Dear Colleagues,

Food safety is a critical global priority in the context of increasingly complex supply chains, intensified agricultural production, climate change, and evolving dietary patterns. These dynamics contribute to the emergence, persistence, and dissemination of chemical and biological hazards within food systems. Among the most pressing concerns are pesticide residues, mycotoxins, environmental contaminants, foodborne pathogens, and antimicrobial-resistant microorganisms, all of which may exert significant biological and toxicological effects and pose substantial risks to public health, food security, and international trade.

Ensuring safe and sustainable food systems requires advanced analytical methods capable of detecting contaminants at trace levels, identifying emerging hazards, and supporting effective monitoring across the agri-food chain. High-resolution analytical techniques, multi-residue methodologies, molecular and omics-based tools, biosensors, and rapid detection technologies are increasingly essential to strengthen surveillance systems and enable early risk identification and control. In parallel, robust dietary exposure assessment, toxicological evaluation, and quantitative risk assessment models are fundamental for informing science-based risk management and regulatory decision-making.

This Research Topic aims to advance scientific knowledge and develop innovative solutions to ensure food safety in a rapidly changing global context. We welcome contributions that address the detection, monitoring, mitigation, and risk assessment of food-related hazards along the agri-food chain, with particular emphasis on high-resolution analytical techniques, multi-residue methods, molecular and omics-based tools, rapid detection and point-of-need technologies, antimicrobial resistance surveillance, dietary exposure assessment, and science-based risk management strategies.
