Special Issue Information

Dear Colleagues,

The relationship between molecular structure and functional properties is widely recognized as a central concept in science. Also of great interest are molecular characteristics, mainly of polymers (polysaccharides, proteins, polyphenols, etc.). Thanks to their technological features, some molecules are extensively used in food technology and agri-food. Functional properties and certain bioactive roles, for example as antioxidants, stabilizers, emulsifiers, film formers, thickeners, flocculants, and surface-finishing agents, among others, are in high demand in various sectors. These properties can be responsible for a large number of technological behaviors (extensibility, viscosity, elasticity, texture, etc.).

This Special Issue of Molecules covers recent studies addressing the importance of molecular structure data and functional properties in establishing technological properties.

They may include analytical approaches for characterization. Extraction and purification methods and the biosynthesis of these molecules are also of interest. Reviews in the field will also be welcome.

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
