The windowpane oyster (Placuna placenta) is common in coastal areas of the Philippines, thriving in brackish waters. Its shells underpin the local craft industries. While its meat is edible, only small amounts are consumed locally, most going to waste. Utilization of this potential nutrient source is hindered by the lack of information concerning its organic and mineral content, the possible presence of heavy metal ions, and the risk of microbial pathogens. We report extensive analysis of the meat from Placuna placenta, harvested during three different seasons to account for potential variations. This comprises proximate analysis, mineral, antioxidant, and microbial analyses. While considerable seasonal variation was observed, the windowpane oyster was found to be a rich source of protein, fats, minerals, and carbohydrates, comparing well with the meats of other shellfish and land animals. Following pre-cooking (~90 °C, 25–30 min), the standard local method for food preparation, no viable E. coli or Salmonella sp. were detected. Mineral content was broadly similar to that reported in fish, although iron, zinc, and copper were more highly represented, nevertheless, heavy metals were below internationally acceptable levels, with the exception of one of three samples, which was slightly above the only current standard, FSANZ. Whether the arsenic was in the safer organic form, which is commonly the case for shellfish, or the more toxic inorganic form remains to be established. This and the variation of arsenic over time will need to be considered when developing food products. Overall, the meat of the windowpane oyster is a valuable food resource and its current (albeit low-level) use should lower any barriers to its acceptance, making it suitable for commercialization. The present data support its development for high-value food products in urban markets. Full article

Livestock, poultry, and fisheries play an important economic role in Pakistan’s animal industry. The pet industry is also emerging and contributing to the country’s economy and people’s emotional well-being. This review provides insight into the current challenges and future directions of the animal industry in Pakistan. Livestock, poultry, and fisheries provide an economically beneficial source of milk, meat, and eggs; however, they face challenges such as disease outbreaks, antimicrobial resistance, climate change, natural disasters, and a lack of proper policies. Likewise, humans benefit from companion animals that provide emotional attachment. Moreover, the pet food market has also shown potential growth, contributing to the country’s economy. Due to the close association between animals and humans, both are at risk for infectious disease transmission. Challenges such as the lack of strong animal welfare laws and the increasing number of stray dogs and cats threaten human safety and that of other animals. We highlight current problems and additional approaches to the management of livestock, poultry, fisheries, and pets, which need to be addressed to further advance the animal industry in Pakistan. Pork is a major global source of animal protein, and improving both its production efficiency and meat quality is a central goal in modern animal agriculture and food systems. This study investigated post-inflection-point growth patterns in two genetically distinct pig breeds—the lean-type Yorkshire pig (YP) and the fatty-type Qingyu pig (QYP)—with the aim of elucidating breed-specific characteristics that influence pork quality and yield. Comprehensive evaluations of carcass traits, meat quality attributes, nutritional composition, and gene expression profiles were conducted. After the growth inflection point, carcass traits exhibited greater variability than meat quality traits in both breeds, though with distinct patterns. YPs displayed superior muscle development, with the longissimus muscle area (LMA) increasing rapidly before plateauing at ~130 kg, whereas QYPs maintained more gradual but sustained muscle growth. In contrast, intramuscular fat (IMF)—a key determinant of meat flavor and texture—accumulated faster in YPs post inflection but plateaued earlier in QYPs. Correlation and clustering analyses revealed more synchronized regulation of meat quality traits in QYPs, while YPs showed greater trait variability. Gene expression patterns aligned with these phenotypic trends, highlighting distinct regulatory mechanisms for muscle and fat development in each breed. In addition, based on the growth curves, we calculated the peak age at which the growth rate declined in lean-type and fat-type pigs, which was approximately 200 days for YPs and around 270 days for QYPs. This suggests that these ages may represent the optimal slaughter times for the respective breeds, balancing both economic efficiency and meat quality. These findings provide valuable insights for enhancing pork quality through precision management and offer theoretical guidance for developing breed-specific feeding strategies, slaughter timing, and value-added pork production tailored to consumer preferences in the modern food market. Annona amazonica R.E. Fries (synonyms Annona amazonica var. lancifolia R.E. Fries), popularly known in Brazil as “envireira”, is a tropical tree belonging to the Annonaceae family and is traditionally used as a food source. In this work, the in vitro and in vivo anti-liver cancer effects of essential oil (EO) from A. amazonica leaves were investigated for the first time. The chemical composition of the EO was evaluated via GC–MS and GC–FID. The alamar blue assay was used to evaluate the cytotoxicity of EOs against different cancerous and noncancerous cell lines. Cell cycle analyses, YO-PRO-1/PI staining, and rhodamine 123 staining were performed via flow cytometry in HepG2 cells treated with EO. The in vivo antitumor activity of EO was evaluated in NSG mice that were xenografted with HepG2 cells and treated with EO at a dose of 60 mg/kg. The major constituents (>5%) of the EO were (E)-caryophyllene (32.01%), 1,8-cineole (13.93%), α-copaene (7.77%), α-humulene (7.15%), and α-pinene (5.13%). EO increased apoptosis and proportionally decreased the number of viable HepG2 cells. The induction of DNA fragmentation and cell shrinkage together with a significant reduction in the ΔΨm in EO-treated HepG2 cells confirmed that EO can induce apoptosis. A significant 39.2% inhibition of tumor growth in vivo was detected in EO-treated animals. These data indicate the anti-liver cancer potential of EO from A. amazonica leaves. Full article

Over the years, macromycete fungi have been used as a source of food, part of religious rites and rituals, and as a medicinal remedy. Species with strong health-promoting potential include Hericium erinaceus, Cordyceps militaris, Ganoderma lucidum, Pleurotus ostreatus, Flammulina velutipes, and Inonotus obliquus. These species contain many bioactive compounds, including β-glucans, endo- and exogenous amino acids, polyphenols, terpenoids, sterols, B vitamins, minerals, and lovastatin. The level of some biologically active substances is species-specific, e.g., hericenones and erinacines, which have neuroprotective properties, and supporting the production of nerve growth factor in the brain for Hericium erinaceus. Due to their high health-promoting potential, mushrooms and substances isolated from them have found applications in livestock nutrition, improving their welfare and productivity. This phenomenon may be of particular importance in the nutrition of laying hens and broiler chickens, where an increase in pathogen resistance to antibiotics has been observed in recent years. Gallus gallus domesticus is a key farm animal for meat and egg production, so the search for new compounds to support bird health is important for food safety. Studies conducted to date indicate that feed supplementation with mushrooms has a beneficial effect on, among other things, bird weight gain; bone mineralisation; and meat and egg quality, including the lipid profile and protein content and shell thickness, and promotes the development of beneficial microbiota, thereby increasing immunity. Sprouted grains are gaining attention as a natural and sustainable source of bioactive compounds with potential benefits in managing insulin resistance (IR), a hallmark of obesity-related metabolic disorders. This review aims to synthesize current findings on the biochemical changes induced during grain germination and their relevance to metabolic health. We examined recent in vitro, animal, and human studies focusing on how germination enhances the nutritional and functional properties of grains, particularly through the synthesis of compounds such as γ-aminobutyric acid, polyphenols, flavonoids, and antioxidants, while reducing anti-nutritional factors. These bioactive compounds have been shown to modulate metabolic and inflammatory pathways by inhibiting carbohydrate-digesting enzymes, suppressing pro-inflammatory cytokines, improving redox balance, and influencing gut microbiota composition. Collectively, these effects contribute to improved insulin sensitivity and glycemic control. The findings suggest that sprouted grains serve not only as functional food ingredients but also as accessible dietary tools for preventing or alleviating IR. Their role in delivering multiple bioactive molecules through a simple, environmentally friendly process highlights their promise in developing future nutrition-based strategies for metabolic disease prevention. Potentially toxic elements, such as chromium (Cr) and zinc (Zn), play essential roles in humans and animals. However, the harmful effects of excessive exposure to these elements through food remain unknown. In this sense, this study aimed to evaluate the anthropogenic contamination of chromium and zinc in aquatic biota and seafood consumers. Based on the PRISMA protocol, 67 articles were selected for this systematic review. The main results point to a wide distribution of these elements, which have familiar emission sources in the aquatic environment, especially in highly industrialized regions. Significant concentrations of both have been reported in different fish species, which sometimes represent a non-carcinogenic risk to consumer health and a carcinogenic risk related to Cr exposure. New studies should be encouraged to fill gaps, such as the characterization of the toxicity of these essential elements through fish consumption, determination of limit concentrations updated by international regulatory institutions, especially for zinc, studies on the influence of abiotic factors on the toxicity and bioavailability of elements in the environment, and those that evaluate the bioaccessibility of these elements in a simulated digestion system when in high concentrations. The utilisation of edible insects for human nutrition is a long-standing practice in many parts of the globe, and is being gradually introduced into countries without an entomophagic tradition as well. These unconventional sources of protein of animal origin have arisen as a sustainable alternative to other animal protein sources, such as meat. This review intends to present the compilation of data in the scientific literature on the chemical composition and nutritional value of the bee brood of A. mellifera species and subspecies as edible foods. For this, a comprehensive search of the scientific literature was carried out using the databases ScienceDirect, Scopus, Pub-Med, BOn, and SciELO. Appropriate keywords were used for the search to reach the research works that addressed the topics of the review. The results showed that bee brood has considerable quantities of protein, fat and carbohydrates. The most abundant amino acids are leucine and lysine (these two being essential amino acids) and aspartic acid, glutamic acid, and proline (these three being non-essential amino acids). As for the fatty acids, bee broods contain approximately equal fractions of saturated and monounsaturated fatty acids, while the polyunsaturated fatty acids are negligible. The dietary minerals present in higher quantities are potassium, phosphorus, and magnesium, and the most abundant vitamins are vitamin C and niacin; choline is also present, although it is not a true vitamin. Although bee brood from A. mellifera has potential for human consumption as a nutrient-rich food, there are still many aspects that need to be further studied in the future, such as safety and hazards linked to possible regular consumption. Per- and polyfluoroalkyl substances (PFAS) are synthetically produced chemicals that are causing a major One Health crisis. These “forever chemicals” are widely distributed globally in air, water, and soil, and because they are highly mobile and extremely difficult to degrade in the environment. They cause additional health concerns in a circular bioeconomy and food system that recycles and reuses by-products and numerous types of waste materials. Uptake of PFAS by plants and food-producing animals ultimately leads to the consumption of PFAS-contaminated food that is associated with numerous adverse health and developmental effects in humans. Contaminated meat, milk, and eggs are some of the main sources of human PFAS exposure. Although there is no safe level of PFAS exposure, maximum tolerable PFAS consumption guidelines have been established for some countries. However, there is no international PFAS monitoring system, and there are no standardized international guidelines and mechanisms to prevent the consumption of PFAS-contaminated foods. Urgent action is needed to stop PFAS production except for critical uses, implementing effective water-purification treatments, preventing spreading sewage sludge on land and pastures used to produce food, and requiring marketers and manufacturers to use packaging that is free of PFAS. Cell proliferation plays a pivotal role in multiple physiological processes, including osteoporosis alleviation, wound healing, and immune enhancement. Numerous novel peptides with cell proliferation-promoting activity have been identified. These peptides exert their functions by modulating key cellular signaling pathways, thereby regulating diverse biological processes related to cell proliferation. This work summarizes peptides derived from animals and plants that stimulate cell proliferation, focusing on their amino acid composition, physicochemical properties, and preparation techniques. Furthermore, we highlight the major signaling pathways—such as the PI3K/Akt, MAPK/ERK, and Wnt/β-catenin pathways—that have been implicated in the mechanistic studies of food-derived peptides. Through the analysis and summary of previous studies, we observe a notable lack of in vivo animal models and clinical trials, indicating that these may represent promising directions for future research on food-derived bioactive peptides. Meanwhile, the potential safety concerns of proliferation-enhancing peptides—such as immunogenicity, appropriate dosage, and gastrointestinal stability—warrant greater attention. In summary, this review provides a comprehensive overview of the sources and mechanisms of cell proliferation-promoting peptides and addresses the challenges in industrializing bioactive peptide-based functional foods; therefore, further research in this area is encouraged. Problems with primary food production (food insecurity, malnutrition, and socioeconomic problems) persist throughout the world, especially in rural areas. Despite these problems, the available natural food resources are underutilized; residents are no longer interested in growing and consuming foods native to their region. In this regard, this study carries out the morphological and nutritional characterization of a native sunflower (Helianthus annuus) grown in the Sierra Gorda, Querétaro, Mexico, known as “Maíz de teja”, to implement a sustainable monoculture production system. The results were compared with some other sunflower varieties and other oilseeds grown and consumed in the country. This study determined that this native sunflower seed is a good source of linoleic acid (84.98%) and zinc (17.2 mg/100 g). It is an alternative protein source (18.6 g/100 g), comparable to foods of animal origin. It also provides a good amount of fiber (22.6 g/100 g) and bioactive compounds (total phenolic compounds (TPC) 3.434 ± 0.03 mg/g and total flavonoids (TFC) 0.67 ± 0.02 mg/g), and seed yield 341.13 kg/ha. This study demonstrated a valuable nutritional profile of this native seed and its potential for cultivation. Further research is needed to improve agricultural management to contribute to food security and improve the socioeconomic status of the community. Full article

Alternative proteins denote non-traditional, high-protein foods. These innovative sources aim to compete with conventional animal products by providing protein-rich, sustainable, nutritious, and flavorful options. Currently, five main categories of alternative proteins are being developed: plant-based proteins, cultured meat, single-cell proteins, edible insects, and seaweed. Nonetheless, several chemical and microbiological food safety hazards are associated with these alternatives Incorporating novel protein sources into food products may heighten the prevalence of existing food allergies. This could arise from extracting proteins from their natural matrices and utilizing them at significantly higher concentrations. Additionally, the introduction of new proteins may lead to the development of novel food allergies. Proteins that are currently seldom or never consumed may cause primary sensitisation or trigger cross-reactivity with known allergens. To date, alternative proteins have not been thoroughly studied for their allergenic potential, and there is no standardised method for assessing this risk. This review aims to explore non-traditional protein sources, discussing their nutritional and functional properties, as well as their potential allergenicity based on available research. We conducted a literature search in PubMed and Embase databases. We used specific keywords and MESH terms. A total of 157 studies were included in the review. The studies reviewed in our analysis reveal significant limitations, such as inconsistent methodologies, limited participant numbers, and a lack of long-term data, which hinder the ability to make clear conclusions regarding the safety of these new proteins for individuals with allergies. To address current challenge, future research should integrate food science, regulatory perspectives and advanced technologies. Full article

Efficient Assessment and Optimisation of Medium Components Influencing Extracellular Xylanase Production by Pediococcus pentosaceus G4 Using Statistical Approaches

Xylanase is an essential industrial enzyme for degrading plant biomass, pulp and paper, textiles, bio-scouring, food, animal feed, biorefinery, chemicals, and pharmaceutical industries. Despite its significant industrial importance, the extensive application of xylanase is hampered by high production costs and concerns regarding the safety of xylanase-producing microorganisms. The utilisation of renewable polymers for enzyme production is becoming a cost-effective alternative. Among the prospective candidates, non-pathogenic lactic acid bacteria (LAB) are promising for safe and eco-friendly applications. Our investigation revealed that Pediococcus pentosaceus G4, isolated from plant sources, is a notable producer of extracellular xylanase. Improving the production of extracellular xylanase is crucial for viable industrial applications. Therefore, the current study investigated the impact of various medium components and optimised the selected medium composition for extracellular xylanase production of P. pentosaceus G4 using Plackett–Burman Design (PBD) and Central Composite Design (CCD) statistical approaches. According to BPD analysis, 8 out of the 19 investigated factors (glucose, almond shell, peanut shell, walnut shell, malt extract, xylan, urea, and magnesium sulphate) demonstrated significant positive effects on extracellular xylanase production of P. pentosaceus G4. Among them, glucose, almond shells, peanut shells, urea, and magnesium sulphate were identified as the main medium components that significantly (p < 0.05) influenced the production of extracellular xylanase of P. pentosaceus G4. The optimal concentrations of glucose, almond shells, peanut shells, urea, and magnesium sulphate, as determined via CCD, were 26.87 g/L, 16 g/L, 30 g/L, 2.85 g/L, and 0.10 g/L, respectively. The optimised concentrations resulted in extracellular xylanase activity of 2.765 U/mg, which was similar to the predicted extracellular xylanase activity of 2.737 U/mg. The CCD-optimised medium yielded a 3.13-fold enhancement in specific extracellular xylanase activity and a 7.99-fold decrease in production costs compared to the commercial de Man, Rogosa and Sharpe medium, implying that the CCD-optimised medium is a cost-effective medium for extracellular xylanase production of P. pentosaceus G4. Moreover, this study demonstrated a positive correlation between extracellular xylanase production, growth, lactic acid production and the amount of sugar utilised, implying the multifaceted interactions of the physiological variables affecting extracellular xylanase production in P. pentosaceus G4. In conclusion, statistical methods are effective in rapidly assessing and optimising the medium composition to enhance extracellular xylanase production of P. pentosaceus G4. Furthermore, the findings of this study highlighted the potential of using LAB as a cost-effective producer of extracellular xylanase enzymes using optimised renewable polymers, offering insights into the future use of LAB in producing hemicellulolytic enzymes. The scientific literature currently lacks studies that evaluate the nutritional composition of the tissues of cattle raised in different systems, so that the nutritional effects can be known and used to enhance consumption and use in the diet. The aim was therefore to assess whether the mineral content of muscle tissue (longissimus lumborum) in cattle finished during the rainy season in the Eastern Amazon is influenced by different farming systems. The treatments consisted of four systems (three pasture production systems and one feedlot system). 1. native wetland pasture in Santa Cruz do Arari (Mesoregion of Marajó); 2. native wetland pasture in Monte Alegre (Mesoregion of Baixo Amazonas); 3. cultivated dryland pasture in São Miguel do Guamá (Mesoregion of Nordeste Paraense); and 4. Confinement in Santa Izabel do Pará (Metropolitan Region of Belém). The analyses were carried out on samples of the longissimus lumborum muscle tissue of 48 male, castrated, crossbred Nelore cattle, twelve per breeding system, from commercial farms, destined for meat production, finished during the rainiest period of the year (between January and June). In systems 1 and 2, the animals were slaughtered in licensed slaughterhouses; the animals in systems 3 and 4 were slaughtered in commercial slaughterhouses. Food sampling and chemical analysis, soil sample collection and analysis, longissimus lumborum muscle tissue collection, sample preparation and digestion, and inductively coupled plasma optical emission spectrometry were evaluated. The experimental design was completely randomized in a linear model with four rearing systems and one period (rainy). The data was compared using the Statistical Analysis Systems (SAS) program. All analyses were carried out considering a significance level of 0.05. Samples of the diets offered (pasture and concentrate) were also collected. The Amazon systems influenced the macro- and micromineral content in the muscles of cattle (p < 0.05). The interaction between pasture systems vs. confinement showed differences in the minerals calcium (Ca), magnesium (Mg), phosphorus (P), copper (Cu), zinc (Zn), iron (Fe), and manganese (Mn) (p < 0.05). However, there was no difference in the values of sodium (Na), potassium (K), and sulfur (S) between the rearing systems (p > 0.05). By contrast, the cultivated pasture system vs. extensive pasture showed differences in all the elements evaluated (p < 0.05). The rearing systems of the Eastern Amazon influenced the mineral content of beef, which continues to be an excellent source of macro- and microminerals and can compose the human diet. Full article

The agro-industrial sector produces large amounts of by-products that have a high environmental impact, so it has become essential to recover food waste at all levels. This is because it often contains bioactive molecules that can be a valuable source of new products such as animal feed, biopolymers, or products for human use, (e.g., cosmetics and nutraceuticals) due to its antioxidant, antimicrobial, and anti-inflammatory properties. Advanced analytical methodologies such as liquid chromatography coupled to mass spectrometry (LC-MS) are crucial for the characterisation of bioactive chemicals in these waste materials. LC-MS enables both targeted and untargeted metabolomic approaches, facilitating the identification and quantification of a wide range of secondary metabolites, including polyphenols, flavonoids, alkaloids, and terpenoids. The choice of extraction methodology is essential for the precise identification and quantification of these metabolites. This study provides an overview of LC-MS as an effective tool for analysing complex extracts derived from plant waste, discussing both methodological aspects and typical bioactive metabolites identified, and offering examples of their potential applications in cosmeceutics.
