Dear Colleagues,
Edible mushrooms are gaining increasing global recognition for their exceptional nutritional value, rich bioactive compounds, and significant economic importance. As global demand for high-quality and diverse mushroom products rises, there is a pressing need to innovate cultivation practices and explore fungal proteins and bioactive substances. Its theoretical basis lies in the fields of edible mushroom nutrition physiology, environmental physiology, and metabolic physiology. The development and application of modern omics technologies have facilitated the rapid resolution of these issues.
This Special Issue, "Advances in Edible Mushroom Cultivation and Quality," aims to present the latest research, technological innovations, and applied studies in the field of mushroom science. We seek to cover the full production chain of edible mushroom production, from evaluation, utilization, and conservation of germplasm resources of rare mushrooms to fresh-keeping technology. Emphasis is also placed on genomic, transcriptomic, proteomic, and metabolomic studies that reveal the molecular mechanisms responsible for growth, development, and quality of edible mushrooms. We also welcome research focused on the extraction, characterization, and functional validation of mushroom proteins and other bioactive components, as well as the development of advanced processing technologies to improve the added value of mushroom products.
We welcome high-quality submissions, including original research articles and comprehensive reviews, from both basic and applied studies. Full experimental and methodological details must be provided. Topics of interest include, but are not limited to:
- Evaluation, utilization, and conservation of germplasm resources of rare mushrooms;
- Physiological and environmental factors affecting yield and quality;
- Molecular mechanisms of fruiting body development;
- Pest and disease management in mushroom cultivation;
- Cultivation and breeding for high-protein mushrooms;
- Technology for high-yield production of active substances;
- Postharvest handling and product quality assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process.
