Dear Colleagues,
Currently, the advantage of the byproducts of the vegetable food industry is being able to retrieve additives for food and cosmetics from them. Moreover, it is an alternative source of bioactive compounds with antioxidant, antimicrobial, antiproliferative, anticancerogenic and cardioprotective properties. Among them can be polyphenols, terpenes (carotenoids), alkaloids, saponins, polyunsaturated fatty acids, sulfurous substances (thiols), peptides, etc. All of this meets the objective of sustainable and environmentally friendly circular use that allows for substantial savings and healthy losses. Therefore, our Special Issue will focus on cutting-edge fields for optimal green extraction: pulsed electric fields, high-voltage electrical discharges, pulsed ohmic heating, high hydrostatic pressure, thermal ultrasounds, microwave-assisted extractions, sub- and super-critical fluid extractions, and pressurized liquid. Moreover, the characterization of extracts to detect and quantify their bioactive substances like natural additives with an added value, that is, throughout optimal, economical, rapid precision analysis: HPLC, U-PLC, ion mass spectrometry, Fourier-transform infrared spectroscopy, gas chromatography, nuclear magnetic resonance, Raman spectroscopy, and ion mobility spectroscopy (IMS), will be examined.

Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
