+ mothers were more likely to prepare a greater proportion of dinners (≥1 per week) using pre-prepared or processed foods than GDM− mothers (49.0% vs. 34.2%; p = 0.016). Among GDM+ mothers, those who prepared ≥1 dinners per week using pre-prepared or processed foods showed lower adherence to the “Whole-grain foods” (1.1 ± 0.8 vs. 1.9 ± 1.2; p = 0.002) and “Sodium” (4.9 ± 2.0 vs. 5.8 ± 2.0, p = 0.013) recommendations, had a higher percentage of total body fat (37.5% ± 7.6 vs. 34.0% ± 7.7; p = 0.041), a higher waist circumference (91.6 cm ± 13.9 vs. 87.1 cm ± 16.3; p = 0.030), and a higher glycated hemoglobin (5.6% ± 0.5 vs. 5.5% ± 0.3; p = 0.025) than those who used less pre-prepared or processed foods. Conclusions: GDM+ mothers were more likely than GDM− mothers to prepare dinners using pre-prepared or processed foods, an eating practice associated with less favorable components of diet quality and some altered anthropometric and cardiometabolic variables. Further investigation into the factors influencing cooking from scratch within this population is warranted. Full article

Background: Obesity is a disease with high prevalence worldwide, and the accumulation of visceral fat is related to increased cardiovascular risk. The inclusion of polyunsaturated fatty acids (PUFAs) in the diet has been shown to be a promising nutritional strategy. We aimed to examine the associations between PUFAs consumption and visceral adiposity dysfunction, assessed by the visceral adiposity index (VAI). Methods: This cross-sectional study included 697 adults from the SHIP-Brazil cohort. Structured interviews collected sociodemographic, lifestyle, and dietary data. The intake of omega-3, omega-6, EPA, DHA, and EPA + DHA intake assessed through an adapted food frequency questionnaire (FFQ) was categorized into tertiles. Serum lipids were analyzed using the Cobas system, and VAI was calculated by a sex-specific formula and categorized into two groups (low and high VAI, p50), according to sex. Results: Among men, a higher VAI was associated with greater energy intake and higher carbohydrate and fat consumption. Among women, EPA + DHA intake (β = −0.396, 95% CI: −0.639; −0.152, p = 0.001), EPA (β = −0.679, 95% CI: −1.220; −0.138, p = 0.014), and DHA (β = −0.780, 95% CI: −1.207; −0.352, p < 0.001) were negatively associated with VAI, while omega-6 (β = 0.015, 95% CI: 0.003; 0.028, p = 0.017) showed a positive association. No associations were found between saturated and monounsaturated fatty acids and VAI. Conclusions: The EPA + DHA intake, EPA, and DHA intake were inversely associated with VAI in women, but not in men. Omega-6 intake was negatively associated with VAI in men and positively associated with VAI in women. It is important to highlight that, given the cross-sectional design, these associations do not establish temporality or causality. Full article

Background/Objectives: Depression is a prevalent mental health problem among undergraduate students, and dietary patterns may play a role in its prevention. Phytochemical-rich diets have been proposed to be potential protective factors against depression due to their antioxidant, anti-inflammatory, and neuroprotective properties. This study aimed to investigate the association between the Dietary Phytochemical Index (DPI) and depressive symptoms among undergraduate students in Türkiye. Methods: A descriptive, cross-sectional study was conducted among 789 undergraduate students at Erciyes University between May 2024–May 2025. Dietary data were collected using a 101-item Food Frequency Questionnaire, and the DPI was calculated as the percentage of total daily energy derived from phytochemical-rich foods. Depressive symptoms were assessed via the Burns Depression Checklist (BDC). Statistical analyses included correlation and logistic regression models adjusted for gender, income, and academic department. Results: Participants with higher DPI scores exerted significantly lower BDC total and sub-dimension scores, including activities and personal relationships, physical symptoms, and suicidal urges (all p < 0.05). The inverse association between DPI and total depression score remained significant across all adjusted models (p < 0.001), and a significant linear trend was observed across DPI quartiles (p-trend < 0.001). Conclusions: Higher dietary phytochemical intake was associated with lower depressive symptom levels among undergraduate students. These results suggest that phytochemical-rich dietary patterns, characterized by increased consumption of fruits, vegetables, whole grains, legumes, and nuts, may contribute to improved psychological well-being. Promoting the intake of phytochemical-dense foods could be a practical nutritional strategy for supporting mental health in young adults. Full article

Background: Metabolic Dysfunction-Associated Steatotic Liver Disease (MASLD) is linked to metabolic syndrome, obesity, and type 2 diabetes. Omega-3 fatty acids, especially EPA and DHA from fish, may protect against hepatic steatosis. Methods: From 2015 to 2018, all participants were invited to the first follow-up, where 1426 (62% response rate) responded and underwent the same standardized protocol as at baseline. For this analysis, the study is a cross-sectional investigation focusing solely on follow-up data, which included 1297 adults. MASLD was diagnosed via standardized ultrasound, and dietary intake was assessed using the validated EPIC Food Frequency Questionnaire. Associations between total EPA and DHA intake and MASLD were examined using logistic regression models adjusted for age, sex, marital status, occupation, income, Mediterranean diet adherence, liver enzymes, and C-reactive protein. Results: Overall, 48.5% of participants had MASLD. Higher total EPA and DHA intake was associated with lower odds of MASLD (EPA highest vs. lowest quartile: OR = 0.572, 95% CI 0.400–0.818; DHA highest vs. lowest quartile: OR = 0.516, 95% CI 0.361–0.739). Intake of fatty fish contributed most strongly to this protective effect (EPA highest vs. lowest quartile: OR = 0.556, 95% CI 0.390–0.794; DHA highest vs. lowest quartile: OR = 0.575, 95% CI 0.403–0.820), whereas mollusks, crustaceans, and some processed/frozen fish showed weaker or no associations. A statistically significant trend of decreasing MASLD risk was observed across increasing quartiles of both EPA and DHA intake. Conclusions: Higher intake of EPA and DHA, especially from fatty fish, is linked to lower MASLD risk in this Mediterranean population, supporting recommendations for regular fish consumption to protect liver health. Glaucoma is a major ocular neurodegenerative disease and a leading cause of irreversible blindness worldwide, with prevalence projected to exceed 110 million by 2040. Although lowering intraocular pressure (IOP) remains the only proven treatment, glaucoma arises from a complex interplay of genetic, local, and systemic factors—including oxidative stress, vascular dysregulation, mitochondrial dysfunction, and neuroinflammation. Emerging evidence suggests that modifiable lifestyle factors may influence these pathogenic pathways. In this review, higher dietary nitrate from leafy greens is consistently associated with lower primary open-angle glaucoma risk, aligning with nitric-oxide-mediated endothelial support and more stable ocular perfusion pressure. Flavonoids (anthocyanins and flavanols), carotenoids (lutein/zeaxanthin), and B vitamins have strong biological rationale for glaucoma prevention but have limited support from long-term, large population-based studies. The effect of polyunsaturated fats on glaucoma remains inconsistent and warrants source-(plant vs. animal) and substitution-based analyses. Consistent protective effects of aerobic exercise and high-quality sleep may be associated with favorable metabolic profiles and ocular perfusion, potentially mitigating retinal ganglion cell loss. Conversely, smoking and alcohol use are frequently coupled with poorer diet quality (e.g., lower vegetable intake) and heightened oxidative stress, which may exacerbate glaucomatous neurodegeneration. However, much of the current literature is constrained by cross-sectional designs, reliance on self-reported food frequency questionnaires, and insufficient use of structural endpoints such as retinal nerve fiber layer imaging. This review focuses on the potential of lifestyle modification and future directions in prevention and treatment strategies for glaucoma, highlighting the need for large-scale, multi-ethnic, genotype-stratified longitudinal studies and randomized controlled trials to establish causality and define optimal intervention strategies. Metabolic diseases such as obesity and related conditions have an inflammatory basis. Genetic and nutritional factors can influence the development of these diseases by altering the inflammatory state. This study aimed to analyse how the rs659366 (G/A) polymorphism in the UCP2 gene interacts with dietary capsaicin (CAP) consumption and affects inflammatory markers in Mexican adults. A cross-sectional, analytical study was conducted in 212 adult patients. The UCP2 rs659366 polymorphism was genotyped using an allelic discrimination assay. Dietary CAP intake was measured with a validated food frequency questionnaire. Multivariate linear regression analyses were performed for interaction analyses. The ancestral allele G accounted for 40.2% and the risk allele A accounted for 59.8% of samples. There was a significant interaction between CAP intake and the UCP2 rs659366 polymorphism for the inflammatory marker NLR (neutrophil-to-lymphocyte ratio) (p < 0.05). Among subjects with the G allele, higher CAP intake was associated with higher NLR scores (p < 0.001). Patients with the G allele of the UCP2 rs659366 polymorphism experienced increased inflammation with higher CAP intake. This finding highlights the need for future studies in personalised nutrition and could expand knowledge about the effects of CAP on obesity and inflammation. Full article

Background: Accumulating evidence suggests that dietary factors may affect cardiometabolic health, but the associations between the quality of plant-based diets and chronic-low grade inflammation have been insufficiently explored. The aim of this study was to examine the association between dietary indices and inflammatory markers in the studied cohort of vegans and vegetarians living in urban Poland. Methods: The study population comprised 198 individuals (mean age 33.6 yrs) including vegans (VG; n = 50), vegetarians (VN; n = 101) and omnivores (OV; n = 47). The following methods were used in this analysis: a questionnaire interview, anthropometric measurements and blood sample collection. Dietary patterns were evaluated using the Food Frequency Questionnaire and overall plant-based diet index (PDI) and healthful plant-based index (hPDI) were used to define adherence to plant-based dietary patterns. Results: Vegans had substantially lower hsCRP concentration and lymphocyte counts than VN and OV (p < 0.05). IL-6 concentrations, as well as total WBC, neutrophils, and lymphocytes counts, were significantly higher in OV compared to the other groups. In the overall study population, higher intake of plant-based foods was associated with lower mean levels of hsCRP, IL-6, glucose, lipids, neutrophil, lymphocyte, and total WBC counts (p < 0.05). Among vegetarians, higher consumption of healthful plant-based foods was associated with lower levels of total cholesterol, triglycerides, and selected inflammatory biomarkers. Conclusions: Our research indicates that the quality of plant-based diets is a critical determinant of cardiometabolic and inflammatory health. Importantly, eliminating animal products alone does not guarantee health benefits; rather, the composition and quality of plant-based foods are key. Full article

Background/Objectives: Amyotrophic lateral sclerosis (ALS) is a neurodegenerative disease characterized by progressive loss of motor function, which affects mobility and leads to secondary complications, including altered dietary intake due to dysphagia, fatigue, and hypermetabolism, particularly affecting vitamin consumption, which are essential micronutrients for neuromuscular performance. The specific relationship between vitamin intake and muscle activation is not well understood in patients with ALS; thus, it is relevant to identify blood biomarkers that reflect muscle status. Methods: A cross-sectional study was conducted with 61 patients with bulbar- or spinal-onset ALS. The dietary intake of B vitamins (B1, B2, B6, B12, folate, and niacin); vitamins C, A, D, and E; and the B6/protein ratio were assessed using a seven-day dietary record and a Food Frequency Questionnaire. Blood concentrations of butyrylcholinesterase (BuChE), albumin, haptoglobin, C-reactive protein (CRP), and paraoxonase 1 (PON1) were determined. Basal muscle activation was measured using surface electromyography of the biceps brachii, triceps brachii, rectus femoris, and tibialis anterior muscles. Two confirmatory predictive models were developed to evaluate the effects of muscle damage and vitamin intake on muscle strength. Results: Arm muscle activation was negatively predicted by the B6/protein ratio (β = −0.33). Leg activation was positively predicted by vitamin B9 (β = 0.39) and B6/protein (β = 0.17) and negatively predicted by vitamin A (β = −0.24). For biomarkers, albumin (β = 0.18) and PON1 (β = 0.28) positively predicted activation. For legs, albumin predicted activation (β = 0.31), whereas BuChE and haptoglobin predicted negative activation (β = −0.32 and β = −0.15, respectively). Conclusions: Weak associations were observed in patients with ALS: vitamin B9 intake showed a modest association with leg activation, the B6/protein ratio exhibited inconsistent associations across muscle groups, and vitamin A showed a negative association with leg activation. Albumin demonstrated the most consistent association as a potential biomarker of muscle function. These findings are exploratory and require validation in larger, longitudinal studies. Full article

Background: Multiple sclerosis (MS) is a chronic auto-immune neuroinflammatory disorder presenting as a range of systemic and neurological symptoms, including cognitive impairment. Emerging evidence suggests that diets targeting brain health—such as the Mediterranean (MED) and Mediterranean-DASH Intervention for Neurodegenerative Delay (MIND) diets—may improve cognitive function; however, studies examining their role in people living with MS are limited. Methods: We examined cross-sectional associations between diet and cognition data from 967 participants in the United Kingdom Multiple Sclerosis Register (UKMSR). Dietary pattern scores (alternate Mediterranean; aMED, and MIND) were derived from the 130-item EPIC-Norfolk food frequency questionnaire. Cognition was assessed using the MS-specific Cognitron-MS (C-MS) battery (13 tasks) and summarised as overall cognition (global G factor) and four domains (object memory, problem solving, information processing speed [IPS], and words memory). Cognitive outcomes were expressed as Deviation-from-Expected (DfE) scores standardised to demographic and device characteristics using external regression-based norms. Linear models were adjusted for total energy intake, MS phenotype, disease duration since diagnosis, and current disease-modifying therapy (DMT) use. Interactions tested moderation by MS phenotype (relapsing vs. progressive MS) and current DMT use (yes vs. no). Sensitivity analyses included within-domain multiple-comparison control, rank-based inverse-normal transformation, and winsorisation. Results: Greater alignment with aMED and MIND dietary patterns were associated with higher scores in specific cognitive domains but not in overall cognition. Higher aMED scores were associated most consistently with better IPS, while higher MIND scores were additionally associated with better words memory. In categorical models, participants with the middle or highest tertiles of aMED or MIND scores performed up to ~0.4 SD better on tasks of Verbal Analogies, Word Definitions, Simple Reaction Time, Words Memory Immediate, or Words Memory Delays compared with those in the lowest tertile. These findings were robust across sensitivity analyses. Stratified analyses showed differential cognitive performance and diet-cognition associations by MS phenotype and DMT use. Conclusions: Mediterranean and MIND dietary patterns showed modest cross-sectional associations with specific cognition domains, with differential cognitive performance in different subgroups according to MS phenotype and DMT use. Although causal inference is not possible, our findings indicate future MS-related dietary studies (longitudinal and/or randomised controlled trials) examining cognitive function domains across different MS subgroups are warranted.
