Emulsion delivery systems have gained significant attention in the food industry due to their ability to encapsulate bioactive compounds and improve nutrient delivery. These systems allow for the enhanced stability, bioavailability, and controlled release of active ingredients, making them ideal for nutritional fortification. Emulsions serve as effective carriers for nutrients, vitamins, and functional ingredients, ensuring that these components are protected from degradation during processing and storage. Additionally, they offer versatility in terms of formulation, enabling the safe incorporation of active compounds without compromising food safety. Focusing on the safety and efficacy of these delivery systems is crucial to ensure consumer health while achieving the desired nutritional benefits.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
