Understanding the components of the diet, food groups, and nutritional strategies that help prevent MASLD (Metabolic Dysfunction-Associated Steatotic Liver Disease) is essential for identifying dietary behaviors that can stop the progression of this condition, which currently affects over one-quarter of the global population. This review highlights the importance of including antioxidant nutrients in the diet, such as vitamins C and E, CoQ10, and polyphenolic compounds. It also emphasizes substances that support lipid metabolism, including choline, alpha-lipoic acid, and berberine. Among food groups, it is crucial to choose those that help prevent metabolic disturbances. Among carbohydrate-rich foods, vegetables, fruits, and high-fiber products are recommended. For protein sources, eggs, fish, and white meat are preferred. Among fat sources, plant oils and fatty fish are advised due to their content of omega-3 and omega-6 fatty acids. Various dietary strategies aimed at preventing MASLD should include elements of the Mediterranean diet or be personalized to provide anti-inflammatory compounds and substances that inhibit fat accumulation in liver cells. Other recommended dietary models include the DASH diet, the flexitarian diet, intermittent fasting, and diets that limit fructose and simple sugars. Additionally, supplementing the diet with spirulina or chlorella, berberine, probiotics, or omega-3 fatty acids, as well as drinking several cups of coffee per day, may be beneficial. Full article

Background: Behavioural heterogeneity in obesity is increasingly recognised, but how specific dietary patterns, food preferences and physical activity vary between obesity classes remains poorly characterised. Methods: We analysed behavioural, dietary, and lifestyle data from 1366 adults attending a tertiary obesity clinic in Italy. Participants were stratified into five obesity classes defined by BMI. Age-adjusted regression models and chi-square tests with Bonferroni correction were used to examine associations between obesity severity and key behavioural outcomes, including food preferences, eating behaviours, physical activity, and self-reported sleep quality. Results: The prevalence of uncontrolled eating, skipping meals, and fast eating significantly increased with obesity severity after adjusting for age (all p < 0.05). Preference for yoghurt and legumes declined with increasing BMI, whereas preferences for meat and dairy remained stable. Age-adjusted sport participation decreased progressively, with significantly lower odds in Obesity I, II, and IIIA compared to the Overweight group. Sleep quality was highest among overweight participants and declined with obesity severity; night-time awakenings were most frequent in Obesity IIIB. Conclusions: Distinct behavioural and lifestyle traits, including lower sport participation, reduced preference for fibre-rich foods, and greater frequency of uncontrolled, fast, and irregular eating, showed overall trends across obesity classes. While these findings suggest the presence of behavioural phenotypes, their interpretation is limited by the cross-sectional design and the use of self-reported, non-validated measures. Future studies should incorporate objective assessments to inform targeted obesity interventions. Full article

A total of 38% of Americans do not meet the Recommended Dietary Allowance (RDA) for calcium including those at risk for osteoporosis. To increase the percentage of patients at risk for osteoporosis who achieve goal calcium RDA intake, a collaborative specialty pharmacy-registered dietitian-nutritionist (RDN) quality improvement program was developed. Patients aged 18 to 90 years old receiving osteoporosis therapy (denosumab, teriparatide, zoledronic acid) or medications that increase bone loss (elagolix, oral prednisone) were provided with a structured assessment and educational intervention. Daily calcium intake included patient self-reported dietary intake plus supplement use. Written and verbal education on increasing dietary intake based on patient preferences was provided with 5 calcium-rich food-source store coupons. Recommendations for supplement selection (citrate vs. carbonate) and/or medication-related problem resolution were provided. Follow-up occurred at 3–6 months. Fifty patients enrolled [94% female, mean age 66.6 years (SD 15.3)] were taking denosumab (36), teriparatide (1), zoledronic acid (1), elagolix (7) and prednisone (5). The mean baseline daily dietary calcium intake was 500 mg (SD 247) with none achieving goal intake with diet alone. Average calcium supplement use in 22 (44%) patients was 686 mg daily (SD 284). At baseline, 17 (34%) met goal daily calcium intake compared to 30 (60%) at post intervention follow-up (p = 0.009). Over half of the store coupons were redeemed. A specialty pharmacy-RDN customized intervention program provides a model for aiding patients to modify calcium intake. Full article

Background/Objectives: Occupational stress is a common issue among academics. This study aims to determine the level of work stress experienced by academics depending on their titles and the relationship between this stress and eating behaviors. Methods: The data for the study were collected through an online survey from 649 academicians working in universities in Türkiye between January and February 2025. This is a cross-sectional study, and the snowball sampling method was used to facilitate high participation rates. Data were collected using a demographic questionnaire, the General Work Stress Scale (GWSS) to assess work stress levels, and the Turkish version of the Adult Eating Behavior Questionnaire (AEBQ-TR) to evaluate eating behaviors. Results: Among the participants, 47.6% were of normal weight, with an average BMI of 25.85 ± 4.56 kg/m2. The median work stress score of male academicians (17.00) was significantly lower than that of female academicians (21.00) (p < 0.001). Similarly, the median eating behavior score was lower in male academicians (18.55) compared to females (19.78) (p < 0.001). Work stress levels decreased with increasing academic title, with professors reporting the lowest levels of stress (p < 0.001). Conclusions: The findings indicate that female academics are more likely to engage in emotional eating under stress, whereas male academics tend to alter their dietary preferences by avoiding certain foods. These results underscore the importance of stress management and the promotion of healthy eating habits among academics. Full article

Autism spectrum disorder (ASD) is a neurodevelopmental disorder characterized by restricted social communication and repetitive behaviors. Prenatal stress is critical in neurodevelopment and increases risk for ASD, particularly in those with greater genetic susceptibility to stress. Docosahexaenoic acid (DHA) is one of the most abundant ω-3 fatty acids in the membrane phospholipids of the mammalian brain, and dietary DHA plays an important role in brain development and maintenance of brain structure. In this study, we investigated whether peri-natal supplementation of DHA can alleviate autistic-like behaviors in a genetic risk/stress mouse model and how it alters lipid peroxidation activity and GABAergic system gene expression in the forebrain. Pregnant heterozygous serotonin transporter knockout (SERT-KO) and wild-type (WT) dams were placed in either non-stressed control conditions or chronic variable stress (CVS) conditions and fed either a control diet or a DHA-rich (1% by weight) diet. Offspring of each group were assessed for anxiety and autism-associated behavior at post-natal day 60 using an open field test, elevated plus maze test, repetitive behavior, and the 3-chamber social approach test. A liquid chromatography-mass spectrometry (LC-MS)-based method was used to follow changes in levels of lipid peroxidation products in the cerebral cortex. Male offspring of prenatally stressed SERT-het KO dams exhibited decreased social preference behaviors and increased repetitive grooming behaviors compared to WT control offspring. Moreover, DHA supplementation in male SERT-het mice decreased frequency of grooming behaviors albeit showing no associated effects on social behaviors. Regardless of stress conditions, supplementation of DHA to the WT mice did not result in alterations in grooming nor social interaction in the offspring. Furthermore, no apparent changes were observed in the lipid peroxidation products comparing the stressed and non-stressed brains. Gad2 was downregulated in the cortex of female offspring of prenatally stressed SERT-KO dams, and this change appeared to be rescued by DHA supplementation in offspring. Gad2 was upregulated in the striatum of male offspring of prenatally stressed SERT-KO dams, but DHA did not significantly alter the expression compared to the control diet condition. Full article

Background/Objectives: Urolithin A (UA), a gut-derived metabolite of ellagitannins or ellagic acid, has recently gained attention for its potential benefits to brain health. The present research aimed to assess the antidepressant-like properties of UA in both in vitro and in vivo models and explored the molecular mechanisms underlying these effects. Methods: We investigated the antidepressant effects and mechanisms of UA in a model of corticosterone-induced damage to PC12 cells and in a model of chronic socially frustrating stress. Results: Our results demonstrate that UA treatment (5 and 10 μM) significantly alleviated cellular damage and inflammation in corticosterone (CORT)-treated PC12 cells. Furthermore, UA administration (50 and 100 mg/kg) significantly reduced immobility time in the mouse tail suspension test (TST) and forced swim test (FST), indicating its antidepressant-like activity. Additionally, treatment with UA led to the activation of the cAMP response element-binding protein (CREB)/brain-derived neurotrophic factor (BDNF) signaling cascade and triggered the activation of adenosine monophosphate-activated protein kinase (AMPK) during these processes. Importantly, pretreatment with AMPK-specific inhibitor Compound C abolished UA’s cytoprotective effects in PC12 cells, as well as its behavioral efficacy in the FST and TST, and its neurotrophic effects, highlighting the critical role of AMPK activation in mediating these effects. Furthermore, in the chronic social defeat stress (CSDS) mouse model, UA treatment (50 and 100 mg/kg) significantly alleviated depression-like behaviors, including reduced sucrose preference in the sucrose preference test, increased social avoidance behavior in the social interaction test, and anxiety-like behaviors, including diminished exploration, in the elevated plus maze test, suggesting the antidepressant-like and anxiolytic-like activities of UA. Moreover, UA treatment reversed elevated serum stress hormone levels, hippocampal inflammation, and the decreased AMPK/CREB/BDNF signaling pathway in the hippocampus of CSDS mice. Conclusions: Together, these results provide compelling evidence for UA as a viable dietary supplement or therapeutic option for managing depression. Full article

Sweet sensing is a fundamental sensory experience that plays a critical role not only in food preference, reward and dietary behaviour but also in glucose metabolism. Sweet taste receptors (STRs), composed of a heterodimer of taste receptor type 1 member 2 (T1R2) and member 3 (T1R3), are now recognised as being widely distributed throughout the body, including the gastrointestinal tract. Preclinical studies suggest these receptors are central to nutrient and glucose sensing, detecting energy availability and triggering metabolic and behavioural responses to maintain energy balance. Both internal and external factors tightly regulate their signalling pathways, and dysfunction within these systems may contribute to the development of metabolic disorders such as obesity and type 2 diabetes (T2D). Functional magnetic resonance imaging (fMRI) has provided valuable insights into the neural mechanisms underlying sweet sensing by mapping brain responses to both lingual/oral and gastrointestinal sweet stimuli. This review highlights key findings from fMRI studies and explores how these neural responses are modulated by metabolic state and individual characteristics such as body mass index, habitual intake and metabolic health. By integrating current evidence, this review advances our understanding of the complex interplay between sweet sensing, brain responses, and health and identifies key gaps and directions for future research in nutritional neuroscience. Background and Objectives: We have previously reported that omega-3 polyunsaturated fatty acids (PUFAs) derived from fish oil (FO) is an effective treatment for type 1 and type 2 diabetes neural and vascular complications. As omega-3 PUFAs become more widely used as a nutritional and disease modifying supplement an important question to be addressed is what is the preferred source of omega-3 PUFAs? Methods: Using a type 2 diabetic rat model and early and late intervention protocols we examined the effect of dietary treatment with omega-3 PUFAs derived from menhaden (fish) oil (MO), krill oil (KO), algal oils consisting primarily of eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA) or combination of EPA + DHA, or pharmaceutical-derived ethyl esters of EPA, DHA or combination of EPA + DHA. Nerve related endpoints included motor and sensory nerve conduction velocity, heat sensitivity of the hind paw, intraepidermal nerve density, cornea nerve fiber length, and cornea sensitivity. Vascular reactivity to acetylcholine and calcitonin gene-related peptide by epineurial arterioles that provide blood to the sciatic nerve was also examined. Results: The dose of each omega-3 PUFA supplement increased the content of EPA, docosapentaenoic acid (DPA), and/or DHA in red blood cell membranes, serum and liver. Diabetes caused a significant decrease of 30–50% of neural function and fiber occupancy of the skin and cornea and vascular reactivity. Treatment with MO, KO or the combination of EPA + DHA provided through algal oil or ethyl esters provided significant improvement of each neural endpoint and vascular function. Algal oil or ethyl ester of EPA alone was the least effective with algal oil or ethyl ester of DHA alone providing benefit that approached combination therapies for some endpoints. Conclusions: We confirm that omega-3 PUFAs are an effective treatment for DPN and sources other than fish oil are similarly effective. Full article

Dietary Structure and Cardiometabolic Risk Factors: A Comparative Analysis of Lingnan and Central Plains Regions in China Based on China Nutrition and Health Surveillance 2015–2017

Background: The Lingnan region is characterized by a hot and humid climate and abundant, diverse natural resources, while the Central Plains region experiences distinct four seasons and has a rich agricultural culture. Both regions possess unique dietary traditions and preferences. This study aims to investigate the differences in dietary structure between the Lingnan region (Guangdong, Guangxi, Hainan) and the Central Plains region (Shanxi, Shaanxi, Henan) and their impact on health. Methods: Using cross-sectional survey data from the 2015–2017 China National Nutrition and Health Survey, this study selected residents aged 18 and above as the research subjects. Generalized linear models were employed to analyze differences in the intake of various food groups between the two regions, while logistic regression models were used to examine regional differences in the prevalence of obesity, hypertension, diabetes mellitus, and hyperlipidemia. Results: A total of 14,484 adults were included in this study. Lingnan participants consumed significantly more rice products, red meat, poultry, seafood, and dark-colored vegetables, while Central Plains residents had higher intakes of wheat products, other cereals, soybeans, and eggs. Lingnan exhibited lower prevalence rates of obesity (8.6% vs. 18.1%), diabetes (7.6% vs. 9.8%), and hypertension (33.0% vs. 46.9%) compared to the Central Plains, with no significant difference in hyperlipidemia prevalence. Adjusted analyses confirmed that Lingnan residents had significantly reduced risks of obesity (OR = 0.431, 95% CI: 0.388–0.479), diabetes mellitus (OR = 0.841, 95% CI: 0.744–0.950), and hypertension (OR = 0.564, 95% CI: 0.523–0.608). Conclusions: The dietary structure in the Lingnan region plays a positive role in cardiometabolic health. Further analysis of the combined effects of different foods on health could provide a scientific basis for future nutrition and health management. Full article

Three-dimensional food printing (3DFP), a specialized application of additive manufacturing (AM), employs a layer-by-layer deposition process guided by digital image files to fabricate edible structures. Utilizing heavily modified 3D printers and Computer-Aided Design (CAD) software technology allows for the precise creation of customized food items tailored to individual aesthetic preferences and nutritional requirements. Three-dimensional food printing holds significant potential in revolutionizing the food industry by enabling the production of personalized meals, enhancing the sensory dining experience, and addressing specific dietary constraints. Despite these promising applications, 3DFP remains one of the most intricate and technically demanding areas within AM, particularly in the context of modern gastronomy. Challenges such as the rheological behaviour of food materials, print stability, and the integration of cooking functions must be addressed to fully realize its capabilities. This article explores the possibilities of applying classical modified 3D printers in the food industry. The behaviour of certain recipes is also tested. Two test case scenarios are covered. The first scenario is the work and formation of a homogenized meat mass. The second scenario involves finding a chocolate recipe that is suitable for printing relatively detailed chocolate decorative elements. The current advancements, technical challenges, and future opportunities of 3DFP in the field of engineering, culinary innovation and nutritional science are also explored. Full article

In the context of growing interest in sustainable plant-based alternatives and sustainable eating, this study focused on the impact of visual elements of packaging design—specifically the presence of mascots—on consumer sustainable decision-making when choosing plant-based food products. The quantitative research, conducted through an online questionnaire, consists of four parts: the evaluation of the visual attractiveness of authentic brands of plant-based products; the identification of key factors influencing consumers’ choices when purchasing plant-based foods; the selection between graphic packaging designs featuring different types of mascots; and the assessment of the perceived importance of mascots in dietary habits. The collected data allows an analysis of how much mascots influence consumer sustainable preferences and willingness to try plant-based products. The findings suggest that mascots may be an effective tool in shaping positive perceptions of plant-based food and strengthening brand trust within sustainable concepts. The results offer practical implications for marketing strategies of producers of plant-based alternatives and highlight the potential of visual communication to promote sustainable consumption. This study contributes to understanding how packaging design affects consumer sustainable behavior in the plant-based food sector, with a focus on mascots as a previously underexplored visual element. Background: The current food system is unsustainable, making it essential to address the issue globally through adequate policies and sustainable development goals. The European Union aims to dedicate 25% of farmland to organic farming by 2030 to promote sustainable practices. Warsaw is the first Polish city working on an urban sustainable food policy; however, there is limited data on the sustainable food system (SFS) and organic sector available. Objectives: This research examines whether consumers in Warsaw who prefer organic food also display other sustainable characteristics and awareness, reflected in their food choices, dietary habits, and other food-related behaviors. Methods: A household survey (HHS) was conducted as part of the SysOrg project, focusing on evaluating the sustainability of food systems in Warsaw in the areas of diet and organic food. The clusters of respondents, grouped by the self-declared proportion of organic foods in their diets, were analyzed and compared, and in addition, correlation analyses of the share of organic food in diets and other sustainability parameters were performed. Results: The study of 449 respondents indicates that Warsaw is at an early stage of the organic transformation, with the largest group of respondents declaring a 1–10% share of organic products in their diet. There were significant differences in dietary choices, sustainability awareness, and food selection habits and motivations among various consumer groups depending on their organic food share. Conclusions: Overall, this study’s findings highlight a link between organic food consumption and certain sustainable behaviors, suggesting potential for organic consumers’ contribution to a sustainable transformation. The study offers valuable insights into the existing knowledge gap regarding the behaviors of organic and sustainable consumers in Warsaw. Furthermore, despite the non-random nature of the sample limiting the generalizability of findings, it serves as a preliminary resource for other European cities that are formulating food policies and incorporating Green Public Procurement (GPP) into their procurement processes, especially for municipalities within the Visegrad Group. Apple, tomato, and grape pomaces, as well as an apple–grape (1:1) mixed pomace, were employed in the formulation of fruit-based spreads to valorize these underutilized by-products. The influence of pectin addition on the physicochemical and sensory properties of the spreads was also examined. All spread preparations carried the ‘high fiber’ nutrition claim. The apple pomace spread demonstrated the highest total and soluble dietary fiber contents (14.13 and 4.28%, respectively). Colorimetry showed higher L* and a* values for the tomato pomace spreads. Rheometry of the spreads revealed pseudoplastic flow and weak gel-like behavior (G′ > G″); the tomato and grape pomace spreads with pectin exhibited the highest η*, G′, and G″ values. A texture analysis (spreadability test) indicated that pectin addition affected only the mixed pomace spread, resulting in the least spreadable product. Regarding bioactive compounds, the apple pomace had the highest total phenolic content, and the grape pomace exhibited the highest antioxidant activity, both of which were also reflected in their corresponding spreads. A principal component analysis indicated a strong correlation among flavor, mouthfeel, and moisture content, which were negatively correlated with color intensity and spreadability. The apple pomace spread with added pectin was the most widely preferred by consumers due to its appealing mouthfeel, spreadability and flavor. Full article

This study comprehensively assessed the effects of ten highland barley varieties on the quality and digestibility of noodles. The characteristics of highland barley flour, including proximate composition, pasting properties, and dough mixing behavior, were analyzed. The quality of the resulting noodles was evaluated through cooking and textural property analysis. The digestion characteristics of the noodles were determined to evaluate the starch hydrolysis rate and glycemic index (GI). Additionally, a correlation analysis was conducted among the proximate composition of highland barley flour, the characteristics of flour, and the quality of noodles. The results demonstrate that Chaiqing 1 exhibited superior performance in terms of flour quality and noodle texture compared to other varieties. The noodles produced from this variety possessed an outstanding texture, with moderate hardness and excellent elasticity. Additionally, its noodles also exhibited superior cooking resistance and low cooking loss. Nutritionally, the moderate estimated glycemic index (eGI) and high resistant starch (RS) content of Chaiqing 1 were beneficial for intestinal health. Ximalaya 22 showed good processing performance but slightly inferior texture, whereas Kunlun 14 had a high dietary fiber content, which resulted in noodles prone to breaking. Through a comprehensive variety comparison and screening, Chaiqing 1 emerged as the preferred choice for producing high-quality highland barley noodles. Furthermore, correlation analysis revealed that dietary fiber was significantly and positively correlated with water absorption, stability time (ST), and hardness (p < 0.01). Amylose content was associated with peak temperature and breakdown viscosity. This study provides valuable insights into the selection of highland barley varieties for noodle production. Full article

Background/Objectives: The educational needs of individuals with OA and obesity can drive personalized resources for effective dietary interventions that align patient interests with weight and disease management. Therefore, the purpose of the present study was to evaluate differences in nutritional education topics of interest between patients with OA who are characterized as having higher (≥30 kg/m2; HBMI) and lower BMI (<30 kg/m2; LBMI). Methods: Cross-sectional survey data (n = 296) were dichotomized into HBMI (n = 172; BMI: 38.67 ± 6.59 kg/m2) and LBMI (n = 124; BMI: 25.59 ± 3.00 kg/m2) groups. A mixed-method approach examined group differences across four primary domains: (i) strategies for weight management and healthy lifestyle, (ii) interest in vitamins and supplements, (iii) foods and nutrient with anti-inflammatory properties, and (iv) dietary patterns for weight loss. Logistic regression models compared topic interests between groups. Thematic analysis of open-ended responses captured additional insights. Results: Compared to LBMI participants, those in the HBMI group showed greater interest in weight loss strategies, emotional eating, and diets such as low-carbohydrate and ketogenic approaches, but less interest in general supplement information and plant-based diets. HBMI also had greater interest in practical strategies (e.g., feeling full, affordable foods) and reduced interest in certain anti-inflammatory foods. Both groups expressed a desire for evidence-based resources on foods that promote joint health. Conclusions: BMI-specific differences in nutritional education preferences highlight the need for tailored, patient-centered strategies in OA management. Addressing these differences may improve the effectiveness of education interventions and enhance patient–provider communication around diet and lifestyle in OA care. Full article
