Special Issue Information

Dear Colleagues,

Thanks to the rapid development of analytical equipment, varying volatile compounds and compositions have been identified in different fruits and fruit extracts in recent times. These compounds are not only crucial to the flavor of fruit and related products but are also found with different types of bioactivities. Some important flavor compounds have been proven to have various health benefits including anti-inflammatory, antioxidant and antimicrobial activities. Understanding the important flavor compounds in fruits and their biological functions can help in promoting fruits and their healthy applications related to volatiles compounds.

In this Special Issue of Plants, we encourage the submission of manuscripts focused on the identification and nutritional evaluation of volatile compounds in fruits, including identification of the key flavor compounds, development of analytical methods for quantitation of volatile compounds such as two-dimensional gas chromatography, high-resolution mass spectrometry and novel extraction methods and assessment of the bioactivities of volatile compounds in fruits.

Plant tissue culture produces a wide range of genetic variations which are useful for quality improvement of the plant species. However, the differences in metabolic components and the key genes responsible for the difference in metabolic components between somaclonal variation and the original parent are still largely unknown. In this study, a mutant named ‘Mixue’ was identified with somaclonal variation of the ‘Sachinoka’ strawberry. The contents of pelargonidin-3-O-glucoside and cyanidin-3-O-glucoside in the red fruit of ‘Mixue’ were significantly decreased compared with ‘Sachinoka’. In comparison with ‘Sachinoka’, the expression levels of FaMYB10, FaMYB11.2, FaWD40 and FaTT19 in the turning fruit of ‘Mixue’ were significantly down-regulated, while the expression of FaMYB1 was significantly up-regulated in the red fruit. ‘Sachinoka’ and ‘Mixue’ fruits were found to have 110 volatile components. Among them, 15 volatile components in the red fruit of ‘Mixue’ were significantly increased compared with ‘Sachinoka’, such as nerolidol, benzaldehyde, ethyl hexanoate, ethyl isovalerate, which led to an enhanced aroma in ‘Mixue’ and might result from the up-regulated expression of FaNES1, FaCNL and FaAATs in ‘Mixue’. These results provide useful information on the effect of somaclonal variation on metabolic components of strawberry fruit and lay the foundation for the improvement in quality of strawberry. This research investigated the evolution of both monoterpenoids and expression profiles of related biosynthesis genes in the MEP pathway in seven different table grape varieties from veraison to maturity stage in two seasons, and the correlation was further evaluated between monoterpenoid accumulation and expression of these genes studied in these varieties. Results showed that linalool, trans-furan linalool oxide, geraniol, and cis-furan linalool oxide were the main compounds in the five Muscat varieties two seasons. ‘Zaomeiguixiang’ had the highest contents of geraniol and β-Citronellol. ‘Xiangfei’ had the most abundant of linalool and cis-furan linalool oxide, whereas the neutral varieties of ‘Moldova’ and ‘Christmas Rose’ had the least amount. Monoterpenoid volatiles have been grouped in three evolutionary patterns in the berry development of these varieties. ‘Zaomeiguixiang’ and ‘Xiangfei’ had distinct different pattern of terpenoids evolution profiles. Pearson’s correlation analysis showed that in the MEP pathway, the first biosynthesis gene VvDXS3 was significantly correlated to the accumulation of monoterpenoids, and appeared to be an important candidate gene for synthesis of the monoterpenoids. Methoxypyrazines (MPs) are a unique class of volatile compounds containing nitrogenous heterocyclics that impart green bell, vegetal and herbal odors to red grape berries and wines. In this study, the quality and MPs levels of grape berries from six representative red wine grape varieties were determined in the two consecutive years. The results showed that, at maturity, the highest total soluble solid was observed in Petit Verdot grape berries in the two consecutive years. While the anthocyanin content showed the highest in Marselan berries in 2018, in 2019, Petit Verdot berries had the highest anthocyanin content. Moreover, 2-methoxypyrazine (MOMP), 3-methyl-2-methoxypyrazine (MEMP) and 3-ethyl-2-methoxypyrazine (ETMP) levels were relatively lower, with almost no detectable in berries at maturity. The relative higher 3-isobutyl-2-methoxypyrazine (IBMP) content was observed in Cabernet Sauvignon, Marselan, Merlot, and Malbec berries. However, 3-sec-butyl-2-methoxypyrazine (SBMP) and IBMP were only detected in six wines, and their levels were higher than those in the grape berries. Furthermore, correlation analysis showed that there was a statistically positive correlation between the expression levels of VvOMT1 and VvOMT3 and MPs content in grape berries, while the lowest association was found in the VvOMT2. These findings provide a basis for selecting the most suitable grape varieties to improve wine quality. Full article
