Dear Colleagues,
This Special Issue aims to explore the intersection of food analytical chemistry, the identification and characterization of bioactive compounds, food microbiology, and the role of probiotics in food systems. Emphasis will be placed on innovative analytical techniques for food quality and safety assessment, the discovery and functionality of health-promoting bioactive molecules, microbial dynamics in foods, and the development of probiotic-enriched products. Contributions addressing the integration of these fields to enhance food safety, functionality, and human health are particularly welcome.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
