The windowpane oyster (Placuna placenta) is common in coastal areas of the Philippines, thriving in brackish waters. Its shells underpin the local craft industries. While its meat is edible, only small amounts are consumed locally, most going to waste. Utilization of this potential nutrient source is hindered by the lack of information concerning its organic and mineral content, the possible presence of heavy metal ions, and the risk of microbial pathogens. We report extensive analysis of the meat from Placuna placenta, harvested during three different seasons to account for potential variations. This comprises proximate analysis, mineral, antioxidant, and microbial analyses. While considerable seasonal variation was observed, the windowpane oyster was found to be a rich source of protein, fats, minerals, and carbohydrates, comparing well with the meats of other shellfish and land animals. Following pre-cooking (~90 °C, 25–30 min), the standard local method for food preparation, no viable E. coli or Salmonella sp. were detected. Mineral content was broadly similar to that reported in fish, although iron, zinc, and copper were more highly represented, nevertheless, heavy metals were below internationally acceptable levels, with the exception of one of three samples, which was slightly above the only current standard, FSANZ. Whether the arsenic was in the safer organic form, which is commonly the case for shellfish, or the more toxic inorganic form remains to be established. This and the variation of arsenic over time will need to be considered when developing food products. Overall, the meat of the windowpane oyster is a valuable food resource and its current (albeit low-level) use should lower any barriers to its acceptance, making it suitable for commercialization. The present data support its development for high-value food products in urban markets. Full article

Wild edible mushrooms are increasingly recognised for their nutritional and therapeutic potential, owing to their richness in bioactive compounds and antioxidant properties. This study assessed the chemical composition, antioxidant capacity, and bioaccumulation of heavy metals (Cd, Pb, Ni) in Boletus edulis, Imleria badia, and Leccinum scabrum collected from two forested regions of north-western Poland differing in anthropogenic influence and soil characteristics. The analysis encompassed structural polysaccharides (β- and α-glucans, chitin), carotenoids, L-ascorbic acid, phenolic and organic acids. B. edulis exhibited the highest β-glucan and lycopene contents, but also the greatest cadmium accumulation. I. badia was distinguished by elevated ascorbic and citric acid levels and the strongest DPPH radical scavenging activity, while L. scabrum showed the highest ABTS and FRAP antioxidant capacities and accumulated quinic acid and catechin. Principal component analysis indicated strong correlations between antioxidant activity and phenolic acids, while cadmium levels were inversely associated with antioxidant potential and positively correlated with chitin. Although all metal concentrations remained within EU food safety limits, B. edulis showed consistent cadmium bioaccumulation. From a practical perspective, the results highlight the importance of species selection and sourcing location when considering wild mushrooms for consumption or processing, particularly in the context of nutritional value and contaminant load. Importantly, regular or excessive consumption of B. edulis may result in exceeding the tolerable weekly intake (TWI) levels for cadmium and nickel, which warrants particular attention from a food safety perspective. These findings underscore the influence of species-specific traits and environmental conditions on mushroom biochemical profiles and support their potential as functional foods, provided that metal contents are adequately monitored. With the acceleration of the pace of life, increased stress levels, and changes in lifestyle factors such as diet and exercise, the incidence of diseases such as cancer and immunodeficiency has been on the rise, which is closely associated with the impaired antioxidant capacity of the body. Polypeptides and polysaccharides derived from edible fungi demonstrate significant strong antioxidant activity and immunomodulatory effects. Auricularia auricula, the second most cultivated mushroom in China, is not only nutritionally rich but also offers considerable health benefits. In particular, its polysaccharides have been widely recognized for their immunomodulatory activities, while its abundant protein content holds great promise as a raw material for developing immunomodulatory peptides. To meet the demand for high-value utilization of Auricularia auricula resources, this study developed a key technology for the stepwise extraction of polypeptides (AAPP1) and polysaccharides (AAPS3) using a composite enzymatic hydrolysis process. Their antioxidant and immunomodulatory effects were assessed using cyclophosphamide (CTX)-induced immune-suppressed mice. The results showed that both AAPP1 and AAPS3 significantly reversed CTX-induced decreases in thymus and spleen indices (p < 0.05); upregulated serum levels of cytokines (e.g., IL-4, TNF-α) and immunoglobulins (e.g., IgA, IgG); enhanced the activities of hepatic antioxidant enzymes SOD and CAT (p < 0.05); and reduced the content of MDA, a marker of oxidative damage. Intestinal microbiota analysis revealed that these compounds restored CTX-induced reductions in microbial α-diversity, increased the abundance of beneficial bacteria (Paramuribaculum, Prevotella; p < 0.05), decreased the proportion of pro-inflammatory Duncaniella, and reshaped the balance of the Bacteroidota/Firmicutes phyla. This study represents the first instance of synergistic extraction of polypeptides and polysaccharides from Auricularia auricula using a single process. It demonstrates their immune-enhancing effects through multiple mechanisms, including “antioxidation-immune organ repair-intestinal microbiota regulation.” The findings offer a theoretical and technical foundation for the deep processing of Auricularia auricula and the development of functional foods. Mushrooms are eukaryotic organisms with absorptive heterotrophic nutrition, capable of feeding on organic matter rich in cellulose and lignocellulose. Since ancient times, they have been considered allies and, in certain cultures, they were seen as magical beings or food of the gods. Of the great variety of edible mushrooms identified worldwide, less than 2% are traded on the market. Although mushrooms have been valued for their multiple nutritional and healing benefits, some cultures perceive them as toxic and do not accept them in their culinary practices. Despite the existing skepticism, several researchers are promoting the potential of edible mushrooms. There are two main methods of mushroom cultivation: solid-state fermentation and submerged fermentation. The former is the most widely used and simplest, since the fungus grows in its natural environment; in the latter, the fungus grows suspended without developing a fruiting body. In addition, submerged fermentation is easily monitored and scalable. Both systems are important and have their limitations. This article discusses the main methods used to increase the performance of submerged fermentation with emphasis on the modes of operation used, types of bioreactors and application of morphological bioengineering of filamentous fungi, and especially the use of intelligent automatic control technologies and the use of non-invasive monitoring in fermentation systems thanks to the development of machine learning (ML), neural networks, and the use of big data, which will allow more accurate decisions to be made in the fermentation of filamentous fungi in submerged environments with improvements in production yields. Fistulina hepatica (Schaeff.) With. and Clitocybe nuda (Bull.) H.E. Bigelow & A.H. Sm. are wild edible mushrooms with nutritional and functional potential that remain insufficiently characterized. This study provides the first comparative assessment of their nutritional profiles, phenolic composition, and antioxidant activity, using specimens collected from Montesinho Natural Park (Portugal). Proximate composition, organic and phenolic acids, free sugars, and fatty acids were analyzed by chromatographic methods, and antioxidant capacity was assessed through OxHLIA and TBARS assays. F. hepatica showed higher carbohydrates (9.3 ± 0.2 g/100 g fw) and estimated energy values (43 ± 1 kcal/100 g fw), increased phenolic acids content (2.7 ± 0.1 mg/g extract), and the exclusive presence of p-coumaric and cinnamic acids, along with OxHLIA activity (IC50 = 126 ± 5 µg/mL at Δt = 60 min). C. nuda displayed higher protein (2.5 ± 0.1 g/100 g dw) and quinic acid contents (4.13 ± 0.02 mg/g extract), a PUFA-rich profile, and greater TBARS inhibition (EC50 = 303 ± 17 µg/mL). These findings highlight distinct and complementary bioactive traits, supporting their valorization as natural functional ingredients. Their compositional features offer promising applications in sustainable food systems and nutraceutical development, encouraging further investigations into safety, bioaccessibility, and formulation strategies. Notably, F. hepatica is best consumed at a young developmental stage, as its sensory properties tend to decline with maturity. Full article

The scarab species Protaetia brevitarsis, an edible insect, has been used in traditional medicine, as animal feed, and for converting agricultural organic wastes into biofertilizer. The intestinal tract, which contains a diverse array of microbiota, including viruses, plays a critical role in animal health and homeostasis. We previously conducted a comparative analysis of the gut microbiota of third-instar larvae of P. brevitarsis obtained from five different farms and found significant differences in the composition of the gut bacterial microbiota between farms. To better understand the gut microbiota, the composition of DNA viruses in the hindgut contents of P. brevitarsis larvae obtained from five farms was investigated using metagenomic sequencing in this study. The β-diversity was significantly different between metagenomic data obtained from the five farms (PERMANOVA, pseudo-F = 46.95, p = 0.002). Family-based taxonomic analysis indicated that the relative abundance of viruses in the gut overall metagenome varied significantly between farms, with viral reads comprising approximately 41.2%, 15.0%, 4.3%, 4.0%, and 1.6% of metagenomic sequences from the farms Tohamsan gumbengi farm (TO), Secomnalagum gumbengi (IS), Gumbengi brothers (BR), Kyungpook farm (KB), and Jhbio (JH), respectively. More than 98% of the DNA viruses in the hindgut were bacteriophages, mainly belonging to the Siphoviridae family. At the species level, Phage Min1, infecting the genus Microbacterium, was detected in all farms, and it was the most abundant bacteriophage in intestinal microbiota, with a prevalence of 0.9% to 29.09%. The detected eukaryotic DNA viruses accounted for 0.01% to 0.06% of the intestinal microbiota and showed little or no relationship with insect viruses. Therefore, they most likely originated from contaminated feed or soil. These results suggest that the condition of substrates used as feed is more important than genetic factors in shaping the intestinal viral microbiota of P. brevitarsis larvae. These results can be used as reference data for understanding the hindgut microbiota of P. brevitarsis larvae and, more generally, the gut virome of insects. Full article

In recent decades, the rapid expansion of the food processing industry has led to significant losses and waste, with the fruit and vegetable sector among the most affected. According to the Food and Agriculture Organization of the United Nations (FAO), losses in this category can reach up to 60%. Vegetable waste includes edible parts discarded during processing, packaging, distribution, and consumption, often comprising by-products rich in bioactive compounds such as polyphenols, carotenoids, dietary fibers, vitamins, and enzymes. The underutilization of these resources constitutes both an economic drawback and an environmental and ethical concern. Current recovery practices, including their use in animal feed or bioenergy production, contribute to a circular economy but are often limited by high operational costs. In this context, fermentation has emerged as a promising, sustainable approach for converting vegetable by-products into value-added food ingredients. This process improves digestibility, reduces undesirable compounds, and introduces probiotics beneficial to human health. The present review examines how fermentation can improve the nutritional, sensory, and functional properties of plant-based foods. By presenting several case studies, it illustrates how fermentation can effectively valorize vegetable processing by-products, supporting the development of novel, health-promoting food products with improved technological qualities. The presence of lead (Pb) and cadmium (Cd) can have considerable effects on the environment and on humans. The present study examines their levels in two lakes with different trophic levels located in northwestern Poland; their concentrations were determined in water and the bottom sediments, in common reed and in the organs of pike, bream and roach. The work also evaluates Pb and Cd bioavailability in bottom sediments, their potential for biomagnification, their bioaccumulation in the food chain and risk to human consumers. Metal concentrations were determined by graphite furnace atomic absorption spectrometry (GFAAS). The geochemical fractions of the metals were isolated by sequential extraction. Both Pb and Cd demonstrated low bioavailability, with the carbonate fraction playing a key role in their bioconversion. The concentrations of Pb and Cd in some organs and tissue types of fish and reeds correlated with their levels in water and sediments. No biomagnification was observed between the studied fish species. Calculations based on BMDL, TWI and THQ concentrations found Pb and Cd levels in the edible parts of fish to be within permissible limits and not to pose any threat to consumer health. Full article

Currently, in the context of the emphasis on introducing a reduction in mineral fertilization and the increase in pressure on sustainable agriculture, magnesium fertilization and the use of biostimulants are becoming an alternative tool to increase the quality of potato tuber yield. This study aimed to assess the impact of potato genotype, cultivation technology, and long-term storage on the susceptibility of tubers to enzymatic browning. Two edible potato varieties were examined: the early ‘Wega’ and the mid-early ‘Soraya’. It was demonstrated that the varieties maintained their characteristic browning susceptibility consistent with their breeding descriptions. The ‘Wega’ variety exhibited decreasing browning susceptibility immediately after harvest; however, after 6 months of storage, its susceptibility significantly increased, exceeding that of the ‘Soraya’ variety. Additionally, the application of magnesium fertilization (90 kg ha−1) and biostimulant treatment (3 L ha−1) most effectively reduced the oxidative potential of the tubers, thereby decreasing browning susceptibility. This is due to a significant change in the concentration of organic acids responsible for enzymatic browning processes. A decrease in the content of chlorogenic acid by 9.4% and 8.4% and an increase in the content of citric and ascorbic acid by 11.1%, 5.3%, and 13.6% were achieved. Storage significantly affected the chemical composition of the tubers. An increase in chlorogenic (7.3%) and citric (5.8%) acids and a decrease in ascorbic (34%) acid content were observed. These changes correlated with the intensification of browning, with the increase in chlorogenic acid and the decrease in ascorbic acid having the greatest influence. The results indicate that the technology based on supplementary fertilization and biostimulation improves the quality of potato raw material without a significant increase in production costs. Further research on varieties with different vegetation lengths and those intended for food processing and starch production is advised. Full article

The integration of forestry and agriculture has promoted edible fungi cultivation in forest understory spaces. However, the impact of spent mushroom substrates on forest soils remains unclear. This study explored the use of seafood mushroom spent substrates (SMS) and grass substrates to cultivate Dictyophora indusiata. After cultivation, soil pH stabilized, organic carbon increased by 34.02–62.24%, total nitrogen rose 1.1–1.9-fold, while soil catalase activity increased by 43.78–100.41% and laccase activity surged 3.3–11.2-fold. The 49% Cenchrus fungigraminus and 49% SMS treatment yielded the highest 4-coumaric acid levels in the soil, while all treatments reduced maslinic and pantothenic acid content. SMS as padding material with C. fungigraminus enhanced soil bacterial diversity in the first and following years. Environmental factors and organic acids influenced the recruitment of genus of Latescibacterota, Acidothermus, Rokubacteriales, Candidatus solibacter, and Bacillus, altering organic acid composition. In conclusion, cultivating D. indusiata understory enhanced environmental characteristics, microbial dynamics, and organic acid profiles in forests’ soil in short time. Full article

With the rapid expansion of the aquaculture scale, the environmental pollution caused by the accumulation of fish pond sediment (FPS) has become increasingly prominent, making it urgent to establish sustainable resource utilization solutions. This study investigates the potential of using FPS as a soil amendment to improve saline–alkali soil (SAS) quality and enhance vegetable growth, while also quantifying ecological benefits through Gross Ecosystem Product (GEP) accounting. A pot experiment was conducted to evaluate the effects of different FPS mass percentages (0%, 20%, 40%, 80%, and 100%) on the growth of three vegetables (water spinach, lettuce, and chili) and soil quality. The results demonstrated that FPS addition at ≥40% significantly improves SAS quality, reducing the pH and salinity (p < 0.05), while enhancing organic matter, nutrient availability, and microbial activity. Among the treatments, 80% FPS maximized vegetable yields, with water spinach achieving the highest edible biomass (37.32 g). Compared to the control, nutritional quality under ≥80% FPS treatment showed substantial increases: vitamin C (133.33–307.03%), soluble sugars (49.97–73.53%), and protein (26.14–48.08%). An economic analysis revealed that 80% FPS with water spinach cultivation generated peak ecological benefits (274,951 CNY·ha−1; 185% above control). This study explores how private sector initiatives within the tourism industry can contribute to public health outcomes and Sustainable Development Goal 3 (SDG 3) through sustainable agricultural practices. Using a mixed-methods approach that combines a systematic literature review with an in-depth case study, the research examines how integrated strategies—such as pesticide-free farming, biodiversity enhancement, and edible landscape design—can reduce environmental health risks, improve nutritional quality, and promote local resilience. A series of sustainability interventions are analyzed using key performance indicators (KPIs) related to pesticide use, organic production, pollinator conservation, and community engagement. The findings reveal that business-led sustainability models can support systemic change when grounded in clear metrics and cross-sector collaboration. Although the absence of pre-2019 baseline data and direct health outcome measurements limit causal inference, the study provides a valuable blueprint for aligning private enterprise practices with global health and sustainability objectives. The implications are relevant for policymakers, hospitality operators, and public health stakeholders aiming to foster synergies between tourism, agriculture, and well-being. Full article

Microelement deficiencies, often termed “hidden hunger”, represent a significant global health challenge. Optimal human health relies on adequate dietary intake of essential microelements, including selenium (Se), zinc (Zn), copper (Cu), boron (B), manganese (Mn), molybdenum (Mo), iron (Fe), nickel (Ni), and chlorine (Cl). In recent years, there has been a growing focus on vitality and longevity, which are closely associated with the sufficient intake of essential microelements. This review focuses on these nine elements, whose bioavailability in the food chain is critically determined by their geochemical behavior in soils. There is a necessity for an understanding of the sources, soil–plant transfer, and plant uptake mechanisms of these microelements, with particular emphasis on the influence of key soil properties, including pH, redox potential, organic matter content, and mineral composition. There is a dual challenge of microelement deficiencies in agricultural soils, leading to inadequate crop accumulation, and the potential for localized toxicities arising from anthropogenic inputs or geogenic enrichment. A promising solution to microelement deficiencies in crops is biofortification, which enhances nutrient content in food by improving soil and plant uptake. This strategy includes agronomic methods (e.g., fertilization, soil amendments) and genetic approaches (e.g., marker-assisted selection, genetic engineering) to boost microelement density in edible tissues. Moreover, emphasizing the need for advanced predictive modeling techniques, such as ensemble learning-based digital soil mapping, enhances regional soil microelement management. Integrating machine learning with digital covariates improves spatial prediction accuracy, optimizes soil fertility management, and supports sustainable agriculture. Given the rising global population and the consequent pressures on agricultural production, a comprehensive understanding of microelement dynamics in the soil–plant system is essential for developing sustainable strategies to mitigate deficiencies and ensure food and nutritional security. This review specifically focuses on the bioavailability of these nine essential microelements (Se, Zn, Cu, B, Mn, Mo, Fe, Ni, and Cl), examining the soil–plant transfer mechanisms and their ultimate implications for human health within the soil–plant–human system. The selection of these nine microelements for this review is based on their recognized dual importance: they are not only essential for various plant metabolic functions, but also play a critical role in human nutrition, with widespread deficiencies reported globally in diverse populations and agricultural systems. While other elements, such as cobalt (Co) and iodine (I), are vital for health, Co is primarily required by nitrogen-fixing microorganisms rather than directly by all plants, and the main pathway for iodine intake is often marine-based rather than soil-to-crop. New Contributions to Deepen the Quality-Based Safety Assessment in the Consumption of Edible Nasturtium Flowers—The Role of Volatilome

The garden Nasturtium (Tropaeolum majus L.) is increasingly consumed worldwide due to its culinary appeal and perceived health benefits. However, the chemical markers underlying its functional properties remain insufficiently characterized. Building on evidence from a recent human pilot study confirming both high acceptability and dietary safety, we conducted a comprehensive volatilomic and phytochemical analysis of T. majus flowers and their juice. Headspace solid-phase microextraction coupled with gas chromatography–mass spectrometry (HS-SPME/GC-MS) was employed to establish the volatilomic fingerprint of floral tissues and juice. Our analysis revealed a striking dominance of benzyl isothiocyanate and benzonitrile, which together accounted for 88% of the total volatile organic metabolites (VOMs) in the juice, 67% and 21%, respectively. In the floral tissues, benzyl isothiocyanate was even more prevalent, representing 95% of the total volatile profile. Complementary in vitro assays confirmed a substantial total phenolic content and strong antioxidant activity in the flowers. These findings provide a robust chemical rationale for the potential health-promoting attributes of T. majus, while identifying key volatilomic markers that could support future functional and safety claims. In parallel, a benefit–risk assessment framework is discussed in accordance with the European Food Safety Authority (EFSA) guidelines for the Qualified Presumption of Safety (QPS) of edible flowers. Given that both benzyl isothiocyanate and benzonitrile are classified as Cramer Class III substances, a conservative intake threshold of 1.5 μg/kg body weight per day is proposed. To enable quantitative exposure modeling and support the derivation of a tolerable daily intake (TDI), future studies should integrate organic solvent-based extraction methodologies to estimate the total volatile load per gram of floral biomass. This would align risk–benefit assessments with the EFSA’s evolving framework for novel foods and functional ingredients. Full article

Pleurotus ostreatus, classified under the phylum Basidiomycota, order Agaricales, and family Pleurotaceae, is a prevalent gray edible fungus. Its physical damage not only compromises quality and appearance but also significantly diminishes market value. This study proposed an enhanced method for detecting Pleurotus ostreatus damage based on an improved YOLOv8n model, aiming to advance the accessibility of damage recognition technology, enhance automation in Pleurotus cultivation, and reduce labor dependency. This approach holds critical implications for agricultural modernization and serves as a pivotal step in advancing China’s agricultural modernization, while providing valuable references for subsequent research. Utilizing a self-collected, self-organized, and self-constructed dataset, we modified the feature extraction module of the original YOLOv8n by integrating a lightweight GhostHGNetv2 backbone network. During the feature fusion stage, the original YOLOv8 components were replaced with a lightweight SlimNeck network, and an Attentional Scale Sequence Fusion (ASF) mechanism was incorporated into the feature fusion architecture, resulting in the proposed OMB-YOLO model. This model achieves a remarkable balance between parameter efficiency and detection accuracy, attaining a parameter of 2.24 M and a mAP@0.5 of 90.11% on the test set. To further optimize model lightweighting, the DepGraph method was applied for pruning the OMB-YOLO model, yielding the OMB-YOLO-tiny variant. Experimental evaluations on the damaged Pleurotus dataset demonstrate that the OMB-YOLO-tiny model outperforms mainstream models in both accuracy and inference speed while reducing parameters by nearly half. With a parameter of 1.72 M and mAP@0.5 of 90.14%, the OMB-YOLO-tiny model emerges as an optimal solution for detecting Pleurotus ostreatus damage. These results validate its efficacy and practical applicability in agricultural quality control systems. Full article
