This study aimed to evaluate solid-state fermentation (SSF) as a sustainable approach for the simultaneous detoxification of olive pomace (OP) and the production of industrially relevant enzymes. OP, a semisolid byproduct of olive oil extraction, is rich in lignocellulose and phenolic compounds, which limit its direct reuse due to phytotoxicity. A native strain of Aspergillus sp., isolated from OP, was employed as the biological agent, while grape pomace (GP) was added as a co-substrate to enhance substrate structure. Fermentations were conducted at two scales, Petri dishes (20 g) and a fixed-bed bioreactor (FBR, 2 kg), under controlled conditions (25 °C, 7 days). Key parameters monitored included dry and wet weight loss, pH, color, phenolic content, and enzymatic activity. Significant reductions in color and polyphenol content were achieved, reaching 68% in Petri dishes and 88.1% in the FBR, respectively. In the FBR, simultaneous monitoring of dry and wet weight loss enabled the estimation of fungal biotransformation, revealing a hysteresis phenomenon not previously reported in SSF studies. Enzymes such as xylanase, endopolygalacturonase, cellulase, and tannase exhibited peak activities between 150 and 180 h, with maximum values of 424.6 U·g−1, 153.6 U·g−1, 67.43 U·g−1, and 6.72 U·g−1, respectively. The experimental data for weight loss, enzyme production, and phenolic reduction were accurately described by logistic and first-order models. These findings demonstrate the high metabolic efficiency of the fungal isolate under SSF conditions and support the feasibility of scaling up this process. The proposed strategy offers a low-cost and sustainable solution for OP valorization, aligning with circular economy principles by transforming agro-industrial residues into valuable bioproducts. Freemium, a popular business model in the digital economy, offers a basic product for free while charging for advanced features or value-added services. This pricing strategy enables platforms to attract a broad user base and then monetize through premium offerings. Customer characteristics and service price are important factors affecting customer choice behavior in such a model. Based on consumption stickiness, we consider a monopoly that provides value-added services by incorporating a multinomial logit model into a two-stage dynamic pricing model. First, we analyze the optimal pricing of value-added services under a normal sales scenario. We then consider optimal pricing during the marketing period under two strategies—level improvement for value-added services and quality reduction for a basic product—and analyze the applicability of each. The results show that increasing the value-added service level has a positive effect on the optimal price of value-added services, whereas reducing the basic product quality has no effect on the optimal price. Furthermore, the numerical simulation shows that when the depth of consumer stickiness is low, the optimal marketing strategy reduces the quality of the basic product, the price of value-added services should be higher than that in the normal sales period but lower than the price under the level-improvement strategy for value-added services; otherwise, improving the level of the value-added services becomes the optimal approach. This study provides a theoretical basis and decision support for product quality design and service pricing that applies to freemium platforms. Full article

Modern meat processing faces several challenges, including high resource consumption, environmental impact, and the need to enhance the nutritional and biological value of finished products. In this context, interest is growing in functional plant-based ingredients capable of improving the quality of meat products. The aim of this study was to evaluate the effect of adding 0.01% hemp protein powder and 0.01% sea buckthorn extract (based on the weight of unsalted raw material) on the nutritional, technological, and microbiological characteristics of cooked-smoked sausages. The results demonstrated an increase in total protein content, a 2.5-fold rise in tocopherol levels, as well as a 17.9% improvement in the Amino Acid Score of threonine and a 2.48% increase in the biological value of protein. Samples enriched with plant-based components exhibited enhanced organoleptic properties and greater storage stability over 36 days. In addition, extrusion parameters for the production of the protein additive were optimized, resulting in a stable functional ingredient. Full article

Pork is a major global source of animal protein, and improving both its production efficiency and meat quality is a central goal in modern animal agriculture and food systems. This study investigated post-inflection-point growth patterns in two genetically distinct pig breeds—the lean-type Yorkshire pig (YP) and the fatty-type Qingyu pig (QYP)—with the aim of elucidating breed-specific characteristics that influence pork quality and yield. Comprehensive evaluations of carcass traits, meat quality attributes, nutritional composition, and gene expression profiles were conducted. After the growth inflection point, carcass traits exhibited greater variability than meat quality traits in both breeds, though with distinct patterns. YPs displayed superior muscle development, with the longissimus muscle area (LMA) increasing rapidly before plateauing at ~130 kg, whereas QYPs maintained more gradual but sustained muscle growth. In contrast, intramuscular fat (IMF)—a key determinant of meat flavor and texture—accumulated faster in YPs post inflection but plateaued earlier in QYPs. Correlation and clustering analyses revealed more synchronized regulation of meat quality traits in QYPs, while YPs showed greater trait variability. Gene expression patterns aligned with these phenotypic trends, highlighting distinct regulatory mechanisms for muscle and fat development in each breed. In addition, based on the growth curves, we calculated the peak age at which the growth rate declined in lean-type and fat-type pigs, which was approximately 200 days for YPs and around 270 days for QYPs. This suggests that these ages may represent the optimal slaughter times for the respective breeds, balancing both economic efficiency and meat quality. These findings provide valuable insights for enhancing pork quality through precision management and offer theoretical guidance for developing breed-specific feeding strategies, slaughter timing, and value-added pork production tailored to consumer preferences in the modern food market. Virginia’s coastal location and abundant marine resources make its seafood industry a vital contributor to the state’s economy, supporting both local communities and tourism. This study applied input–output models and updates the economic contributions of the Virginia seafood industry using 2023 data, building on models developed for 2019 that capture both direct effects and broader economic ripple effects. In 2023, the industry generated USD 1.27 billion in total economic output and supported over 6500 jobs—including watermen, aquaculture farmers, processors, and distributors—resulting in USD 238.3 million in labor income. Contributions to state GDP totaled USD 976.7 million, and tax revenues exceeded USD 390.4 million. The study also evaluates the economic role of Virginia seafood products sold in retail stores and restaurants, based on secondary data sources. In 2023, these sectors generated USD 458 million in economic output, supported more than 3600 jobs, produced USD 136.7 million in labor income, and USD 280.8 million in value-added. Combined tax contributions surpassed USD 74 million. Importantly, the analysis results for the Virginia seafood products from retail and restaurant should not be summed to the seafood industry totals to avoid double-counting, as seafood products move as output from one sector as an input to another. These results provide evidence-based insights to guide decision-making, inform stakeholders, and support continued investment in Virginia’s seafood supply chain and related economic activities. European pig farmers are challenged by increasingly stringent EU regulations to protect the environment from pollution, to meet animal welfare standards and to make pig farming more sustainable. Economic sustainability is defined as the ability to achieve higher profits by respecting social and natural resources. This study is focused on the analysis of the economic resilience of intensive and extensive farming systems, based on data collected from 56 farms located in Denmark, Poland, Italy and Spain. Productive and economic performances of these farms are analyzed, and economic resilience is assessed through a survey including a selection of indicators, belonging to different themes: [i] resilience of resources, [ii] entrepreneurship, [iii] propensity to extensification. The qualitative data from the questionnaire allow for an exploration of how production systems relate to the three dimensions of resilience. Different levels of resilience were found and discussed for intensive and extensive farms. The findings suggest that intensive farms benefit from high standards and greater bargaining power within the supply chain. Extensive systems can achieve profitability through value-added strategies and generally display good resilience. Policies that support investment and risk reduction are essential for enhancing farm resilience and robustness, while strengthening farmer networks can improve adaptability. Full article

Type 10 17β-hydroxysteroid dehydrogenase (17β-HSD10) is the HSD17B10 gene product. It plays an appreciable part in the carcinogenesis and pathogenesis of neurodegeneration, such as Alzheimer’s disease and infantile neurodegeneration. This mitochondrial, homo-tetrameric protein is a central hub in various metabolic pathways, e.g., branched-chain amino acid degradation and neurosteroid metabolism. It can bind to other proteins carrying out diverse physiological functions, e.g., tRNA maturation. It has also previously been proposed to be an Aβ-binding alcohol dehydrogenase (ABAD) or endoplasmic reticulum-associated Aβ-binding protein (ERAB), although those reports are controversial due to data analyses. For example, the reported km value of some substrate of ABAD/ERAB was five times higher than its natural solubility in the assay employed to measure km. Regarding any reported “one-site competitive inhibition” of ABAD/ERAB by Aβ, the ki value estimations were likely impacted by non-physiological concentrations of 2-octanol at high concentrations of vehicle DMSO and, therefore, are likely artefactual. Certain data associated with ABAD/ERAB were found not reproducible, and multiple experimental approaches were undertaken under non-physiological conditions. In contrast, 17β-HSD10 studies prompted a conclusion that Aβ inhibited 17β-HSD10 activity, thus harming brain cells, replacing a prior supposition that “ABAD” mediates Aβ neurotoxicity. Furthermore, it is critical to find answers to the question as to why elevated levels of 17β-HSD10, in addition to Aβ and phosphorylated Tau, are present in the brains of AD patients and mouse AD models. Addressing this question will likely prompt better approaches to develop treatments for Alzheimer’s disease. Full article

Refining the land use structure can boost land utilization efficiency and curtail regional carbon emissions. Nevertheless, prior research has predominantly concentrated on static linear planning analysis. It has failed to account for how future dynamic alterations in driving factors (such as GDP and population) affect simulation outcomes and how the land use spatial configuration impacts the attainment of the carbon-neutrality goal. In this research, 1 km spatial resolution LULC products were employed to meticulously simulate multiple land use scenarios across China at the national level from 2030 to 2060. This was performed by taking into account the dynamic changes in driving factors. Subsequently, an analysis was carried out on the low-carbon land use spatial structure required to reach the carbon-neutrality target. The findings are as follows: (1) When employing the PLUS (Patch—based Land Use Simulation) model to conduct simulations of various land use scenarios in China by taking into account the dynamic alterations in driving factors, a high degree of precision was attained across diverse scenarios. The sustainable development scenario demonstrated the best performance, with kappa, OA, and FoM values of 0.9101, 93.15%, and 0.3895, respectively. This implies that the simulation approach based on dynamic factors is highly suitable for national-scale applications. (2) The simulation accuracy of the PLUS and GeoSOS-FLUS (Systems for Geographical Modeling and Optimization, Simulation of Future Land Utilization) models was validated for six scenarios by extrapolating the trends of influencing factors. Moreover, a set of scenarios was added to each model as a control group without extrapolation. The present research demonstrated that projecting the trends of factors having an impact notably improved the simulation precision of both the PLUS and GeoSOS-FLUS models. When contrasted with the GeoSOS-FLUS model, the PLUS model attained superior simulation accuracy across all six scenarios. The highest precision indicators were observed in the sustainable development scenario, with kappa, OA, and FoM values reaching 0.9101, 93.15%, and 0.3895, respectively. The precise simulation method of the PLUS model, which considers the dynamic changes in influencing factors, is highly applicable at the national scale. (3) Under the sustainable development scenario, it is anticipated that China’s land use carbon emissions will reach their peak in 2030 and achieve the carbon-neutrality target by 2060. Net carbon emissions are expected to decline by 14.36% compared to the 2020 levels. From the perspective of dynamic changes in influencing factors, the PLUS model was used to accurately simulate China’s future land use. Based on these simulations, multi-scenario predictions of future carbon emissions were made, and the results uncover the spatiotemporal evolution characteristics of China’s carbon emissions. This study aims to offer a solid scientific basis for policy-making related to China’s low-carbon economy and high-quality development. It also intends to present Chinese solutions and key paths for achieving carbon peak and carbon neutrality. Full article

Morocco is facing a situation of alarming water stress, aggravated by climate change, overexploitation of resources, and unequal distribution of water, placing the country among the most vulnerable to water scarcity in the MENA region. This study aims to investigate the dynamic relationship between economic growth and water stress in Morocco while highlighting the importance of integrated water management and adaptive economic policies to enhance resilience to water scarcity. A mixed methodology, integrating both qualitative and quantitative methods, was adopted to overview the economic–environmental Moroccan context, and to empirically analyze the GDP (gross domestic product) and water stress in Morocco over the period 1975–2021 using an Autoregressive Distributed Lag (ARDL) approach. The empirical analysis is based on annual data sourced from the World Bank and FAO databases for GDP, agricultural value added, renewable internal freshwater resources, and water productivity. The results suggest that water productivity has a significant positive effect on economic growth, while the impacts of agricultural value added and renewable water resources are less significant and vary depending on the model specification. Diagnostic tests confirm the reliability of the ARDL model; however, the presence of outliers in certain years reflects the influence of exogenous shocks, such as severe droughts or policy changes, on the Moroccan economy. The key contribution of this study lies in the fact that it is the first to analyze the intrinsic link between economic growth and the environmental aspect of water in Morocco. According to our findings, it is imperative to continuously improve water productivity and adopt adaptive management, rooted in science and innovation, in order to ensure water security and support the sustainable economic development of Morocco. Global policy narratives on livestock development increasingly emphasize environmental concerns, often overlooking the social dimensions of the sector. In the case of dairy, the world’s most valuable agricultural commodity, its role in social and economic development remains poorly quantified. Our study contributes to a more balanced vision of the UN SDGs thanks to the inclusion of a socio-economic dimension. Here we present a novel empirical approach to assess the socio-economic impacts of dairy development using a new global dataset and non-parametric modelling techniques (local polynomial regressions), with yield as a proxy for sectoral performance. We find that as dairy systems intensify, the number of farm households engaged in production declines, yet household incomes rise. On-farm labour productivity also increases, accompanied by a reduction in employment but higher wages. In dairy processing, employment initially grows, peaks, and then contracts, again with rising wages. The most substantial impact is observed among consumers: an increased milk supply leads to lower prices and improved affordability, expanding the access to dairy products. Additionally, dairy development is associated with greater agricultural value added, an expanding tax base, and the increased formalization of the economy. These findings suggest that dairy development, beyond its environmental footprint, plays a significant and largely positive role in social transformation, yet is having to adapt sustainably while tackling labour force relocation, and that dairy development’s social impacts mimic the general agricultural sector. These results might be of interest for the assessment of policies regarding dairy development. Full article

‘Mushy halibut syndrome’ (MHS) is associated with inferior fillet quality in Greenland halibut and is reported to occur in commercial catches across the North Atlantic. MHS constitutes a quality issue in fisheries and leads to economic losses and food wastage. Despite the known challenges associated with MHS, quantitative data on product properties are lacking, and yet they are crucial to assess actual losses and value-adding processing potential. As part of a larger effort to document and characterize MHS in Greenland halibut, we investigated how thaw drip loss (TDL), cooked drip loss (CDL), cooked yield, and tissue compressibility and elasticity differ between normal and ‘mushy’ halibut fillets. The fillets were sorted into three categories: normal, intermediate MHS, and severe MHS. The mean TDL and CDL increased more than three-fold in both MHS categories compared to normal fillets, while cooked yield decreased by approximately 20%. Fillets severely affected by MHS demonstrated high tissue compressibility (56%) and poor elasticity (46%), while the elasticity of the fillets belonging to the intermediate MHS category did not differ significantly from that of normal ones. These findings provide new insights into the product attributes of fillets affected by MHS, which are important for developing utilization and valorization strategies. Full article

The utilization of recycled concrete aggregate presents an effective solution for construction waste mitigation. However, concrete service in sulfate environments leads to sulfate ion retention in recycled aggregates, substantially impairing their quality and requiring modification approaches. A critical question remains whether traditional recycled aggregate modification techniques can effectively enhance the performance of these sulfate-containing recycled aggregates (SRA). Cement paste wrapping in various proportions was used in this investigation to enhance SRA. The performance of both SRA and modified aggregates was systematically assessed through measurements of apparent density, water absorption, crushing value, and microhardness. Microstructural analysis of the cement wrapping modification mechanism was conducted by scanning electron microscopy coupled with mercury intrusion porosimetry. Results revealed that internal sulfate addition decreased the crushing value and increased the water absorption of recycled aggregates, primarily due to micro-cracks formed by expansion. Additionally, the pores were occupied by erosion products, leading to a slight increase in the apparent density of aggregates. The performance of SRA was effectively enhanced by cement paste wrapping at a 0.6 water–binder ratio, whereas it was negatively impacted by a ratio of 1.0. The modifying effect became even more effective when 15% fly ash was added to the wrapping paste. Scanning electron microscopy observations revealed that the interface of SRA was predominantly composed of gypsum crystals. Cement paste wrapping greatly enhanced the original interface structure, despite a new dense interface formed in the modified aggregates. Full article

In recent decades, the rapid expansion of the food processing industry has led to significant losses and waste, with the fruit and vegetable sector among the most affected. According to the Food and Agriculture Organization of the United Nations (FAO), losses in this category can reach up to 60%. Vegetable waste includes edible parts discarded during processing, packaging, distribution, and consumption, often comprising by-products rich in bioactive compounds such as polyphenols, carotenoids, dietary fibers, vitamins, and enzymes. The underutilization of these resources constitutes both an economic drawback and an environmental and ethical concern. Current recovery practices, including their use in animal feed or bioenergy production, contribute to a circular economy but are often limited by high operational costs. In this context, fermentation has emerged as a promising, sustainable approach for converting vegetable by-products into value-added food ingredients. This process improves digestibility, reduces undesirable compounds, and introduces probiotics beneficial to human health. The present review examines how fermentation can improve the nutritional, sensory, and functional properties of plant-based foods. By presenting several case studies, it illustrates how fermentation can effectively valorize vegetable processing by-products, supporting the development of novel, health-promoting food products with improved technological qualities. Synthetic dyes are highly recalcitrant and are discharged in large volumes in industrial wastewater, which represents a serious environmental pollution problem. Biological methods for dye degradation are a potentially effective option for these synthetic products. In this study, a strain of Pleurotus ostreatus was used to evaluate the decolorization of the Remazol Brilliant Blue R (RBBR) dye added to the culture medium in the exponential growth phase of the fungus. The dye removal capacity of live and inactivated pellets by biosorption, as well as the enzymatic degradation of the dye using a cell-free culture broth considered an extracellular extract (EE), were also evaluated. The activity of laccase and dye-decolorizing peroxidase was determined in both the EE and the intrapellet extract (IPE); their values increased in the presence of dye in the culture medium. A decolorization of 98.5% and 98.0% was obtained in the culture broth and by the EE, respectively; biosorption of the dye by the inactivated pellets was 17 mg/g. The results suggest that the decolorization of the dye is primarily enzymatic, although there are also bioadsorption and bioaccumulation of the dye, which is then enzymatically degraded, and could be used as a carbon source.
