Dear Colleagues,
This Special Issue explores the relationship between bioactive compounds and emerging technologies, focusing on how innovative processing methods can enhance the stability, bioaccessibility, and functionality of natural ingredients in complex food matrices. Our Special Issue is open to submissions of high-quality original research and review articles that address the chemical and technological challenges of integrating bioactive compounds, such as polyphenols, carotenoids, peptides, and essential oils, into food matrices. A central focus of this issue is the application of emerging technologies (e.g., ultrasound, high pressure, cold plasma, and pulsed electric fields) not only for the extraction of these compounds but also for their stabilization through advanced delivery systems such as nanoemulsions, microencapsulation, and hydrogels. Furthermore, this Special Issue focuses on the role of these technologies and bioactives in food preservation, exploring innovative methods to extend shelf life, control microbiological deterioration, and maintain oxidative stability. We also seek projects that integrate the development of functional systems and active packaging with effective preservation strategies to ensure food safety and product sensory integrity throughout storage.
In this Special Issue, original research articles and reviews are welcome. Research areas may include (but not limited to) the following:
(1) Advanced encapsulation techniques for the release of bioactive compounds.
(2) Impact of emerging non-thermal technologies on nutrient retention.
(3) Active packaging and edible coatings enriched with natural bioactive compounds.
(4) Sustainable "green" extraction of high-value compounds from agro-industrial by-products.
(5) Microbiological control and oxidative stability through a combination of emerging non-thermal technologies and natural bioactive compounds.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
