Honey authenticity is increasingly threatened by the addition of low-cost sugar syrups and substitutes, which reduce its nutritional value and market credibility. In this study, five types of Polish honeys (honeydew, forest, multifloral, nectar–honeydew, and rapeseed) were intentionally adulterated with beet syrup, beet molasses, invert syrup and artificial honey at levels of 10% and 50% (v/v). The impact of adulteration was evaluated using elemental profiling by ICP-OES combined with physicochemical analyses (water content, sugar content and electrical conductivity) and chemometric methods (PCA and HCA). Natural honeys were characterized by high K, Mg and Ca contents and low Na levels, whereas adulterants significantly altered mineral composition, leading to a marked decrease in key authenticity ratios, particularly K/Na (decreases exceeding 90% at the 50% adulteration level, with systematic shifts already observable at 10% addition). Beet molasses caused the strongest disturbances in macroelement balance, while invert syrup induced weaker effects. Adulteration also resulted in increased water content, reduced °Brix values and pronounced changes in electrical conductivity. Chemometric analysis enabled clear discrimination between natural, adulterated and sugar-based samples. The combined use of elemental ratios, physicochemical parameters and chemometrics provides a robust and sensitive approach for detecting honey adulteration and supporting authenticity control. Thirty-seven honeys from western Algeria of diverse floral origins were compared with Polish references. Multivariate analysis (65% variance) identified three clusters, with Algerian rosemary and multiflorals achieving consumer acceptance similar to Polish products, highlighting their competitiveness in specialised markets. Until recently, the blue honeysuckle (Lonicera caerulea L. var. kamtschatica Sevast.) was considered a niche species, but Poland is now one of the largest producers of this fruit in the world. The purpose of this study was to assess the yield, quality of the fruits, and the health promotion value of the fruits of selected honey berry cultivars grown under the conditions of central Poland. Six cultivars (‘Morena’, ‘Vostorg’, ‘Honeybee’, ‘Wojtek’, ‘Boreal Beast’, and ‘Boreal Beauty’) were evaluated for yield and physical fruit characteristics: average fruit weight (g), dry matter content (%), fruit shape, fruit colour (CIE lab), firmness (N), soluble solid content (°Brix), pH, titratable acidity (% citric acid), as well as biologically active compounds including polyphenols, flavonoids, anthocyanins, vitamin C, and antioxidant activity (DPPH+). The studies also determined the degree of correlation between different variables using Pearson’s linear correlation coefficients. The highest yields were obtained for the ‘Wojtek’ and ‘Boreal Beauty’ cultivars, while in terms of health-promoting properties, the ‘Morena’ cultivar stood out, characterised by the darkest fruit colour, the highest content of polyphenols, anthocyanins, vitamin C, and the highest antioxidant activity. The correlation analysis showed relationships between the vitamin C content, antioxidant activity, and fruit colour and the accumulation of bioactive compounds. The differences observed among the cultivars tested indicated their different potential for use in the fresh consumption, food processing, and pharmaceutical industries. Full article

As a high-value product used as food, medicine, or cosmetics, honey is particularly susceptible to adulteration. Therefore, it must be regularly tested at various stages of its life cycle to ensure its quality and authenticity, especially its botanical origin. Sensory quality features play a huge role in creating the quality of products, but also in determining their authenticity. Sensory analysis helps determine the honey’s overall quality based on attributes like color, aroma, taste, and texture. Sensory evaluation of honey can reveal issues like crystallization, off-flavors, or off-odors that might indicate adulteration or spoilage. The aim of our work was therefore sensory quality assessment of 84 honey samples in order to create sensory profiles for the varietal classification of honeys. In order to obtain information on the differences in sensory features and their classification based on the assessment of honey quality descriptors, a discriminant analysis was carried out. Then, an assessment was carried out to check whether the compared varieties differ in terms of the value of the sensory feature parameter assessment. As a result, a statistical tool was constructed (canonical discriminant functions, distinguishing/classifying the varieties of honeys tested). These models will ensure the repeatability of results in the classification of sensory profiles of varietal honeys on the example of Polish honey varieties. The results indicate that the sensory analysis is a good analytical tool to differentiate honey types. The findings of this study can be applied by honey producers, suppliers, and customers to differentiate and determine honey varieties according to their sensorial attributes. Full article

In this study, the physicochemical and antioxidant properties of 19 honey samples from Poland and Slovakia were assessed and models describing the relationship between antioxidant activity and the determined physicochemical features were developed. All tested honeys met the regulatory criteria of EU standards for the content of water, hydroxymethylfurfural, and diastase activity. Honey samples from Poland and Slovakia had similar glucose-to-fructose ratios, but differences were observed in diastase activity, electrical conductivity, and antioxidant potential. Polish forest honey samples showed the highest antioxidant activity, and Polish rapeseed honey showed higher antioxidant potential than the Slovak honey. Color analysis showed a strong correlation (R2 = 0.849) between the browning index and antioxidant capacity. Cluster analysis effectively distinguished honey types based on their chemical composition, although some sample overlap was attributed to environmental influences. Regression models identified key predictors of antioxidant potential, and polyphenol content evidenced by color parameters (a*, b*). This study provides valuable information on honey characteristics and demonstrates the feasibility of using statistical models to predict antioxidant properties. Full article

Honey contains natural biologically active compounds, and its preventive and healing properties are primarily linked to its antioxidant activity. The antioxidant properties of honey can be related to the botanical origin and content of phenolic compounds. We tested 84 honey samples from Poland, representing eight honey varieties: acacia, phacelia, buckwheat, linden, rapeseed, heather, goldenrod, and honeydew. High-performance liquid chromatography with photodiode-array detection (HPLC-DAD) was used to determine the phenolic compound composition of honey extracts. Total phenolic compounds (TPC) and DPPH radical-scavenging activity were also evaluated. We detected vanillin aldehyde, vanillic acid, caffeic acid, p-coumaric acid, and trans-ferulic acid, as well as flavonoid pinocembrin, in all honey varieties. The results of our study showed that honeys with high antioxidant activity were characterized by significantly higher total phenolic compounds content. Neither clustering method nor principal component analysis (PCA) showed clear separation of each honey variety, possibly due to high intra-variety diversities. We suppose that the variability of qualitative and quantitative phenolic compound composition within honey varieties may result from the region of origin, secondary nectar sources, and the time of harvest. This study aimed to determine the possibility of deploying an innovative electrical method and to establish the usefulness of conductivity and dielectric parameters for assessing the quality of Polish honeys, as well as for distinguishing their botanical origin. An attempt was also made to determine which standard physicochemical parameter could be replaced by conductivity and dielectric parameters. The experimental material consisted of seven varieties of honey (linden, rapeseed, buckwheat, goldenrod, phacelia, multifloral, acacia), obtained from beekeepers from northern Poland. Their quality was assessed based on their physicochemical parameters, biological activity, and color. Electrical parameters were measured using a measuring system consisting of an LCR meter, and own-construction sensor. Conductivity (Z, G) and dielectric (Cs, Cp) parameters were measured. Statistical analysis of the results of measurements of electrical parameters of the seven types of honey tested allowed classifying them in terms of their conductivity properties into two groups of single-flower honeys and one group of multi-flower honeys. This proves the feasibility of identifying their botanical origin using the electrical method, which is characterized by non-invasiveness, measurement speed, and high sensitivity. The usefulness of parameters Z and G in replacing quality parameters was confirmed mainly for single-flower honeys: buckwheat, linden, rapeseed, and phacelia. Full article

Adulteration of food products is a serious problem in the current economy. Honey has become the third most counterfeit food product in the world and requires effective authentication methods. This article presents a new approach to the differentiation of bee pollen, which can support the development of a methodology to test honey quality based on the analysis of bee pollen. The proposed method is built on applying the Hjorth descriptors—Activity, Mobility, and Complexity—known from electroencephalography (EEG) analysis, for 2D bee pollen images. The sources for extracting the bee pollen images were the photos of honey samples, which were taken using a digital camera with a resolution of 5 megapixels connected to the tube of an optical microscope. The honey samples used were prepared according to the Polish standard PN-88/A-77626 (related to the European standard CELEX-32001L0110-PL-TXT). The effectiveness of the proposed method was positively verified for three selected groups of bee pollen—Brassica napus, Helianthus, and Phacelia—containing 35 images. Statistical analysis confirms the ability of the Hjorth descriptors to differentiate the indicated bee pollen groups. Based on the results obtained, there is a significant difference between the bee pollen groups under consideration regarding Activity p<0.00001, Mobility p<0.0001, and Complexity p<0.00001. The antioxidant capacity and nutritional value of honey are significantly dependent on the content of phenolic compounds. The aim of this study was to compare the antioxidant properties and color of selected honeys and manuka honeys available in the Polish market. The results showed quantitative differences in phenolic acids, phenolic content and antioxidant activity between the honeys, indicating the influence of floral sources. Dark honeys, including buckwheat honey, showed increased phenolic content and superior antioxidant properties. The study revealed remarkable correlations between phenolic content, antioxidant capacity and color. Buckwheat honey showed higher antioxidant properties compared to manuka honey, which is highly valued in the current market. These results highlight the importance of further research into Polish buckwheat honey and advocate its wider consumption due to its high nutritional value and remarkable bioactive properties. In addition, the study contributes to a deeper understanding of honey diversity and highlights the potential importance of regional honey varieties in promoting health. Full article

This paper presents the results of testing the content of 5-hydroxymethylfurfural (HMF) in honey from Greater Poland. The production of honey from this area of Poland, its processing, and its consumption are closely related to the sustainable development of this region. It is created in the process of the production, storage, and transport of honey, especially during its thermal processing. Therefore, it can be an indicator in the analysis of sustainable development throughout the life cycle of honey and its products. The aim of this research was to determine the HMF content in Greater Poland’s honey available on the Polish market using three different methods and to compare the obtained results. The methodology used was as follows: two spectrophotometric methods (White and Winkler) and an HMF determination method based on the LC-MS/MS technique developed especially for this study. The determined HMF content in all tested honey samples did not exceed the applicable standard. The determined HMF values in all honey samples ranged from 0 to 28.5 mg HMF/kg honey. All results fell within the scope of European Council Directive 2001/110/EC of 20 December 2001, i.e., they did not exceed the HMF content in honey, which is 40 mg/kg. The results will encourage modifications to the universal honey testing procedures to be developed for the agri-food sector. In the study, seven honeys of different origins and types were selected; three HMF detection methods were selected; a comparative procedure was developed; and the content of the reference ingredient in honey was determined. The aim of this paper was to conduct a comparative analysis of rapeseed honeys enriched with various bee products: propolis (1%), bee bread (2%), and bee pollen (5%). The parameters examined included water content, electrical conductivity, pH, free acid content, brown pigment content, color analysis, total polyphenol content, sugar content, and antioxidant activity using the DPPH method. The results demonstrated compliance with Polish requirements for commercial honey quality, with one exception: honey containing 1% propolis, which had a water content of 21.15%. The analysis results indicated that the tested bee products exhibited strong antioxidant properties, with rapeseed honey enriched with 5% bee pollen showing the highest antioxidant activity and content. Streptococcus mutans is considered the main pathogen responsible for dental caries, one of the major infectious diseases, affecting more than 4 billion people worldwide. Honey is a natural product with well-known antibacterial potential against several human pathogens. The aim of the study was to evaluate the antibacterial efficacy of Polish honey against S. mutans and analyze the role of some bioactive substances on its antibacterial action. The antibacterial potential of different honey varieties (goldenrod, buckwheat, honeydew, and lime) was analyzed using a microdilution assay. Manuka and artificial honey were used as controls. The content of GOX, hydrogen peroxide, total polyphenols, and antioxidant potential was assayed in honey. The influence of catalase and proteinase K on antibacterial activity as well as antibiofilm action was also determined. The strongest antibacterial activity was observed for buckwheat, honeydew, and manuka honey, which were also characterized by the highest antioxidant activity and polyphenols content. Catalase treatment decreases the antibacterial activity of honey, while proteinase K treatment influences the antibacterial potential of honey slightly less. Obtained results suggest that honey can be a good natural product against S. mutans, and hydrogen peroxide was identified as a crucial contributor to its antimicrobial action. Full article

On the basis of routine microbiological tests and selected physicochemical parameters, the quality and food safety of Polish varietal honeys were evaluated. The study included 21 honey samples from 5 varieties (multifloral, honeydew, rapeseed, buckwheat and linden), in which the moisture and extract content, water activity, pH and free acids were determined, and the colony count, the presumptive Bacillus spp., the total fungal count and the presence of anaerobic spore-forming bacilli were examined. More than half (52%, 11/21) of the analyzed honeys contained fewer microorganisms than 10 cfu/g, and in the remaining samples, their numbers ranged from 5 × 101 cfu/g to 4.5 × 102 cfu/g. In all the honeys, the number of presumptive Bacillus spp. in 1 g was less than 10 cfu. In 81% (17/21) of the samples, the total count of fungi in 1 g of honey was less than 10 cfu, and the most contaminated was buckwheat honey (3 samples). The anaerobic spore-forming bacteria was detected in 0.1 g only in one sample of buckwheat honey. The values of the physicochemical parameters did not exceed the accepted limits, which indicated that the honey environment was unfavourable for the development of the tested microbial profile. Bee products have been used for centuries for culinary, medicinal, and cosmetic purposes, and their properties are still a subject of research, which provide new arguments in favour of their use. The research aimed to determine the current state of use of bee products by Polish consumers and determine the ways and conditions of their use, with particular reference to the level of nutritional knowledge and health status. The survey was conducted using the CAWI (Computer-Assisted Web Interview) method on 487 respondents. It was found that honey is used mainly for culinary purposes and, to a lesser extent, for medicinal and cosmetic purposes. Other bee products are much less commonly used than honey—mainly beeswax and royal jelly for cosmetic purposes and propolis and bee pollen for medicinal purposes. Segments distinguished by the frequency of use of honey for particular purposes were differentiated by gender, age, income level, use of other bee products, and motivation to use them. Their differences were also found in terms of the level of nutritional knowledge and self-assessed health status—the highest ratings in both categories were indicated by representatives of the Honey users’ segment, which consisted of people who use honey most frequently for cooking, cosmetic and medicinal purposes. Regression analysis additionally showed that higher levels of nutritional knowledge and better health status were associated with the use of honey to treat gastrointestinal ailments and with the use of propolis for medicinal purposes. Chronic inflammation is involved in the pathogenesis of many non-infectious diseases, including cardiovascular diseases (CVD), a leading cause of death in Europe. The aim of the study was to assess the inflammatory potential of the diets of participants enrolled in the Polish arm of the Prospective Urban and Rural Epidemiological (PURE) study, evaluate the association between the dietary inflammatory index (DII) score with the dietary content, and to determine the correlation of DII score with selected anthropometric parameters and biochemical risk factors for CVD. Diets were assessed with the Food Frequency Questionnaire (FFQ). Among participants with pro-inflammatory diets, we reported higher mean values of triglycerides (TG), fasting glucose (FG), atherogenic index of plasma (AIP), and the Castelli’s risk index (CRI) in the group of men and women, and higher waist circumference (WC) and waist-to-hip ratio (WHR) in the group of women. Pro-inflammatory diets were associated with higher intake of refined grains, sweets, juices, red meat, high-fat cheese and cream, alcohol, fats except for vegetable oils, potatoes, sugar and honey, French fries, fried fish, and processed/high-fat poultry. Moreover, study participants with pro-inflammatory diets consumed more milk, low-fat dairy, and eggs associated with unhealthy dietary habits, but this should not be considered as an independent CVD risk factor. Anthropometric and biochemical outcomes were more favorable among study participants who consumed more vegetables, fruits, nuts, seeds, raisins, pulses, low-fat poultry, and tea. However, association of beverage consumption with dietary inflammatory potential requires further study. Full article
