Dear Colleagues,
Organic residues generated from agriculture, aquaculture, and food-processing industries are produced in substantial quantities worldwide and, if not properly treated, can cause significant environmental burdens, including pollution, greenhouse gas emissions, and the loss of valuable biomass resources. These residues, still rich in nutrients, represent an abundant yet underutilized source for sustainable bioproduction and the development of high-value biotechnological products. This Special Issue aims to highlight recent advances in the use of microbial biotransformation, solid-state fermentation, and submerged fermentation to convert organic residues into valuable secondary metabolites and functional biomolecules. We encourage submissions that focus on eco-friendly processing, optimization of bioconversion pathways, metabolic engineering strategies, and the discovery of novel metabolites with potential applications in agriculture, pharmaceuticals, cosmetics, and environmental remediation. In addition to studies centered on production and purification, research addressing bioactivity screening and mechanistic evaluation is highly welcomed. This includes experimental approaches, as well as computational and in silico tools, such as molecular docking, molecular dynamics simulations, DFT, ADMET prediction, and structure–activity relationship analyses. These methodologies together contribute to elucidating mechanisms of action, predicting biological targets, and accelerating the identification of promising bioactive compounds. Particular emphasis will be placed on studies advancing circular bioeconomy concepts and the efficient valorization of aquaculture and agro-industrial by-products.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
