Dear Colleagues,
Vegetable quality determines commodity value, consumer preference and nutritional safety, and is jointly shaped by plant ecophysiological processes and cultivation management practices. Against the global pursuit of high-quality and sustainable agricultural development, conventional yield-oriented cultivation fails to achieve targeted quality improvement based on crop physiological characteristics. This Special Issue focuses on the linkage between vegetable ecophysiological responses and quality formation, as well as precision regulation strategies. It aims to uncover quality formation mechanisms, connect physiological theories with field cultivation technologies, and offer theoretical and technical support for efficient, high-quality, and sustainable vegetable production.
This Special Issue explores the core relationships between vegetable ecophysiological behaviors and quality formation, alongside advanced precision management practices for quality optimization. It accepts original research and review articles focusing on how key physiological processes including photosynthesis, nutrient metabolism, stress adaptation and phytohormone modulation regulate vegetable nutrition, flavor and storability. It also covers innovative agronomic techniques, such as water–fertilizer precision regulation, light–temperature optimization and stress-resilient cultivation, to advance theoretical progress and practical innovation in high-quality vegetable production.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Horticulturae is an international peer-reviewed open access monthly journal published by MDPI.
