Special Issue Information

Sufficient consumption of fruits and vegetables has been associated with a reduced risk of chronic diseases and body weight management. However, most of the world's population do not eat enough fruits and vegetables daily, since the World Health Organization (WHO) reports recommend that adults consume at least 400 g each day to reap the health and nutrition benefits. On the other hand, studies evaluating the functional role of many common fruits and vegetables in our diet are increasingly observed and encouraged, which could contribute to the increase in their consumption by the population. Therefore, studies that evaluate the effects of fruits and vegetables on health are still very necessary and desirable, but mainly when there is an adequate and robust characterization of which main bioactive compounds would be involved in these effects. In addition, as the potential mechanisms of these bioactive compounds are still scarce and little evaluated, studies that seek to elucidate these mechanisms or the observed health effect are encouraged.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
