Dear Colleagues,

In recent years, marine bioactive compounds—including proteins and peptides, polysaccharides, polyunsaturated fatty acids, and phytochemicals—have emerged as cutting-edge research topics in food science, nutrition, functional food development, and biomedicine due to their exceptional nutritional value, health benefits, and unique physicochemical properties. These compounds demonstrate significant potential in antioxidant, anti-inflammatory, immunomodulatory, metabolic improvement, and neuroprotective activities, offering innovative approaches to address global health challenges and advance sustainable food resource development. Therefore, this Special Issue, titled “Marine Bioactive Compounds: Extraction, Metabolism, Nutrition, Physicochemical Properties, and Food Applications”, aims to collect high-quality original research and review articles related to marine bioactive compounds in the following areas:

  • Extraction and preparation technologies;
  • Bioavailability and absorption metabolism;
  • Nutritional and health benefits;
  • Physicochemical properties and functional characteristics;
  • Food innovation and applications.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
