(1) Background: The double burden of malnutrition (DBM) occurs at the population level when undernutrition and overweight or obesity coexist. In this study, DBM was operationalized as BMI-defined underweight and excess body weight (EBW) within the sampled student population. (2) Objective: To identify dietary patterns and examine their associations with sociodemographic and health behavior factors among underweight and EBW nursing students in Southern Thailand. (3) Methods: This secondary analysis used cross-sectional data collected from 372 undergraduate nursing students in 2023. Dietary intake was assessed using a food frequency questionnaire; principal component analysis identified dietary patterns, and separate multivariable linear regression models examined associations with pattern scores in the underweight and EBW subgroups. (4) Results: Underweight and EBW were present in 22.0% and 26.3% of students, respectively. The snack pattern comprised milk and milk products, sweetened beverages, bakery items, desserts, pickled fruits, and snacks; the Thai dish pattern comprised rice, spicy curry, meat, entree-over-rice dishes, and vegetables; and the high-energy pattern comprised sticky rice and fried meat. Among underweight students, Thai dish scores were positively associated with year of study (p < 0.001), breakfast intake (p < 0.001), and supper intake (p = 0.008), and negatively associated with alcohol drinking (p = 0.014) and sedentary behavior (p = 0.018). Among students with EBW, snack pattern scores were higher among female students (p = 0.032) and students reporting exercise (p = 0.001) or sedentary behavior (p < 0.001), whereas Thai dish scores were associated with income (p = 0.006), dinner intake (p = 0.005), sex (p = 0.001), and supper intake (p = 0.034). Higher GPA (grade point average) was associated with lower high-energy-pattern scores in both subgroups (underweight, p = 0.018; EBW, p = 0.007). (5) Conclusion: BMI-defined underweight and EBW coexisted in this population. Dietary pattern correlates differed by nutritional status subgroup, underscoring the need for tailored nutrition and lifestyle interventions, as well as healthier university food environments. While Zanthoxylum bungeanum Maxim. (Z. bungeanum) pericarps are a globally prized spice, their leaves are frequently discarded as agricultural waste. This study systematically characterizes the aromatic potential of leaf by-products compared with traditional pericarps under diverse extraction strategies, utilizing an integrated flavoromics and sensomics approach. Qualitative GC-MS-O analysis revealed that leaf-derived fractions possess superior aromatic diversity: leaf essential oil and volatile solvent extract yielded 71 and 68 odorants, respectively, significantly surpassing pericarp counterparts (65 and 43 compounds). Concurrently, HS-GC-IMS profiling confirmed that targeted extraction allows leaf-derived flavors to replicate and exceed traditional spice complexity. Specifically, the leaf solvent extract achieved aromatic parity with pericarps by effectively mirroring the core spicy–citrus profile through cuminaldehyde and limonene retention. Conversely, distilled leaf essential oil unlocked a distinctive herbal–woody sensory innovation, driven by eucalyptol and a broader variety of aldehydes and ketones. Sensomics validation, incorporating aroma recombination, omission experiments, and partial least-squares regression modeling, conclusively identified β-myrcene, limonene, caryophyllene, and humulene as core molecular markers dictating these perceptual shifts. Ultimately, this research provides a robust theoretical foundation for upcycling Z. bungeanum leaves into valuable flavoring resources, facilitating circular bio-economy practices by delivering functional equivalence and entirely novel sensory experiences for the global food industry. 4-Ethylguaiacol (4-EG) is a volatile phenolic compound associated with smoky, woody, and spicy aroma notes in fermented foods and beverages, including Baijiu. In this study, a 4-EG-producing strain, designated JN11, was obtained by screening isolates from Baijiu pit mud and identified as Bacillus coagulans based on morphological, physiological, biochemical, and 16S rRNA analyses. In sorghum juice medium, strain JN11 produced 271.6 ± 2.7 μg/L 4-EG. To investigate the upstream decarboxylation step involved in volatile phenol formation, the phenolic acid decarboxylase gene, BcPAD, was cloned and heterologously expressed in Escherichia coli BL21(DE3). The BcPAD gene comprises 504 bp and encodes a 167-amino-acid protein. Recombinant BcPAD exhibited maximal activity at pH 6.0 and 50 °C and retained more than 60% residual activity after 5 h at 30–40 °C. Fe3+ increased enzyme activity to 115.36% of the control, whereas Zn2+ markedly inhibited enzyme activity and SDS completely inactivated the enzyme. BcPAD showed the highest activity toward p-coumaric acid, with a specific activity of 460.6 ± 18.3 U/mg and a catalytic efficiency (Kcat/Km) of 12.1 ± 1.4 mM−1·s−1, while lower activities were observed toward caffeic acid and ferulic acid, and no activity was detected toward sinapic acid. Homology modeling and molecular docking suggested that the superior catalytic performance toward p-coumaric acid may be related to favorable hydrogen-bonding interactions and substrate orientation within the active site. Although 4-EG production was observed during fermentation by strain JN11, BcPAD was biochemically characterized as a phenolic acid decarboxylase likely responsible for the upstream formation of vinyl derivatives in the proposed pathway. These findings improve our understanding of phenolic acid decarboxylases from B. coagulans and provide a basis for further investigation of the roles of strain JN11 and BcPAD in volatile phenol formation during Baijiu production. Background: Gastroesophageal reflux disease (GERD) is a common digestive disorder with a substantial impact on quality of life. Emerging evidence suggests that dietary patterns and lifestyle behaviors are associated with the occurrence and severity of GERD symptoms; however, integrated data from Romania remain limited. Objective: The aim of this study was to evaluate associations between pro- and anti-inflammatory dietary patterns, lifestyle-related behavioral factors, and the presence and severity of gastroesophageal reflux symptoms in an adult Romanian population. Methods: A national cross-sectional observational study was conducted using a self-administered online questionnaire. All participants included in the study reported a prior diagnosis of gastroesophageal reflux disease (GERD), and participant classification was based exclusively on current symptomatology assessed using the GERD-Q score. Therefore, comparisons were not performed between patients and a healthy population, but rather between individuals at different stages of clinical expression of the same condition, characterized by a fluctuating course. The instrument included standardized GERD-Q items for symptom assessment, together with questions regarding dietary intake and lifestyle behaviors. Pro-inflammatory (PRO), anti-inflammatory (ANTI), and combined (PRO–ANTI) dietary scores were established. Statistical analyses included comparative and correlational tests as well as multivariable logistic regression models. Results: Among the 340 participants included in the study, 72.4% reported symptoms consistent with GERD according to the GERD-Q score. A higher pro-inflammatory dietary score was significantly associated with GERD, with participants in the highest PRO category showing more than a fourfold higher likelihood of GERD in multivariable analyses. Consumption of spicy foods and carbonated beverages was associated with an increased risk of GERD in univariate analyses; however, these associations did not remain significant in multivariable models. Late meals (defined as consumption of one’s last meal of the day less than two hours before bedtime) were independently associated with GERD. Combined analyses indicated a higher risk among participants who reported eating late meals, particularly when combined with large evening meals. Most foods considered protective, along with classical lifestyle factors (smoking, alcohol consumption, and sleeping position), were not independently associated with GERD. Conclusions: These findings suggest that overall dietary patterns with pro-inflammatory potential and meal timing in relation to the sleep–wake cycle may be more consistently associated with GERD symptoms in this sample than isolated food items or traditional lifestyle risk factors. Nutritional and behavioral interventions focused on improving overall dietary patterns and avoiding late meals may represent potential strategies for GERD management. Full article

Ready-to-eat (RTE) fresh salads are widely consumed for their convenience and nutritional value, but they could represent a relevant food safety concern, as they do not undergo a lethal heat treatment before consumption, and furthermore, they may support the growth of Listeria monocytogenes during refrigerated storage. In this study, the growth potential of L. monocytogenes was evaluated by standardised challenge tests in five commercially available RTE salads: crispy lettuce, baby lettuce, a baby lettuce–spicy mustard mix, and two mâche products from different producers. Three different batches for each product were inoculated with a three-strain cocktail of L. monocytogenes at a target level of approximately 2–3 log CFU/g and stored under conditions simulating reasonably foreseeable refrigerated storage (7 °C for approximately two-thirds of their shelf life, followed by 10 °C for the remaining one-third), in accordance with ISO 20976-1 and EURL L. monocytogenes guidelines. The growth potential (Δ) was calculated as the difference between the highest mean L. monocytogenes concentration observed during storage and the mean of the initial concentration at time zero, both in three replicate samples; Δmax was defined as the highest Δ value among the tested batches. Crispy lettuce, baby lettuce, and the mixed salad supported the growth of L. monocytogenes, with Δmax values of 2.33, 2.60, and 3.65 log CFU/g, respectively. In contrast, both mâche products showed Δmax values ≤ 0.5 log CFU/g, indicating an inability to support pathogen growth under the tested conditions. These results demonstrate that the growth potential of L. monocytogenes in RTE salads is strongly product-specific and likely influenced by intrinsic characteristics and background microbiota, as well as by storage temperature. The findings underline the importance of strict temperature control and product-specific risk assessment to ensure compliance with microbiological criteria throughout shelf life and to mitigate the risk of listeriosis associated with RTE salads. This narrative historical review assesses the relationship between personality traits and the preference for spicy foods. While genetic, cultural, and personality factors have all been shown to influence taste preferences, the evidence that has been published to date suggests that personality plays a greater role in the liking and consumption of spicy food than for those basic tastes linked to the essential elements of a healthy diet. Archaeological and historical data illustrate the global dissemination and cultural integration of Capsicum into the human diet. Meanwhile, physiological and psychophysical research highlight that the pungent quality of capsaicin, together with the gustatory and olfactory cues associated with the flavour of chilli, affects hedonic evaluation, with repeated exposure often increasing acceptance through a process of desensitisation. Developmental factors, such as prenatal taste/flavour transmission and benign risk learning during childhood, underpin adult preferences. Cross-cultural studies reveal that the tolerance for pungency varies by country/culture and is also markedly shaped by personality traits. Recent social media trends have also increased some people’s exposure to very spicy foods, linked to their sensation-seeking tendencies. As such, those theories that focus solely on biological sensitivity and cultural exposure likely fail to capture personality-driven factors like sensation seeking and reward sensitivity that drive the liking for spicy foods. Allyl isothiocyanate (AITC) has been shown to enhance perceived saltiness in food products; however, it is also associated with a pungent and spicy flavour. The objective of this study was to assess the encapsulation of AITC with maltodextrin (MD) and gum Arabic (GA) using spray-drying (SD) and freeze-drying (FD) techniques, with and without the addition of a surfactant. Furthermore, the different encapsulated formulations were evaluated for their impact on sensory properties when added to soups. In total, twelve different treatments were investigated. The physicochemical characteristics (i.e., encapsulation efficiency, surface oil content, capsule morphology, and moisture content) and sensory properties (i.e., hedonic scales and rate-all-that-apply) of the encapsulated AITC particles were analyzed. Gas chromatography revealed low AITC retention in all FD formulations, while SD formulations with surfactants achieved up to 136.71 mg AITC/g powder. Sensory trials were conducted on eight formulations added to tomato soup (0.500 mg AITC/100 mL) (SD trial: n = 79, and FD trial: n = 93). FD resulted in relatively low AITC retention (with and without surfactants), while SD with surfactants led to higher AITC retention. None of the formulations significantly impacted the saltiness perception of the soups. FD soups significantly enhanced thickness, creaminess, and tomato flavour, increasing overall liking. This is the first study to evaluate the sensory properties and cross-modal interactions of encapsulated AITC. Further studies are needed to continue exploring the sensory properties, its release behaviour, overall stability, and shelf life of encapsulated AITC. Full article

Background: Sugars, also known as saccharides or carbohydrates, are essential organic compounds that ensure the human body functions properly. They are used as sources of energy, as structural elements and reserve materials. Excessive sugar consumption is prevalent in many countries and has negative health consequences. Methods: A total of 283 people living in Poland took part in the study. An interview and olfactory tests (dynamic olfactometry method) were conducted together with assessments of food preferences from 25 types of food products. Aim: To assess the impact of olfactory efficiency and individual characteristics, such as sex, age, body weight and tobacco addiction, on preferences for various sweet products. Another important objective of this study was to examine the patterns in preferences for different sweet foods. Result and Conclusions: Of all the types of sweet products analysed in the study, desserts and fruit were the most popular. Preferences varied depending on the type of sweet food or drink as well as on other factors. In terms of declared enjoyment, desserts, chocolate and sweets, including jellies and bread, formed a common group (Factor Three: ‘sweet products’); while sweet, carbonated drinks formed the group—Factor One (‘junk food’); and fruit, together with vegetables, salads, cheese and spicy dishes, formed the group—Factor Four. The most important factors influencing the preference for sweet foods and drinks were the severity of tobacco addiction, age and sex. There was no significant influence from olfactory efficiency or body mass index on the preference for any of the sweet products in the study. Full article

Background: Menopause is associated with metabolic, sensory, and psychosocial changes that may reshape eating behaviours and nutrition-related quality of life. This study explored how women experience nutrition and chemosensory changes during menopause and how these intersect with identity, control, and social practices. Methods: We conducted online focus groups (Microsoft Teams) with women living in Ireland (n = 40; mean age 58.3 years (±4.5 years)) between January and March 2025. Discussions followed a semi-structured guide focused on taste/smell, appetite, food choice, and coping. Sessions were recorded, transcribed, anonymised, and analysed following Braun and Clarke’s thematic analysis. Results: Four themes captured patterned meanings in the dataset: (1) Chemosensory Changes—reports of diminished taste, contrasted with heightened smell and selective intensification (sweetness), prompting compensatory behaviours (more salt/spice/strong coffee) and new aversions (e.g., cucumber, spicy dishes) alongside unexpected likes (e.g., dark chocolate); (2) Behavioural and Emotional Consequences—increased snacking, sugar/salt cravings, and perceived loss of satiety co-occurred with weight gain and altered body shape, undermining food pleasure and self-confidence; (3) Interacting Influences—affecting vasomotor symptoms, sleep disturbance, joint pain, and “brain fog” compounded dietary disruptions and social withdrawal (e.g., embarrassment about appetite, reduced desire to dine out); (4) Strategies for Wellbeing—women described medical approaches (HRT, prescribed medications) alongside food modifications and the importance of diagnosis, information, and peer/professional support. Conclusions: Menopause reshapes sensory perception and eating behaviour in complex, individualised ways that extend beyond biology to identity and social life. Nutrition care should integrate symptom management with person-centred strategies and improved access to evidence-based information, diagnosis, and support networks. Full article

This study investigated the differences in key volatile organic compounds (VOCs) and flavor characteristics between essential oils (CEOs) from cinnamon bark and leaf. The volatile compounds of essential oils extracted from Cinnamomum cassia (Xijiang) bark (CEOP) and leaf (CEOY) by hydrodistillation were identified using GC-MS. The results showed that the extraction rates of CEOP and CEOY were 1.56% ± 0.02 and 0.83% ± 0.01 (n = 3), respectively. CEOP and CEOY consisted of 45 and 50 compounds, respectively. Odor activity value (OAV) analysis indicated that cinnamaldehyde (OAV = 935), α-caryophyllene (OAV = 77), and borneol (OAV = 4) played key roles in shaping the aroma of CEOP. Meanwhile, cinnamaldehyde (OAV = 849), nerolidol (OAV = 107), and α-caryophyllene (OAV = 58) were the major contributors to the flavor of CEOY. Electronic nose (E-nose) analysis revealed that sensors W5S and W1W were important for detecting aromatic compounds. Sensory evaluation showed that CEOs differed significantly in spicy, floral, and grassy aromas. These differences may be related to the concentrations of compounds such as cinnamaldehyde, α-caryophyllene, and nerolidol, as well as their interactions with olfactory receptors such as OR2W1 and OR1D2. Cinnamaldehyde activates TRPA1 and TRPV1 to elicit the perception of spiciness. Thus, CEOP may be suitable for baked goods, and CEOY may be suitable for ice cream and beverages. In conclusion, this study provides a theoretical foundation for the precise application of CEOs as condiments in food. Full article

Yuanjiang Miscanthus lutarioriparius, which is rich in various bioactive components, exhibits significant potential in the development of functional foods. However, research on its application in dairy products remains relatively limited. This study fermented yogurt using different concentrations of Yuanjiang Miscanthus lutarioriparius water extract (0%, 0.1%, 0.2%, and 0.4%) as a functional additive, investigating its effects on the rheological properties, oxidative capacity, sensory quality, and volatile components of yogurt during storage. The results showed that during storage, the rheological properties (such as moisture content, apparent viscosity, storage modulus, etc.), the viable counts of Streptococcus thermophilus and Lactobacillus bulgaricus, and the DPPH/ABTS/FRAP radical scavenging rates of asparagus yogurt were significantly superior to those of the control group (p < 0.05), indicating that the lactic yogurt exhibited better texture, stability, and overall sensory acceptance. The 0.2% addition group exhibited the best inhibitory effect on lactic acid bacteria after acidification and the most stable acidity changes. The 0.4% addition group achieved an ABTS radical scavenging rate of 58.4% on the 7th day of storage, significantly higher than other groups (p < 0.05). The asparagus yogurt contained 64 volatile flavor compounds (20.31% alcohols and 21.88% ketones), which was higher than the control group (45 compounds), and introduced new aldehydes (tridecanal) and esters (methyl salicylate, ethyl palmitate), imparting a mild sourness and spicy flavor. Sensory evaluation results indicated that the 0.2% addition group scored the highest in texture, flavor, and taste, aligning with its rheological properties and color. This provides a theoretical basis for the development of highly stable and active functional asparagus yogurt. Full article

Wine and food tourism has increasingly embraced the principles of the circular economy and sustainability. During the bottle-fermented production of sparkling wine, yeast encapsulated in calcium alginate beads gradually loses viability. After the secondary alcoholic fermentation, these beads are usually discarded. This pilot-scale study investigates how the wasted beads can be valorised by incorporating them into vegan vinaigrettes. The vegan vinaigrettes were developed on a laboratory scale with distinct flavour profiles, all containing 3.5% (w/w) calcium alginate beads: mint (V-Air), seaweed (V-Water), spicy (V-Fire) and mushroom (V-Earth). Forty untrained panellists assessed the samples on a nine-point hedonic scale and with Just-About-Right (JAR) scale. Viscosity and colour were also measured in the final samples. Vf-Fire and Vf-Earth vinaigrettes stood out in terms of overall appreciation, particularly colour and consistency, with Vf-Earth receiving the highest average score (7.10 ± 1.58). The presence of alginate beads was well appreciated, with an average score of 6.26 ± 2.14. Across all formulations, the average pH decreased from 3.75 ± 0.01 to 3.37 ± 0.01. This pH reduction benefits food safety. These vegan vinaigrettes offer a sustainable and innovative alternative for reusing sparkling winemaking waste as a by-product, with strong potential for gastronomic appeal among wine or food tourists. Snack foods (e.g., extruded flour-based products) are widely favored by consumers because of their convenience, affordability, and time-saving attributes. However, with the growing demand for high-quality snacks, several challenges have emerged that hinder industry development, such as relatively underdeveloped industrial standards, limited raw material diversity (primarily starch and soy protein), and, consequently, insufficient nutritional value. In this study, a novel type of puffed snack was developed using Alaskan pollock surimi and wheat flour using extrusion puffing technology. The effects of varying ratios of surimi to wheat flour (0:10, 1:9, 2:8, 3:7, and 4:6, which served as SFBC, SFB1, SFB2, SFB3, and SFB4, respectively), on the physicochemical properties, apparent morphology, microstructure, thermal stability, and protein structure of spicy strips were systematically investigated, and the interaction between extruded protein and flour mixtures was analyzed. The results indicated that increasing the proportion of surimi led to decreases in hardness, elasticity, and chewiness, whereas the moisture content and water solubility index increased. The maximum expansion rate (202.2%) was observed in the SFB1 sample. Morphological and microstructural observations further revealed that a higher surimi content resulted in a denser internal structure and a reduced degree of puffing. The protein distribution was relatively uniform, with large pores. Moreover, increased surimi content increased the proportion of immobilized water and improved the thermal stability. These findings provide valuable insights into starch–protein-complex-based extrusion puffing technologies and contribute to the development of innovative surimi-based puffed food products. Botulism is a severe muscle paralysis disease mediated by the botulinum toxin. Here, we reported a foodborne botulism case caused by Clostridium botulinum subtype A5(b3) from self-packaged vacuum spicy rabbit heads. Treatment for this case was delayed due to misdiagnosis and insufficient diagnostic capacity in three hospitals, which resulted in progressive clinical deterioration, and eventually, the patient was transferred to Shandong Public Health Clinical Center for specialized therapy. The case was suspected as foodborne botulism by the Qilu Medical-Prevention Innovation Integration pathway and multi-disciplinary consultation. An epidemiological investigation and laboratory confirmation revealed that the botulinum neurotoxin originated from vacuum-packaged spicy rabbit heads distributed via interprovincial cold chain logistics. After treatment with botulism antiserum, the patient’s condition significantly improved, and they were discharged after recovery. We revealed that this foodborne botulism outbreak was caused by the Clostridium botulinum A5(b3) subtype from food by whole-genome sequencing and SNP typing. All the strains belonged to Group I carrying the botulinum neurotoxin gene classified as the ha cluster. Toxin A was confirmed by MBA and other methods, while toxin B was non-functional due to the truncated bont/B gene. Other virulence genes and antibiotic resistance genes were also detected. Our findings indicate that self-packaged vacuum meat products represent an emerging risk factor for botulism transmission when stored improperly. Importantly, the recurrent misdiagnosis in this case underscored the urgent need to enhance the training of healthcare professionals in medical institutions to improve the diagnostic accuracy and clinical management of botulism. The primary active ingredient in capsicum is capsaicin. However, capsaicin bioavailability is low due to its restricted water solubility, and its potent spicy flavor will further restrict its use in food. This paper provides a complete overview of capsaicin. The biological activity of capsaicin and its impacts on metabolism in vivo are described. To increase capsaicin stability and bioavailability, several capsaicin-based delivery systems, including liposomes, double emulsions, nanoparticle mesosystems, and multiple systems made of distinct hydrocolloids, are covered in this review. Finally, potential uses for food preservation are introduced in line with this. Numerous delivery systems introduced in this review have effectively solved the problems of poor water solubility and poor bioavailability of capsaicin. Although capsaicin has potential uses in food preservation, there is little research on its application in functional food development. More innovative capsaicin-based delivery methods should be established, and more capsaicin-based applications should be developed in the future. Full article
