Detection of soil pollution by petroleum products is necessary to remedy threats to economic and human health. Pollution by hydraulic oil often occurs through leaks from forestry machinery such as harvesters. Electronic noses equipped with gas sensor arrays are promising tools for applications of pollution detection and monitoring. A self-made, low-cost electronic nose was used for differentiation between clean and polluted samples, with two types of oils and three levels of pollution severity. An electronic nose uses the TGS series of gas sensors, manufactured by Figaro Inc. Sensor responses to changes in environmental conditions from clean air to measured odor, as well as responses to changes in sensor operation temperature, were used for analysis. Statistically significant response results allowed for the detection of pollution by biodegradable oil, while standard mineral oil was difficult to detect. It was demonstrated that the TGS 2602 gas sensor is most suitable for the studied application. LDA analysis demonstrated multidimensional data patterns allowing differentiation between sample categories and pollution severity levels. Full article

Burdock (Arctium lappa L.) is a medicinal and edible homologous plant whose roots contain many bioactive substances such as polysaccharides and phenolics. This study explored the integration of burdock powder and lactic acid bacteria fermentation to enhance the nutritional quality, sensory attributes, and flavor profiles of duck sausages. Three bacterial strains, Lacticaseibacillus casei, L. helveticus, and L. plantarum, were selected based on sensory analysis, and their effects on sausage properties were evaluated through combined fermentation trials. The results demonstrated that duck sausages fermented with L. plantarum and L. helveticus and supplemented with 3% burdock powder (PHB group) exhibited > 1.5-fold higher antioxidant activity (ABTS at 85.2 μmol trolox/g and DPPH at 92.7 μmol trolox/g, respectively; p < 0.05) and 15% increase in total phenolic content (8.24 mg gallic acid/g) compared to non-fermented counterparts. The PHB formulation also enhanced color stability (lightness, redness, yellowness), textural characteristics (hardness, springiness, cohesiveness), and sensory acceptability. Volatile compound analysis revealed a reduction in off-odor aldehydes (hexanal, (E)-2-octenal, (E)-2-decenal, and (E,E)-2,4-decadienal) and increased production of desirable aromatic compounds like tetramethyl-pyrazine. These findings highlight the potential of combining lactic acid bacteria fermentation with burdock powder to develop functional duck sausages with improved nutritional and sensory properties. Precise odor source localization in turbulent and sparse environments plays a vital role in enabling robotic systems for hazardous chemical monitoring and effective disaster response. To address this, we propose Cooperative Gravitational-Rényi Infotaxis (CGRInfotaxis), a distributed decision-optimization framework that combines multi-agent collaboration with hybrid cognitive strategy to improve search efficiency and robustness. The method integrates a gravitational potential field for rapid source convergence and Rényi divergence-based probabilistic exploration to handle sparse detections, dynamically balanced via a regulation factor. Particle filtering optimizes posterior probability estimation to autonomously refine search areas while preserving computational efficiency, alongside a distributed interactive-optimization mechanism for real-time decision updates through agent cooperation. The algorithm’s performance is evaluated in scenarios with fixed and randomized odor source locations, as well as with varying numbers of agents. Results demonstrate that CGRInfotaxis achieves a near-100% success rate with high consistency across diverse conditions, outperforming existing methods in stability and adaptability. Increasing the number of agents further enhances search efficiency without compromising reliability. These findings suggest that CGRInfotaxis significantly advances multi-agent odor source localization in turbulent, sparse environments, offering practical utility for real-world applications. Cutibacterium acnes is linked to the prevalent inflammatory skin disorder known as Acne Vulgaris (AV). Some topical agents exhibit unfavorable side effects like dryness and skin inflammation, and antimicrobial resistance (AMR) poses an increasing risk to effective AV management. This study develops and characterizes stable topical essential oil (EO)-loaded microemulgels with in vitro validated antimicrobial activities against C. acnes ATCC 6919, providing a solid scientific basis for their effectiveness. These microemulgels, with their potential to serve as an alternative to AMR-prone synthetic agents, could revolutionize the field of acne treatment. The MICs of the EOs (citronella, tea tree, and lemongrass) against C. acnes were determined. EO-loaded microemulgels were developed using a blend of microemulsion and carbopol/hyaluronic acid gel in a ratio of 1:1 and characterized, and their stability was observed over three months. The MICs of citronella, tea tree, and lemongrass EOs were 0.08, 0.16, and 0.62% v/v, respectively. The microemulgels were whitish and smooth, with characteristic EO odors. They demonstrated pH values ranging between 4.81 ± 0.20 and 5.00 ± 0.03, good homogeneity, a spreadability of 9.79 ± 0.6 and 12.76 ± 0.8 cm2, a viscosity of 29,500 and 31,130 cP, and retained stability at 4, 25, and 40 °C. EO-loaded microemulgels were developed with the potential of C. acnes management. The formulation shows adequate potential for further pharmaceutical development towards translational adoption in acne management. Full article

Background: Phoebe zhennan and Phoebe chekiangensis are valuable evergreen trees recognized for their unique aromas and ecological significance, yet the organ-related distribution and functional implications of aroma-active volatiles remain insufficiently characterized. Methods: In this study, we applied an integrated GC-MS-based volatile metabolomics approach combined with a relative odor activity value (rOAV) analysis to comprehensively profile and compare the volatile metabolite landscape in the seeds and leaves of both species. Results: In total, 1666 volatile compounds were putatively identified, of which 540 were inferred as key aroma-active contributors based on the rOAV analysis. A multivariate statistical analysis revealed clear tissue-related separation: the seeds were enriched in sweet, floral, and fruity volatiles, whereas the leaves contained higher levels of green leaf volatiles and terpenoids associated with ecological defense. KEGG pathway enrichment indicated that terpenoid backbone and phenylpropanoid biosynthesis pathways played major roles in shaping these divergent profiles. A Venn diagram analysis further uncovered core and unique volatiles underlying species and tissue specificity. Conclusions: These insights provide an integrated reference for understanding tissue-divergent volatile profiles in Phoebe species and offer a basis for fragrance-oriented selection, ecological trait evaluation, and the sustainable utilization of organ-related metabolic characteristics in breeding and conservation programs. Background: Congenital anosmia (CA) is a rare condition characterized by a lifelong inability to perceive odors, which significantly affects daily life and may be linked to broader neurodevelopmental alterations. This study aimed to investigate structural brain differences in patients with CA using MRI, focusing on gray matter (GM) and white matter (WM) changes and their implications for neurodevelopment. Methods: This retrospective study included 28 patients with CA and 28 age- and gender-matched healthy controls. Patients with CA were diagnosed at a single medical center between 1 January 2001 and 30 August 2024. Controls were randomly selected from an imaging database and had no history of olfactory dysfunction. Brain Magnetic Resonance Imaging (MRI)was analyzed using volumetric analysis in SPM12.GM and WM volumes were quantified across 11 anatomical brain regions based on theWFU_PickAtlas toolbox, including frontal, temporal, parietal, occipital, limbic, sub-lobar, cerebellum (anterior/posterior), midbrain, the pons, and the frontal–temporal junction. Left–right hemispheric comparisons were also conducted. Results: Patients with CA exhibited significantly smaller GM volumes compared to healthy controls (560.6 ± 114.7 cc vs. 693.7 ± 96.3 cc, p < 0.001) but larger WM volumes (554.2 ± 75.4 cc vs. 491.1 ± 79.7 cc, p = 0.015). Regionally, GM reductions were observed in the frontal (131.9 ± 33.7 cc vs. 173.7 ± 27.0 cc, p < 0.001), temporal (81.1 ± 18.4 cc vs. 96.5 ± 14.1 cc, p = 0.001), parietal (52.4 ± 15.2 cc vs. 77.2 ± 12.4 cc, p < 0.001), sub-lobar (57.8 ± 9.7 cc vs. 68.2 ± 10.2 cc, p = 0.001), occipital (39.1 ± 13.0 cc vs. 57.8 ± 8.9 cc, p < 0.001), and midbrain (2.0 ± 0.5 cc vs. 2.3 ± 0.4 cc, p = 0.006) regions. Meanwhile, WM increases were notable in the frontal(152.0 ± 19.9 cc vs. 139.2 ± 24.0 cc, p = 0.027), temporal (71.5 ± 11.5 cc vs. 60.8 ± 9.5 cc, p = 0.001), parietal (75.8 ± 12.4 cc vs. 61.9 ± 11.5 cc, p < 0.001), and occipital (58.7 ± 10.3 cc vs. 41.9 ± 7.9 cc, p < 0.001) lobes. A separate analysis of the left and right hemispheres revealed similar patterns of reduced GM and increased WM volumes in patients with CA across both sides. An exception was noted in the right cerebellum-posterior, where patients with CA showed significantly greater WM volume (5.625 ± 1.667 cc vs. 4.666 ± 1.583 cc, p = 0.026). Conclusions: This study demonstrates widespread structural brain differences in individuals with CA, including reduced GM and increased WM volumes across multiple cortical and sub-lobar regions. These findings suggest that congenital olfactory deprivation may impact brain maturation beyond primary olfactory pathways, potentially reflecting altered synaptic pruning and increased myelination during early neurodevelopment. The involvement of the cerebellum further implies potential adaptations beyond motor functions. These structural differences may serve as potential neuroimaging markers for monitoring CA-associated cognitive or emotional comorbidities. Full article

The aim was to explore using machine learning (including cluster mapping and k-means methods) to classify types of mead based on sensory analysis and aromatic compounds. Machine learning is a modern tool that helps with detailed analysis, especially because verifying aromatic compounds is challenging. In the first stage, a cluster map analysis was conducted, allowing for the exploratory identification of the most characteristic features of mead. Based on this, k-means clustering was performed to evaluate how well the identified sensory features align with logically consistent groups of observations. In the next stage, experiments were carried out to classify the type of mead using algorithms such as Random Forest (RF), adaptive boosting (AdaBoost), Bootstrap aggregation (Bagging), K-Nearest Neighbors (KNN), and Decision Tree (DT). The analysis revealed that the RF and KNN algorithms were the most effective in classifying mead based on sensory characteristics, achieving the highest accuracy. In contrast, the AdaBoost algorithm consistently produced the lowest accuracy results. However, the Decision Tree algorithm achieved the highest accuracy value (0.909), demonstrating its potential for precise classification based on aroma characteristics. The error matrix analysis also indicated that acacia mead was easier for the algorithms to identify than tilia or buckwheat mead. The results show the potential of combining an exploratory approach (cluster map with the k-means method) with machine learning. It is also important to focus on selecting and optimizing classification models used in practice because, as the results so far indicate, choosing the right algorithm greatly affects the success of mead identification. Smokeless powders are a commonly used low explosive within the ammunition industry. Their ease of purchase has allowed criminals to use these products to build improvised explosive devices. Canines have become a vital tool in locating such improvised devices. With differing fabrication processes, one of the most difficult challenges for canine handlers is the optimal selection of training aids to choose as odor targets to allow for broad generalization. Several studies have been underway to understand the chemical odor characterization of smokeless powders, which can help provide canine teams with essential information to understand odor signatures from powder varieties. In this study, a SPME method optimization was conducted using unburned smokeless powders to provide a chemical odor profile assessment. Concurrently, statistical analysis using PCA and Spearman’s rank correlations was performed to explore whether odor volatile composition depicted associations between and within powder brands. The results showed that a longer extraction time (24 h) was optimal across all powders, as this yielded higher compound abundance and number of extracted odor volatiles. The optimal SPME fiber varied per powder, depicting the complexity of powder composition. There were 66 highly frequent compounds among the 18 powders, including 2-ethyl-1-hexanol, diphenylamine (DPA), and dibutyl phthalate. Principal component analysis (PCA) showed that while powders may be of the same type (single/double base), they can still portray clustering differences across and within brands. The Spearman’s rank correlation within powder type suggested that the double-base powders had a slightly higher similarity index when compared with the single-base powder types. Understanding the volatile odor profiles of various smokeless powders can enhance canine training by informing the selection of effective training aids and supporting odor generalization. The parasitoid wasp Dolichogenidea gelechiidivoris is a key koinobiont solitary endoparasitoid of the invasive agricultural pest Tuta absoluta. This study investigates both the morphological and molecular foundations of sex-specific olfactory differentiation in this species. Morphological analysis revealed that males possess significantly longer antennae (2880.8 ± 20.36 μm) than females (2137.23 ± 43.47 μm), demonstrating pronounced sexual dimorphism. Scanning electron microscopy identified similar sensilla types on both sexes, but differences existed in the length and diameter of specific sensilla. Transcriptomic analysis of adult antennae uncovered molecular differentiation, identifying 11 odorant-binding proteins (OBPs) and 20 odorant receptors (ORs), with 27 chemosensory genes upregulated in females and 4 enriched in males. Integrating morphological and molecular evidence demonstrates complementary sexual specialization in the olfactory apparatus of D. gelechiidivoris. Linking these findings to the potential functions of different sensilla types, as discussed in the context of prior research, provides crucial insights into the sex-specific use of volatile cues. These findings provide critical insights into the use of volatile signals in this highly relevant species for biological control targeting T. absoluta. Full article

Flavor, as one of the primary factors that attracts consumers, has always been a crucial indicator for evaluating the quality of food. From processing to final consumption, the conditions that affect consumers’ perception of the aroma of aquatic products can be divided into three stages: aroma formation, release, and signal transmission. Currently, there are few reviews on the formation, release, and perception of aroma in aquatic products, which has affected the product development of aquatic products. This review summarizes aroma formation pathways, the effects of processing methods, characteristic volatile compounds, various identification techniques, aroma-release influencing factors, and the aroma perception mechanisms of aquatic products. The Maillard reaction and lipid oxidation are the main pathways for the formation of aromas in aquatic products. The extraction, identification, and quantitative analysis of volatile compounds reveal the odor changes in aquatic products. The composition of aquatic products and oral processing mainly influence the release of odorants. The characteristic odorants perceived from the nasal cavity should be given more attention. Moreover, the relationship between various olfactory receptors (ORs) and the composition of multiple aromatic compounds remains to be understood. It is necessary to clarify the relationship between nasal cavity metabolism and odor perception, reveal the binding and activation mode of ORs and odor molecules, and establish an accurate aroma prediction model. The extensive diversity of volatile organic compounds, along with their minor structural variations, presents significant challenges in the development of chemosensory-based biosensors. Previously, we generated sensor cells expressing insect odorant receptors (ORs) in Sf21 cells, demonstrating their potential as cell-based odorant sensor elements. However, it remains unclear whether the selectivity of cells expressing ORs in vitro for diverse compounds aligns with the receptor’s in vivo performance, aside from the response to target compounds. To address this, we assessed the ligand responses of sensor cells expressing ORs from Drosophila melanogaster using a high-throughput calcium imaging system. Our results demonstrate that in vitro receptor responses exhibit ligand selectivity comparable to in vivo conditions across different chemical categories. Broadly tuned OR-expressing sensor cells (Or13a, Or47a, and Or98a) displayed differential affinities, whereas the narrowly tuned Or56a-expressing sensor cells selectively responded to geosmin. Moreover, cell responses varied with subtle differences in chemical structure, including carbon chain length and functional group positioning. These findings provide valuable insights into insect OR–ligand interactions in vitro, demonstrating that receptor selectivity in sensor cells closely mirrors in vivo conditions. In addition to this consistency, our results highlight the subtle ligand differentiation capabilities of sensor cells enabling fluorescence-based visualization of receptor–ligand interactions. This study assessed the host plant selection behavior of female stalk-eyed flies (SEFs) or Diopsis apicalis, where a Y-tube olfactometer was used to compare SEF attraction to the odor of leaves from four rice varieties (ITA306, WAB56-104, CG14, and RAM55). Another step of the evaluation consisted of pairing leaf odors from two rice varieties. Also, potted plants of the tested varieties were displayed in a screened cage and submitted to female SEF selection. The results indicated that the odor produced by leaves from rice varieties CG14, WAB56-104, and ITA306 significantly attracted SEFs, at rates of 81%, 70%, and 97%, respectively, while SEF females were rarely attracted by the odor of leaves from the resistant rice variety RAM55, at a rate of 35%. The results suggested that the use of a Y-tube olfactometer was similar to the use of a screened cage. The resistance exhibited by rice variety CG14 against SEFs is related to an antibiosis interaction acting as bait, while that in RAM55 is an antixenosis one. Farmers can plant the traditional CG14 variety on the edge of rice fields to draw SEFs and poison their larvae. However, RAM55 can be inserted in an intercropping system to repel SEFs from laying eggs. The authors recommend CG14 and RAM55 as candidates for breeding to create resistant lines against SEF. This study aimed to microencapsulate Limosilactobacillus reuteri DSM 17938 to enrich soy yogurt flavored with peach jam. The effect of three concentrations of alginate and coating chitosan were evaluated in terms of probiotic viability, and the physicochemical and sensory properties of soy yogurt. Lim. reuteri was microencapsulated in alginate (1, 2, and 3%) and coated with chitosan (0, 0.4, and 0.8%). Soymilk was fermented using Lactobacillus bulgaricus and Streptococcus thermophilus. Soy yogurt was combined with probiotic beads and peach jam and stored for 27 days at 4 °C. The pH, titratable acidity, and probiotic viability of probiotic peach soy yogurt (PPSY) were determined during storage. Alginate at 3% and alginate (2%) coated with 0.4% chitosan maintained probiotic counts at 8 and 7.5 log CFU/g after 27 days. The pH of PPSY decreases rapidly and drastically during storage when probiotic-free cells are added. The PPSY containing alginate (3%) beads, alginate (2%) coated with chitosan (0.4%), and probiotic-free cells had a similar level of acceptance in color, texture, and odor (p > 0.05), while flavor and overall acceptability were significantly higher (p < 0.05) in PPSY with probiotic beads. These findings support the use of microencapsulation strategies in developing functional plant-based probiotic foods. Full article

Prejudices, particularly those related to social biases, are shaped by various cognitive and sensory mechanisms. This study investigates the interaction between olfactory perception and propensity and implicit or explicit prejudices through three experimental protocols in a metaverse condition. Experiment 1 examines the impact of five different odors on proxemic behavior when interacting with individuals from stigmatized social groups. Experiment 2 integrates electroencephalography (EEG) to analyze the neural correlates of prejudice-related responses to olfactory stimuli. Experiment 3 explores implicit biases through the Implicit Association Test (IAT) in relation to different fragrances, without employing virtual reality. The proposed protocol is expected to demonstrate a significant relationship between olfactory cues, linked to social relationships, and implicit or explicit prejudices, with variations based on individual differences. These insights will contribute to psychological, neuroscientific, and social interventions, offering new perspectives on the unconscious mechanisms of bias formation. Additionally, this study highlights the potential of virtual reality and olfactory stimuli as innovative tools for studying and addressing social biases in controlled environments. Full article

This study examined the effects of rearing, physiological, and processing conditions on the volatile profile of Atlantic salmon. Fish were reared under two different temperature and light conditions, and three harvests were conducted at different time points for male and female fish. Fish were processed to yield fillets with or without skin. Volatiles were analyzed using SIFT-MS headspace analysis. Atlantic salmon reared in cooler temperatures under a 12 h light/dark cycle exhibited significantly lower concentrations of off-odor volatiles compared to those reared in warm conditions under continuous light, suggesting that cooler temperatures with a dark cycle help maintain freshness. A temperature shift from cool to warm further increased volatile accumulation. Longer rearing time resulted in higher volatile concentrations, attributed to greater biochemical products, increased susceptibility to lipid oxidation, protein degradation, and contaminant accumulation from the rearing environment. Males had higher volatile levels at 202 days, while females surpassed males by 242 days, likely due to increased biochemical accumulation associated with reproductive development. Fillets with skin exhibited significantly higher concentration of off-odor volatiles. These findings highlight the role of all studied factors in establishing optimum conditions to minimize spoilage-related volatiles and preserve the freshness of Atlantic salmon, with rearing temperature being the most critical factor.
