In this study, the impact of moderate and high CO2 and O2 levels was compared to low and moderate gas combinations during prolonged storage on the quality of Regina sweet cherries harvested in different maturity stages, particularly in terms of decreasing internal browning. Fruits were harvested in two different maturity stages (Light and Dark Mahogany skin color) and stored in CA of 15% CO2 + 10% O2; 10% CO2 + 10% O2; 10% CO2 + 5% O2; 5% CO2 + 5% O2 and MA of 4 to 5% CO2 + 16 to 17% O2 for 30 and 40 days at 0 °C and 90% RH, followed by a marketing period. After the storage, both maturity stages significantly reduced internal browning, decay, and visual quality losses in CA with 10–15% CO2 and 10% O2. In addition, it preserved luminosity, total soluble solids (TSSs), titratable acidity (TA), and bioactive compounds such as anthocyanins and phenols. This treatment also maintained the visual appearance of the sweet cherries, favoring their market acceptance. At the same time, the light red fruits showed a better general quality compared to darker color after the storage. In conclusion, a controlled atmosphere with optimized CO2 and O2 concentrations, together with harvesting with a Light Mahogany external color, represents an effective strategy to extend the shelf life of Regina sweet cherries up to 40 days plus the marketing period, maintaining their physical and sensory quality for export markets. Mushroom production is a sustainable practice but requires improvements, such as in Lentinula edodes (Berk) Pegler cultivation, which has high water and labor demands. In this context, this study proposed replacing the traditional primordia induction method by submersion with a water injection method. Two primordia induction methods (submersion and injection) and two cultivation block formats were compared: rectangular cube (2 kg) and cylindrical (3.5 kg). The substrate, composed of eucalyptus sawdust (72%), wheat bran (12.5%), rice bran (12.5%), CaCO3 (1%), and CaSO4 (2%), was inoculated with strain LED 19/11 and incubated for 80 days at 26 ± 5 °C and 85 ± 15% humidity. After this period, the blocks were washed and transferred to the production environment. Fruiting was induced either by submersion or water injection, and production was evaluated over four harvest flushes. The 2 kg blocks had higher yields with submersion (16.62%), while the 3.5 kg blocks responded better to injection (13.01%), showing more homogeneous production. Increasing the substrate quantity contributes to greater harvest stability across production cycles. Water injections proved to be a viable alternative, reducing handling and facilitating large-scale production. The use of this technique demonstrates great importance in reducing water use and also the need for labor in cultivation. Full article

Ozone Treatment Modulates Reactive Oxygen Species Metabolism Regulation and Enhances Storage Quality of Kiwifruit During Cold Storage

Fresh fruit are highly perishable commodities, facing significant postharvest losses primarily due to physiological deterioration and microbial spoilage. Conventional preservation methods often face limitations regarding safety, residue, and environmental impact. Because of its rapid decomposition and low-residue-impact characteristics, ozone has proven superior as an efficient and eco-friendly solution for preserving fruit quality after harvest. The maturation and aging processes of kiwifruit are closely linked to the involvement of reactive oxygen species (ROS) metabolism. This study aimed to investigate the effects of intermittent ozone treatment (21.4 mg/m3, applied for 0, 1, 3, or 5 h weekly) on ROS metabolism, the antioxidant defense system, and storage quality of kiwifruit during cold storage (0.0 ± 0.5 °C). The results showed ozone treatment slowed the decline in titratable acid (TA) content and fruit firmness, inhibited increases in total soluble solids (TSSs) and weight loss, and maintained the storage quality. Additionally, ozone treatment enhanced the activities of antioxidant-related enzymes. This includes superoxide dismutase (SOD), catalase (CAT), peroxidase (POD), and ascorbate peroxidase (APX). Furthermore, it delayed the reduction in ascorbate (ASA), glutathione (GSH), total phenolic compounds, and flavonoid content, while also preventing the accumulation of ROS and the rise in malondialdehyde (MDA) levels. In summary, the results indicate that ozone treatment enhances the antioxidant capacity of kiwifruit by increasing the structural integrity of cell membranes, preserving the structural integrity of cell membranes, and effectively maintaining the storage quality of the fruit. This study aimed to develop a functional powder using whey and milk matrices, leveraging the protective capacity of chia–alginate hydrogels and the advantages of electrohydrodynamic spraying (EHDA), a non-thermal technique suitable for encapsulating probiotic cells under stress conditions commonly encountered in food processing. A hydrogel matrix composed of chia seed mucilage and sodium alginate was used to form a biopolymeric network that protected probiotic cells during processing. The encapsulation efficiency reached 99.0 ± 0.01%, and bacterial viability remained above 9.9 log10 CFU/mL after lyophilization, demonstrating the excellent protective capacity of the hydrogel matrix. Microstructural analysis using confocal laser scanning microscopy (CLSM) revealed well-retained cell morphology and homogeneous distribution within the hydrogel matrix while, in contrast, scanning electron microscopy (SEM) showed spherical, porous microcapsules with distinct surface characteristics influenced by the encapsulation method. Encapsulates were incorporated into beverages flavored with red fruits and pear and subsequently freeze-dried. The resulting powders were analyzed for moisture, protein, lipids, carbohydrates, fiber, and color determinations. The results were statistically analyzed using ANOVA and response surface methodology, highlighting the impact of ingredient ratios on nutritional composition. Raman spectroscopy identified molecular features associated with casein, lactose, pectins, anthocyanins, and other functional compounds, confirming the contribution of both matrix and encapsulants maintaining the structural characteristics of the product. The presence of antioxidant bands supported the functional potential of the powder formulations. Chia–alginate hydrogels effectively encapsulated L. reuteri, maintaining cell viability and enabling their incorporation into freeze-dried beverage powders. This approach offers a promising strategy for the development of next-generation functional food gels with enhanced probiotic stability, nutritional properties, and potential application in health-promoting dairy systems. Rose hips are rich in polyphenols, making them a promising ingredient for the development of functional fruit-based beverages. This study aimed to evaluate the effect of Pulsed Electric Field (PEF) extraction treatment on rose hip (RH) pulp to enhance the extraction of polyphenols, carotenoids, and volatile compounds. Additionally, this study examined the impact of adding rose hip berries during different stages of carbohydrate fermentation on the resulting phenolic and aroma profiles. A control wort and four experimental formulations were prepared. Rose hip pulp—treated or untreated with PEF—was added either during fermentation or beforehand, and the volatiles produced were analyzed using GC-MS (in triplicate). Fermentation was carried out over 10 days at 20 °C using Saccharomyces cerevisiae and Torulaspora delbrueckii. At a 10:1 ratio, all beverage samples were subjected to physicochemical testing and HPLC analysis for polyphenols, organic acids, and carotenoids, as well as GC-MS analysis for aroma compounds. The results demonstrated that the use of PEF-treated rose hips significantly improved phenolic compound extraction. Moreover, the PEF treatment enhanced the aroma profile of the beverage, contributing to a more complex and appealing sensory experience. This research highlights the rich polyphenol content of rose hips and the potential of PEF-treated fruit as a natural ingredient to improve both the functional and sensory qualities of fruit-based beverages. Their application opens new possibilities for the development of innovative, health-promoting drinks in the brewing industry. Full article

The effect of ultrasonic frequencies of 40 kHz/300 W (U-40) and 120 kHz/300 W (U-120) on the aqueous extraction of bioactive compounds from dried whole-fruit powders (DPs) of red-peel/white-flesh (WFP) and red-peel/red-flesh (RFP) pitayas was investigated, and shaking at 120 rpm (S-120) was used for a comparison. The effects of temperature and the solid-to-liquid ratio on the extraction efficiencies of the total phenolic content (TPC) and ferric-reducing antioxidant power (FRAP) of WFP and RFP were evaluated. The impact of extraction time on the aqueous extraction of specific compounds, namely, chlorogenic acid (CGA) and quercetin, from WFP and RFP was assessed with extraction modes of U-40, U-120, and S-120. At 40 °C and a 1/20 (g DP/mL) solid-to-liquid ratio, the use of U-40 achieved higher TPC and FRAP values at 15 min than U-120 and S-120 for WFP. The use of U-40 and U-120 extracted higher amounts of free CGA and free quercetin from WFP and RFP at 15 and 60 min than S-120 but showed different extraction efficiencies for free CGA and free quercetin. This study demonstrates that different ultrasonic frequencies can be applied in the green extraction of target bioactive compounds for use in nutraceutical foods. Full article

Indoor horticulture requires a substantial quantity of electricity to meet crops extended photoperiodic requirements for optimal photosynthetic rate. Simultaneously, global electricity costs have grown dramatically in recent years, endangering the sustainability and profitability of indoor vertical farms and/or modern greenhouses that use artificial lighting systems to accelerate crop development and growth. This study investigates the growth rate and physiological development of cherry tomato plants cultivated in a pilot indoor vertical farm at the Agricultural University of Athens’ Laboratory of Farm Structures (AUA) under continuous and disruptive lighting. The leaf physiological traits from multiple photoperiodic stress treatments were analyzed and utilized to estimate the plant’s tolerance rate under varied illumination conditions. Four different photoperiodic treatments were examined and compared, firstly plants grew under 14 h of continuous light (C-14L10D/control), secondly plants grew under a normalized photoperiod of 14 h with intermittent light intervals of 10 min of light followed by 50 min of dark (NI-14L10D/stress), the third treatment where plants grew under 14 h of a load-shifted energy demand response intermittent lighting schedule (LSI-14L10D/stress) and finally plants grew under 13 h photoperiod following of a load-shifted energy demand response intermittent lighting schedule (LSI-13L11D/stress). Plants were subjected also under two different light spectra for all the treatments, specifically WHITE and Blue/Red/Far-red light composition. The aim was to develop flexible, energy-efficient lighting protocols that maintain crop productivity while reducing electricity consumption in indoor settings. Results indicated that short periods of disruptive light did not negatively impact physiological responses, and plants exhibited tolerance to abiotic stress induced by intermittent lighting. Post-harvest data indicated that intermittent lighting regimes maintained or enhanced growth compared to continuous lighting, with spectral composition further influencing productivity. Plants under LSI-14L10D and B/R/FR spectra produced up to 93 g fresh fruit per plant and 30.4 g dry mass, while consuming up to 16 kWh less energy than continuous lighting—highlighting the potential of flexible lighting strategies for improved energy-use efficiency. Background/Objectives: Understanding the impact of dietary habits in terms of obesity, health outcomes, and functional decline is critical in Europe’s growing elderly population. This study analyzed trends in Mediterranean diet (MD) adherence, obesity prevalence, and grip strength among middle-aged and elderly Europeans using data from the Survey of Health, Ageing and Retirement in Europe (SHARE). Methods: Data from four SHARE waves (2015–2022) across 28 countries were analyzed. Dietary patterns were assessed through food frequency questionnaires classifying participants as MD-adherent or non-adherent where adherent implies daily consumption of fruits and vegetables and occasional (3–6 times/week) intake of eggs, beans, legumes, meat, fish, or poultry (an unvalidated definition of the MD pattern). Handgrip strength, a biomarker of functional capacity, was categorized into low, medium, and high groups. Body mass index (BMI), self-perceived health (SPHUS), chronic disease prevalence, and CASP-12 scores (control, autonomy, self-realization, and pleasure evaluated on the 12-item version) were also evaluated. Statistical analyses included descriptive methods, logistic regressions, and multiple imputations to address missing data. Results: A significant majority (74–77%) consumed fruits and vegetables daily, which is consistent with MD principles; however, the high daily intake of dairy products (>50%) indicates limited adherence to the MD, which advocates for moderate consumption of dairy products. Logistic regression indicated that individuals with two or more chronic diseases were more likely to follow the MD (odds ratio [OR] = 1.21, confidence interval [CI] = 1.11–1.32), as were those individuals who rated their SPHUS as very good/excellent ([OR] = 1.42, [CI] = 1.20–1.69). Medium and high maximal handgrip were also strongly and consistently associated with higher odds of MD adherence (Medium: [OR] = 1.44, [CI] = 1.18–1.74; High: [OR] = 1.27, [CI] = 1.10–1.48). Conclusions: The findings suggest that middle-aged and older adults are more likely to adhere to the MD dietary pattern if they have more than two chronic diseases, are physically active, and have a medium or high handgrip. Although an unvalidated definition of the MD dietary pattern was used, the results highlight the importance of implementing targeted dietary strategies for middle-aged and elderly adults. As consumer preferences tend toward safer, chemical residue-free, and nutritionally rich fruits, preharvest bagging has gained attention as a sustainable method for improving fruit quality and protecting produce from environmental and biological stressors and pesticide residues. This study assessed the impact of preharvest bagging using paper bags with inner aluminum coating on the physicochemical traits, storability, and browning susceptibility after cutting or bruising of ‘Afrata Volou’ quince (Cydonia oblonga Mill.) fruit grown in central Greece. Fruits were either bagged or left unbagged approximately 60 days before harvest, and evaluations were conducted at harvest and after three months of cold storage, plus two days of shelf-life. Fruit bagging reduced the quince’s flesh temperature on the tree crown. Bagging had minor effects on fruit and nutritional quality, except for more yellow skin and higher titratable acidity (TA). Also, at harvest, bagging did not significantly affect fruit flesh browning after cutting or bruising. After three months of storage, unbagged and bagged quince fruit developed more yellow skin color, without significant alterations in most quality characteristics and nutritional value, but increased total tannin content (TTC). After three months of storage, the quince flesh color determined immediately after cutting or bruising was brighter and more yellowish compared to that at harvest, due to continuation of fruit ripening, but it darkened faster with time after cutting or skin removal. Therefore, fruit bagging appears to be a sustainable practice for improving the aesthetic and some chemical quality characteristics of quince, particularly after storage, without negative impacts on other characteristics such as texture and phenolic content. This paper proposes a comprehensive framework for integrating language policies into the realm of public administration, focusing on their potential to regulate linguistic inheritance and promote language tourism. Drawing upon theoretical insights and practical examples, this ongoing bibliographical inquiry elucidates the multifaceted benefits of such incorporation. Language policies shape societal dynamics, preserve culture and strengthen economies. By incorporating linguistic considerations into public administration practices, governments can cultivate linguistic inclusivity, facilitate intercultural communication, and support language-based tourism initiatives. Furthermore, it aims to provide a roadmap for the fruitful implementation of language initiatives to maximize their social and financial impact. Being particularly relevant to Greece for both linguistic and cultural reason, this study aims to offer valuable insights for policymakers and practitioners in the field of public administration. Fruits were immersed in melatonin solutions at concentrations of 0 (control), 0.01, 0.05, and 0.25 mM for 5 min and subsequently stored at –1 °C for 63 d. Among all treatments, the combination of two-week storage without fruit puncturing and 0.05 mM melatonin application significantly delayed fruit softening and decay even at the initial stage of storage, while also increasing the concentration of phenolic compounds and enhancing antioxidant activity. During the later storage period (28–63 d), melatonin-treated fruits maintained higher levels of maltose, fructose, and sucrose, contributing to improved flavor retention. In contrast, both lower (0.01 mM) and higher (0.25 mM) concentrations were less effective or even detrimental to fruit quality. HPLC-ESI-QTOF-MS2 analysis revealed that 0.05 mM melatonin effectively preserved several functional phenolics, including p-coumaroylquinic acid, caffeoyl glucose, 5-O-caffeoylquinic acid, 3-O-caffeoylquinic acid, luteolin-7-O-glucoside, and hydroxytyrosol. Thus, 0.05 mM melatonin is effective in delaying senescence and maintaining the postharvest quality of blue honeysuckle fruit. Full article

Consumers are increasingly exposed to environmental claims on food products. These claims often lack scientific validation and there are different methodologies that can be used for grounding these claims, which can lead to misleading results. The European Union’s (EU) Environmental Footprint methodology excludes the aggregation of environmental impacts, including damage to human health. This fact reduces transparency and limits the consumers’ ability to make information-based sustainable choices. This study aims to address this issue by calculating aggregated impacts on human health via life cycle assessment (LCA) in the agriculture and food-production sectors. In the study the IMPACT World+ method was used, including trustworthy databases and proper functional unit definition. The assessment encompassed three types of vegetables, four types of fruit, and four types of ready meals. The study also attempts to assess the impact of different farming systems (organic and conventional) on human health. Two standardised functional units, i.e., the unit based on product weight and product energy value were considered for each group of products. Our findings showed significant differences in results when different functional units were used. Additionally, no conclusion could be drawn regarding which farming system is more sustainable. Therefore, it is essential that the regulator clearly defines the criteria for selecting the appropriate functional unit in LCA within the agriculture and food-production sectors. In the absence of these criteria, results should be presented for all alternatives. Although not required by EU regulation, the authors suggest that companies should nevertheless disclose information regarding the environmental impact of agriculture and food production on human health, as this is important for consumers. Although favorable effects of Selenium nanoparticles (SeNPs or nSe) in tomato have been reported, research has concentrated on stress alleviation and disease management. From the above it is noticeable that the effect of NPs varies greatly depending on the model plant, nanoparticle (concentration, size, shape), and application (foliar or drenching). For this reason, the objective of this study was to investigate the impact of biostimulating tomato plants under no stressor conditions (Solanum lycopersicum cv. ‘Pomodoro’ L.) with SeNPs on morpho-physiological and fruit quality parameters. Three doses of Selenium nanoparticles (5, 15, and 30 mg L−1), and a control were applied via a foliar application after transplanting. The results indicate that a 5 mg L−1 SeNP treatment improved the growth and yield of the tomato, with the exception of the root length and leaf weight. Moreover, all doses modified the evaluated physiology, bioactive compounds, and fruit quality parameters. This research helped in understanding the SeNPs’ effect on tomato plants in greenhouses under a no stressor condition. Full article

Conventional vs. Photoselective Nets: Impacts on Tree Physiology, Yield, Fruit Quality and Sunburn in “Gala” Apples Grown in Mediterranean Climate

The impact of five different nets—conventional black, grey, white, and photoselective red and yellow—on the performance of “Gala Redlum” apples was evaluated over a five-year period (2020–2024) and compared to an uncovered control. The cumulative production over this period, ranked from highest to lowest, was as follows: white net (182.4 t/ha), grey net (178.5 t/ha), yellow net (175.8 t/ha), black net (175.5 t/ha), red net (169.5 t/ha), and uncovered control (138.8 t/ha). Vegetative growth results were inconsistent among the studied years. The cumulative photosynthetic rate (An) was slightly higher under the white net (57.9 µmol m−2 s−1). Fv/Fm values remained closest to optimal levels under the black and grey nets. Netting effectively protected fruits from elevated temperatures, particularly under the grey net, and reduced sunburn damage, with the grey, black, and yellow nets performing best in this regard. Overall profitability was increased by netting: the black net provided the highest cumulative income per hectare over a five-year period (EUR 72,315) alongside the second-lowest sunburn loss (0.69%), while the yellow net also showed strong economic performance (€64,742) with a moderate sunburn loss (1.26%) compared to the red net. Fruit dry matter and soluble solids content (SSC) were generally higher in the uncovered control, whereas °Hue values tended to be higher under the red and yellow nets. In summary, the black and yellow nets provided more balanced microclimatic conditions that enhanced tree performance, particularly under heat stress, leading to improved yield and profitability. However, the economic feasibility of each net type should be evaluated in relation to its installation and maintenance costs. Full article

Climate-Induced Heat Stress Responses on Indigenous Varieties and Elite Hybrids of Mango (Mangifera indica L.)

Mango is highly sensitive to heat stress, which directly affects the yield and quality. The extreme heat waves of 2024, with temperatures reaching 41–47 °C over 25 days, caused significant impacts on sensitive cultivars. The impact of heat waves on ten commercial cultivars from subtropical regions viz.,‘Dashehari’, ‘Langra’, ‘Chausa’, ‘Bombay Green’, ‘Himsagar’, ‘Amrapali’, ‘Mallika’, ‘Sharda Bhog’, ‘Kesar’, and ‘Rataul’, and thirteen selected elite hybrids H-4208, H-3680, H-4505, H-3833, H-4504, H-1739, H-3623, H-1084, H-4264, HS-01, H-949, H-4065, and H-2805, is reported. The predominant effects that were observed include the following: burning symptoms or blackened tips, surrounded by a yellow halo, with premature ripening in affected parts and, in severe cases, tissue mummification. Among commercial cultivars, viz., ‘Amrapali’ (25%), ‘Mallika’ (30%), ‘Langra’ (30%), ‘Dashehari’ (50%), and ‘Himsagar’ and ‘Bombay Green’ had severe impacts, with ~80% of fruits being affected, followed by ‘Sharda Bhog’. In contrast, mid-maturing cultivars like ‘Kesar’, ‘Rataul’, and late-maturing elite hybrids, which were immature during the stress period, showed no symptoms, indicating they are tolerant. Biochemical analyses revealed significantly elevated total soluble solids (TSS > 25 °B) in affected areas of sensitive genotypes compared to non-affected tissues and tolerant genotypes. Aroma profiling indicated variations in compounds such as caryophyllene and humulene between affected and unaffected parts. The study envisages that the phenological maturity scales are indicators for the selection of climate-resilient mango varieties/hybrids and shows potential for future breeding programs. Full article
