Postharvest physiology and fruit quality are critical determinants of nutritional value, sensory attributes, and marketability. Understanding the complex physiological, biochemical, and molecular changes occurring after harvest is essential for developing innovative strategies to extend shelf life and preserve quality. This Special Issue aims to showcase cutting-edge research on ripening and senescence mechanisms, stress responses, and advanced technologies for storage and quality assessment across diverse fruit species. Contributions are encouraged that integrate fundamental physiology with practical applications, including the influence of environmental factors and emerging solutions such as edible coatings, controlled atmospheres, and digital monitoring tools. By gathering these insights, this collection seeks to advance scientific knowledge and provide sustainable approaches for the horticultural industry and global supply chains, ensuring high-quality fruits for consumers worldwide.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Horticulturae is an international peer-reviewed open access monthly journal published by MDPI.
