The artichoke (Cynara cardunculus L. subsp. scolymus) is an endemic perennial plant of the Mediterranean area commonly consumed as food. It is known since ancient times for its beneficial properties for human health, among which its antioxidant activity due to polyphenolics stands out. In the frame of our ongoing studies aiming to highlight the biodiversity and the chemodiversity of natural resources, we investigated the phenolic and saponin content of the cultivar “Carciofo di Procida” collected at Procida, an island of the Gulf of Naples (Italy). Along with the edible part of the immature flower, we included in our analyses the stem and the external bracts, generally discarded for food consuming or industrial preparations. The LCMS quali-quantitative profiling of polyphenols (including anthocyanins) and cynarasaponins of this cultivar is reported for the first time. In addition to antioxidant properties, we observed a significant cytotoxic activity due to extracts from external bracts against human neuroblastoma SH-SY5Y cell lines with 43% of cell viability, after 24 h from the treatment (50 μg/mL), and less potent but appreciable effects also against human colorectal adenocarcinoma CaCo-2 cells. This suggests that the different metabolite composition may be responsible for the bioactivity of extracts obtained from specific parts of artichoke and foresees a possible exploitation of the discarded material as a source of beneficial compounds. Lotus (Nelumbo nucifera Gaertn.) is a quintessential medicinal and edible plant, exhibiting marked differences in therapeutic effects among its various parts. The lotus seed constitutes a key component of this plant. Notably, the entire seed and the plumule display distinct medicinal properties. To investigate the “homologous plants with different effects” phenomenon in traditional Chinese medicine, this study established a Matrix-Assisted Laser Desorption/Ionization Mass Spectrometry Imaging (MALDI-MSI) method. This study employed immature lotus seeds as the experimental material, diverging from the mature seeds conventionally used. Conductive double-sided tape was employed for sample preparation, and complete longitudinal sections of the seeds were obtained, followed by MALDI-MSI analysis to identify and visualize the spatial distribution of characteristic secondary metabolites within the entire seeds. The results unveiled the diversity of metabolites in lotus seeds and their differential distribution across tissues, with pronounced distinctions in the plumule. A total of 152 metabolites spanning 13 categories were identified in lotus seeds, with 134, 89, 51, and 98 metabolites discerned in the pericarp, seed coat, cotyledon, and plumule, respectively. Strikingly, young lotus seeds were devoid of liensinine/isoliensinine and neferine, the dominant alkaloids of mature lotus seed plumule, revealing an early-stage alkaloid profile that sharply contrasts with the well-documented abundance found in mature seeds and has rarely been reported. We further propose a biosynthetic pathway to explain the presence of the detected benzylisoquinoline and the absence of the undetected bisbenzylisoquinoline alkaloids in this study. These findings present the first comprehensive metabolic atlas of immature lotus seeds, systematically exposing the pronounced chemical divergence from their mature counterparts, and thus lays a metabolomic foundation for dissecting the spatiotemporal mechanisms underlying the nutritional and medicinal value of lotus seeds. The utilisation of edible insects for human nutrition is a long-standing practice in many parts of the globe, and is being gradually introduced into countries without an entomophagic tradition as well. These unconventional sources of protein of animal origin have arisen as a sustainable alternative to other animal protein sources, such as meat. This review intends to present the compilation of data in the scientific literature on the chemical composition and nutritional value of the bee brood of A. mellifera species and subspecies as edible foods. For this, a comprehensive search of the scientific literature was carried out using the databases ScienceDirect, Scopus, Pub-Med, BOn, and SciELO. Appropriate keywords were used for the search to reach the research works that addressed the topics of the review. The results showed that bee brood has considerable quantities of protein, fat and carbohydrates. The most abundant amino acids are leucine and lysine (these two being essential amino acids) and aspartic acid, glutamic acid, and proline (these three being non-essential amino acids). As for the fatty acids, bee broods contain approximately equal fractions of saturated and monounsaturated fatty acids, while the polyunsaturated fatty acids are negligible. The dietary minerals present in higher quantities are potassium, phosphorus, and magnesium, and the most abundant vitamins are vitamin C and niacin; choline is also present, although it is not a true vitamin. Although bee brood from A. mellifera has potential for human consumption as a nutrient-rich food, there are still many aspects that need to be further studied in the future, such as safety and hazards linked to possible regular consumption. In recent decades, the rapid expansion of the food processing industry has led to significant losses and waste, with the fruit and vegetable sector among the most affected. According to the Food and Agriculture Organization of the United Nations (FAO), losses in this category can reach up to 60%. Vegetable waste includes edible parts discarded during processing, packaging, distribution, and consumption, often comprising by-products rich in bioactive compounds such as polyphenols, carotenoids, dietary fibers, vitamins, and enzymes. The underutilization of these resources constitutes both an economic drawback and an environmental and ethical concern. Current recovery practices, including their use in animal feed or bioenergy production, contribute to a circular economy but are often limited by high operational costs. In this context, fermentation has emerged as a promising, sustainable approach for converting vegetable by-products into value-added food ingredients. This process improves digestibility, reduces undesirable compounds, and introduces probiotics beneficial to human health. The present review examines how fermentation can improve the nutritional, sensory, and functional properties of plant-based foods. By presenting several case studies, it illustrates how fermentation can effectively valorize vegetable processing by-products, supporting the development of novel, health-promoting food products with improved technological qualities. The presence of lead (Pb) and cadmium (Cd) can have considerable effects on the environment and on humans. The present study examines their levels in two lakes with different trophic levels located in northwestern Poland; their concentrations were determined in water and the bottom sediments, in common reed and in the organs of pike, bream and roach. The work also evaluates Pb and Cd bioavailability in bottom sediments, their potential for biomagnification, their bioaccumulation in the food chain and risk to human consumers. Metal concentrations were determined by graphite furnace atomic absorption spectrometry (GFAAS). The geochemical fractions of the metals were isolated by sequential extraction. Both Pb and Cd demonstrated low bioavailability, with the carbonate fraction playing a key role in their bioconversion. The concentrations of Pb and Cd in some organs and tissue types of fish and reeds correlated with their levels in water and sediments. No biomagnification was observed between the studied fish species. Calculations based on BMDL, TWI and THQ concentrations found Pb and Cd levels in the edible parts of fish to be within permissible limits and not to pose any threat to consumer health. Full article

Renewable fuels produced from animal- and plant-based edible oils have emerged as an alternative to oil and natural gas. Burgeoning interest in renewables can be attributed to the rapid depletion of fossil fuels caused by the global energy demand and the environmental advantages of renewables, specifically reduced emissions of greenhouse gases. An important property of the feedstock that is crucial for the conversion of edible oils to renewable fuels is the total acid number (TAN), as even a small increase in TAN for the feedstock can lead to corrosion of the catalyst in the refining process. Currently, the TAN is determined by potentiometric titration, which is time-consuming, expensive, and requires the preparation of reagents. As part of an effort to promote the use of renewable fuels, a partial least squares regression method with orthogonal signal correction to remove spectral information related to the sample background was developed to determine the TAN from the mid-infrared (IR) spectra of the feedstock. Digitally blended mid-IR spectral data were generated to fill in regions of the PLS calibration where there were very few samples. By combining experimental and digitally blended mid-IR spectral data to ensure adequate sample representation in all regions of the spectra–property calibration and better understand the spectra–property relationship through the identification of sample outliers in the original data that can be difficult to detect because of swamping, a PLS regression model for TAN (R2 = 0.992, cross-validated root mean square error = 0.468, and bias = 0.0036) has been developed from 118 experimental and digitally blended mid-IR spectra of commercial feedstock. Thus, feedstock whose TAN value is too high for refining can be flagged using the proposed mid-IR method, which is faster and easier to use than the current titrimetric method. Full article

This study examines food safety and waste behaviours depicted in the televised cooking competition MasterChef, a globally franchised series that showcases diverse culinary traditions and influences viewers’ practices. The research focuses on the MasterChef editions aired in Turkey and the United Kingdom, two countries with distinctly different social and cultural contexts. Video content analysis, based on predefined criteria, was employed to assess observable behaviours related to food safety and waste. Additionally, content analysis of episode transcripts identified verbal references to these themes. Principal Component Analysis was employed to categorise patterns in the observed behaviours. The findings revealed frequent lapses in food safety, with personal hygiene breaches more commonly observed in MasterChef UK, while cross-contamination issues were more prevalent in MasterChef Turkey. In both versions, the use of disposable materials and the discarding of edible food parts emerged as the most common waste-related practices. These behaviours appeared to be shaped by the cultural and culinary norms specific to each country. The study highlights the importance of cooking shows in promoting improved food safety and waste management practices. It recommends involving relevant experts during production and clearly communicating food safety and sustainability messages to increase viewer awareness and encourage positive behaviour change. Disruption of FW2.2-like Genes Enhances Metallic Micronutrient Accumulation in Brown Rice

Micronutrient deficiencies adversely affect human health and pose a significant global threat. Enhancing the accumulation of micronutrients in the edible parts of crops through genetic breeding is a promising strategy to mitigate micronutrient deficiencies in humans. FW2.2-like (FWL) genes play crucial roles in regulating heavy metal homeostasis in plants. We previously obtained two allelic mutants for each of the rice OsFWL1 (osfwl1a and osfwl1b) and OsFWL2 (osfwl2a and osfwl2b) genes. In this study, we showed that disruption of either OsFWL1 or OsFWL2 significantly enhanced the accumulation of metallic micronutrients in brown rice. Compared with that in the wild type, the iron (Fe) concentration in brown rice was higher in the osfwl1a (+166.7%), osfwl1b (+24.3%), and osfwl2a (+99.2%) mutants; the manganese (Mn) concentration was elevated in all four mutants (+25.1% to 35.6%); the copper (Cu) concentration increased in osfwl2a (+31.0%) and osfwl2b (+29.0%); and the zinc (Zn) concentration increased in osfwl2a (+10.2%). Additionally, disruption of OsFWL1 or OsFWL2 affected the homeostasis of metallic micronutrients in seedlings. Transcriptome analysis suggested that OsFWL1 and OsFWL2 might regulate cell wall polysaccharide metabolism and the expression of heavy metal transporter genes. Protein interaction analysis revealed that OsFWL1 interacted with OsFWL2 on the cell membrane. These findings suggest that OsFWL1 and OsFWL2 can serve as genetic biofortification tools to increase the concentrations of metallic micronutrients in rice grains. Full article

The cultured habitat of Eriocheir sinensis is a crucial factor influencing its nutritional quality. Therefore, it is essential to clarify the differences in the nutritional quality of Eriocheir sinensis reared in different habitats. This study investigated and compared the nutritional value of three edible parts (the hepatopancreas, gonads, and muscles) of female Eriocheir sinensis from three different habitats in the lower reach of the Yangtze River, with a special emphasis on lipid compounds. In addition to tissue indices, proximate composition, energy content, lipid classes, and fatty acid profile, eight lipid quality indices were proposed to evaluate the lipid nutritional quality. The results indicated that the Eriocheir sinensis from the three different habitats were all in good developmental condition. No significant differences were observed for the hepatopancreas index (HIS), gonadosomatic index (GSI), and total edible yield (TEY) among the three habitats, except for muscle index (MI), which was significantly higher in the L-crabs and E-crabs compared to the P-crabs. The highest protein content was found in the gonads, while the hepatopancreas had the highest crude lipid content. Regarding lipid classes, triglycerides dominated the hepatopancreas, and phospholipids were predominant in muscles, whereas phospholipids and triglycerides were predominant in approximately equal amounts in the gonads. Taking eight lipid quality indices into account together, the three major edible tissues of Eriocheir sinensis from the estuarine habitat had the highest nutritional value, followed by the hepatopancreas from the pond habitat. The current research will provide basic nutritional data for consumers to purchase Eriocheir sinensis and establish the theoretical groundwork for paving new paths for improving the nutritional quality combined with habitat conditions in future studies. Fatty fish, such as mackerel (Scomber scombrus), are recommended as part of a healthy diet, providing essential fatty acids (FA). Fried fish is appreciated for its attributes, including a crispy texture, golden crust, and pleasant taste. However, frying increases the fat content and the caloric value of food. This study evaluated the use of pre-frying edible coatings on mackerel fillets aiming to: (i) reduce oil absorption, (ii) minimize water loss, preserving fish succulence, and (iii) prevent fat oxidation. For this purpose, alginate- and carrageenan-based coatings were supplemented with extracts of Pelvetia canaliculata (Pc), a seaweed with high potential as a source of bioactive compounds. The fried fillets were analysed for colour, texture, moisture, ash, lipid content, and FA profile. No significant differences were observed for colour and textural parameters. Fillets coated with Pc-supplemented carrageenan showed the highest moisture (an increase of 3%) and the lowest fat content (a decrease of 7,5%) compared to the control (fried uncoated fillets). Coated fillets also exhibited reduced saturated FA and increased monounsaturated FA. In general, linoleic acid (C18:2) decreased markedly, while the values for docosahexaenoic acid (C22:6, n-3) remained stable (11–12% of total FA). Moreover, the n3/n6 ratio and atherogenic indices (AI) were improved in the coated fillets. Full article

The consumption of insects as food is an ancient practice that remains widespread in many regions of Asia, Africa, Latin America, and Oceania. However, this tradition has largely disappeared in Western countries, where it is often met with aversion. Nutritionally, insects can contain up to 60–70% protein (dry weight), along with beneficial fats, minerals, and vitamins, making them comparable to commonly consumed protein sources. Additionally, they contain bioactive compounds that offer health benefits and can contribute to reducing social inequalities in food access. As a sustainable protein source, insects have the potential to meet the demands of a projected global population of 9.7 billion by 2050. From a regulatory perspective, legislation on edible insects is still emerging in many parts of the world, with significant regional differences in the approval process, safety requirements, and permitted species. However, ensuring their safety—particularly in terms of production, preservation, storage, and potential health risks—is crucial. By addressing these concerns, it may be possible to shift the prevailing negative perception in Western societies and enhance consumer acceptance. Thus, we performed a literature review encompassing several issues regarding entomophagy, like insects’ nutritional composition, legislation, benefits, and food safety, and also addressing future perspectives. Asparagus (Asparagus officinalis L.) is widely recognized for its nutritional and functional properties, attributed to its rich content of polyphenols and antioxidant compounds. However, the content of compounds that remains bioaccessible following typical domestic preparation and digestion remains unclear. This study assessed the polyphenolic profile and antioxidant capacity of the edible portion of two A. officinalis cultivars (Placoseps and Darlise), harvested in different seasons, in edible form, cooked (using boiling on an induction cooktop), and cooked-digested extracts. Rutin emerged as the most abundant in all analyzed samples; its concentration in the edible part reached 1770.72 in Placoseps and 995.20 mg/kg in Darlise. Cooking increased rutin content in April-harvested asparagus to 1966.00 in Placoseps and 2042.44 mg/kg in Darlise, reflecting an increase of more than 2.5-fold compared to the respective values observed at the earlier harvest. Despite the substantial reduction in bioactive compounds observed during in vitro gastrointestinal digestion, a total of 146.95 to 454.58 mg/kg of bioaccessible compounds remaining available for potential intestinal absorption after digestion across both cultivars and harvest periods. These results provide a greater understanding of the behavior of polyphenol-rich vegetables and underscore the importance of simulating gastrointestinal processes when assessing the health-promoting potential of bioactive compounds. Voghera Sweet Pepper Regulates Cell Death Pathways in an Aging In Vitro Model

Background/Objectives: Aging and its related disorders are important issues nowadays, and ROS overproduction is one of the primary contributors to this physio-pathological condition. In this regard, ascorbic acid is a strong antioxidant molecule and its anti-aging proprieties are well known. Our previous data demonstrated that Voghera sweet pepper (VP), a peculiar type of pepper cultivated in Italy, is particularly rich in ascorbic acid and displayed a potential anti-aging effect in both young and aged in vitro models, regulating oxidative stress and senescence/proliferation. Based on these data, the anti-aging effect mediated by the extract of the edible part of VP, in terms of regulation of specific cell death mechanisms, was evaluated in an in vitro model of both young and old Normal Human Dermal Fibroblasts (NHDF). Methods: Immunofluorescence analyses were performed to assess the expression levels of specific markers related to autophagy (p62, LC3b) and mitophagy (Pink1, Parkin), as well as the apoptotic marker caspase-3. In addition, transmission electron microscopy (TEM) was used to analyze cellular ultrastructure and to provide further morphological evidence of the extract’s impact. Results: Immunofluorescence analyses revealed that VP extract led to modulated expression levels of p62, LC3b, Pink1, and Parkin, along with a reduction in caspase-3 activity, indicating decreased apoptosis. TEM ultrastructural analysis supported these findings, showing morphological changes consistent with the modulatory effects of VP extract during aging. Conclusions: Based on these results, we may suppose that Voghera pepper (VP) is able to modulate different mechanisms of regulated cell death (RCD) in our in vitro aging model. Full article

Total Antioxidant Capacity of Arachis hypogaea Seed Kernels and Coats: An Analytical and Sensory Investigation

Antioxidants are critical components of the body’s defense system, providing protection against cell-damaging free radicals responsible for oxidative damage of biomolecules. Humans benefit from the consumption of plants with high antioxidant content, which have been shown to positively impact health. In plant physiology, antioxidants provide protection from biotic and abiotic stress, particularly during the development of seeds and germination. Peanut seeds and seed coats have been shown to contain several beneficial antioxidants and are a good source of phytonutrients. Seed coat color can vary greatly and impact the antioxidant capacity of the edible portion of the peanut. Additionally, the seed coat can provide bitter notes in products, affecting their palatability and potentially negating the beneficial properties of the antioxidants present. A total of 42 accessions from the Germplasm Resource Information Network (GRIN) with a variety of seed coat colors were obtained and analyzed for total antioxidant capacity to provide a baseline assessment of the distribution of antioxidants in kernel versus seed coats. The results demonstrated that seed coat color somewhat impacts antioxidant capacity, and 56–88% of the total antioxidant capacity resides in the seed kernel. Three control samples, not part of the germplasm collection, were roasted and prepared for analysis by the descriptive sensory panel. Seed coats were added back to the roasted paste in increasing proportion for analysis by the panel, and perceptions regarding bitterness and overall organoleptic properties were noted. Based on the results of this study, several accessions were selected and then planted for increase and potential crossbreeding with appropriate commercial cultivars. This information could be used to selectively add antioxidant capacity to peanut breeding programs to provide additional health benefits to consumers without compromising the sensory perception and desirability and peanut products in nutrition. Evaluation of Suitable Cultivation Regions in China for Siraitia grosvenorii Using a MaxEnt Model and Inductively Coupled Plasma Mass Spectrometry

Global climate change is reshaping the habitat suitability of medicinal plants, potentially compromising their phytochemical integrity and therapeutic efficacy. Siraitia grosvenorii, an edible medicinal plant in China, has expanded its cultivation area into non-native habitats. Therefore, this study analyzed the suitable cultivation region under different periods in China based on the MaxEnt model, and 59 samples were investigated to explore the interrelationships between chemical constituents and climatic variables through multivariate statistical analysis, which will contribute to meeting the sustainable supply of high-quality S. grosvenorii. We discovered that appropriate habitats cover an area of 58.76 × 104 km2, mainly in the southern parts of China. Under future climate conditions, suitable habitats decrease and shift to the northeast along the current habitats. The precipitation levels of the driest month, precipitation seasonality, and temperature seasonality were crucial for its distribution. Furthermore, 11 elements were identified to distinguish samples from different suitable areas through orthogonal partial least squares discriminant analysis. Correlation analysis revealed a strong association between chemical constituents and various climatic factors. This study offers valuable insights into potential S. grosvenorii cultivation areas in China and provides reference indicators for quality evaluation. Full article
