Special Issue Information

Dear Colleagues,

Starch is the main energy reserve polysaccharide and carbon sink in plants and algae. Different enzymes and proteins participate in its metabolism and have a coordinated action to perform the synthesis, degradation and mobilization of starch granules.

In this Special Issue, we explore new advances in the study of the metabolism, structure and function of starch in photosynthetic organisms, as well as their biotechnological applications. Work on the structural, regulatory and functional characterization of the enzymes that participate in the synthesis and degradation of this polysaccharide will also be welcome.

Currently, numerous challenges remain, such as a more detailed understanding of the regulation of the synthesis and degradation of this polysaccharide under different physiological and stress conditions, the interaction of starch metabolism with other biochemical processes, as well as the identification of new starches in different plant species, its possible applications and ecological implications.

Plants is an international peer-reviewed open access semimonthly journal published by MDPI.
