Dear Colleagues,
For this Special Issue, we are seeking a wide range of review articles and original research papers related to metabolome analyses in the field of food science.
Food science research utilizing metabolome analyses is advancing daily and covers a wide range of areas, including the development of quality assessment methods, the elucidation of quality assessment markers, and research into food component functionalities, identification of origin, and brand value enhancement. This Special Issue focuses on (1) analytical technologies and methods, (2) various food groups, and (3) a wide variety of compounds, but is not limited to these topics and will broadly cover food science-related metabolome analyses.
Analytical technologies and methods using chromatography/mass spectrometry are common, and structural methods including NMR are frequently employed. Furthermore, the range of studied food products is diverse, including fresh and processed agricultural, livestock, and marine product-based foods. Microorganisms involved in fermented food production are also common study subjects, along with highly varied groups of components, such as primary metabolites. Many of these studied components are related to taste, but aromatic compounds are also potentially important. Other areas of focus include lipidomics-based analyses of fatty acids and functional components among secondary metabolites.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Metabolites is an international peer-reviewed open access monthly journal published by MDPI.
Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2700 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
