Special Issue Information
Dear Colleagues,
A large volume of food by-products is generated worldwide across food processing industries, restaurants and households, and diverse agricultural sectors. Although often considered low-value, these by-products constitute a rich and underutilized source of bioactive compounds, nutrients, and functional materials with significant potential for sustainable exploitation. The application of innovative processing technologies and circular economy concepts enables their conversion into high-value products for use in the food, pharmaceutical, cosmetic, and biotechnological sectors.
This Special Issue, High-Value Utilization of Food and Agricultural By-Products, brings together recent advances in the valorization of such residues, emphasizing sustainable approaches, resource efficiency, and the development of novel functional ingredients. It covers studies on the extraction and characterization of bioactive compounds (e.g., carbohydrates, phenolic compounds, proteins, enzymes and dietary fibers), as well as their incorporation into value-added applications across multiple industries.
A central focus of this Issue is the shift from waste management to resource recovery, demonstrating how food and agro-industrial by-products can be effectively transformed into high-value products. The Special Issue will include original research articles and review papers addressing the extraction and production of new bioactive compounds, valorization processes, characterization of derived products, safety and regulatory aspects, and industrial applications.
We trust that this Issue will inspire new interdisciplinary studies and contribute to a broader appreciation of food and agricultural by-products as valuable resources.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
