Special Issue Information

Dear Colleagues,

For years, food preservation and safety have been paramount to ensuring global food security, nutritional quality, and public health. Traditional approaches, while foundational, often provide limited mechanistic insights into the complex biochemical, microbiological, and physiological changes occurring in food matrices during processing, storage, and spoilage. The emergence of Foodomics provides a revolutionary paradigm to decode these intricacies. By integrating advanced omics technologies—including genomics, transcriptomics, proteomics, and metabolomics—this discipline enables a systems-level investigation of food, offering unprecedented mechanistic insights into preservation efficacy and safety hazards.

This Special Issue calls for research that employs these integrated omics approaches to uncover the underlying molecular mechanisms and networks in Foods. We seek contributions that elucidate the systems-level mechanisms behind key processes, including but not limited to: microbial interactions and pathogen virulence regulation; the metabolic pathways of spoilage, toxin formation, and bioactive compound transformation; host-food-microbiome interplay affecting food safety and quality; and the molecular basis of traditional and novel preservation methods (e.g., cold plasma, pulsed electric fields, electrolyzed water, bio-preservatives) and their impact on nutritional and sensory profiles. The goal is to move beyond descriptive analysis towards predictive modeling and the rational design of novel and smart interventions.

We invite original research and review articles that bridge food chemistry, microbiology, and data science to deepen our mechanistic understanding and promote the food-safe and high-quality food systems.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
