Special Issue Information
Dear Colleagues,
This Special Issue, entitled “Dietary Folates in Foods”, will focus on studies describing food folate analysis, sources of folates in foods, and how food folate concentrations affect health. Folate (vitamin B9; an essential water-soluble vitamin) is required for cell growth and development and plays a vital role in various bodily functions. Studies may include any aspect of food folate analysis, comparisons of sources of food folate, and discussions of how food folates affect health status. Study models may include microbiological assays and/or animal or human models or other pertinent approaches and may also include in vitro approaches aimed at better understanding food folate contents, types of folates, and the effects of food folates on health. This Special Issue aims to present novel findings in the field of food folate research to enhance our understanding of how this essential vitamin influences food quality and thereby human health.
This Special Issue of Foods welcomes original research and reviews of the literature concerning this important topic.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
