Novel Foods: Exploring Nutritional Constituents and Biological Effects

Special Issue Information

Dear Colleagues,

Innovation and globalization have caused a diverse array of food products to enter the European Union (EU) market. These novel foods encompass items produced using advanced technologies derived from novel sources, newly synthesized or isolated compounds, and traditional foods from non-EU regions that were scarcely consumed within the EU prior to 15 May 1997.

The aim of this Special Issue of Nutriends, entitled "Novel Foods: Exploring Nutritional Constituents and Biological Effects", is to bring together original research papers or reviews on novel foods, with special attention given to nutritional constituents and biological effects. This includes studies on nutritional information, bioactive compounds and antinutritional factors, proposed uses and use levels, allergenicity, anticipated intake, and ADME. We are especially eager to publish research on several novel foods, their health benefits, and their utilization in terms of antioxidant activity, cardiovascular disease prevention, the modulation of immune response, and the prevention of age-related cognitive decline, research on these biological effects is particularly welcome.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Nutrients is an international peer-reviewed open access semimonthly journal published by MDPI.
