Special Issue Information

Dear Colleagues,

Detecting and monitoring contaminants in food, water, and related processes are critical for ensuring food safety, public health, and regulatory compliance. Contaminants of concern include toxins of biological origin, particularly fungal toxins (mycotoxins), as well as non-biological contaminants such as heavy metals, pharmaceutical residues, industrial chemicals, and environmental pollutants. These contaminants can interfere with biochemical and technological processes, posing significant risks across food production, water treatment, and processing chains.

Recent advances in spectroscopic techniques have enabled rapid, sensitive, and non-destructive analysis of contaminants, with strong potential for real-time process monitoring. This Special Issue focuses on spectroscopy-based approaches for the detection, identification, and quantification of contaminants in food and water systems and associated processes. Emphasis is placed on optical spectroscopic methods, including UV–Vis absorption, fluorescence, infrared (IR), Raman, and nuclear magnetic resonance (NMR) spectroscopy, as well as their integration with biochemical assays, enzyme-based sensing platforms, and immobilized enzyme systems. By emphasizing innovative spectroscopic methodologies applied to food, water, and environmental processes, this Special Issue seeks to advance analytical strategies for contaminant detection, process control, food safety assurance, water quality management, and environmental monitoring. Original research and review articles covering diverse methods, particularly those integrating biochemical insights, enzyme kinetics, and immobilized enzyme systems under spectroscopic monitoring, are highly encouraged.
